Happy Sunday!🤍 . Today was a very laid back day for us. Just some housework and a few little things to catch up on. A rainy afternoon was perfect for relaxing and cooking our Sunday dinner! . Today we enjoyed: *BBQ ribs *Golden potatoes *Zucchini w/balsamic glaze & feta (Also made some baked beans & corn for a family member who isn’t a zucchini fan😂) *Lite Chocolate cake . I was going to share the rib recipe (which is amazing!) but my family loved the cake so much I thought I’d share that instead! . It’s not an “all natural” recipe but it’s a great option for a “lighter” dessert! . 🍫”Lite” Chocolate Cake🍫 •1 box chocolate cake mix (any kind) •1 cup water •Two 5.3 Greek yogurt (I used Chobani vanilla) -Mix well. Pour into cake pan. Bake at 350° 26-30 minutes. Allow to cool completely. Frosting: •8oz whipped topping •1 cup milk (any kind) •1 tsp vanilla •1 (1.4oz)box chocolate pudding mix (any kind, regular or sugar free) -Combine milk, vanilla & pudding mix. Recipe : 3 eggs at room temperature 1 cup sugar 100g melted butter 2 cups all purpose flour 1 /2 tsp baking soda 1 tsp baking powder 2 tbsp cacao powder 1/2 tsp salt 1 tsp vanilla extract Method : Start by mixing the eggs and sugar for about 3 minutes. Add the melted butter, vanilla extract and mix again. Add the baking powder , baking soda and salt, and give it a quick whisk. Add the flour and mix again. Divide the batter into two equal parts and add the cacao powder into one of them. Mix it very well. Cover the baking pan with parchment paper. Put two tablespoons of the vanilla batter in the middle of the pan. Add two tablespoons of the chocolate batter on top of the vanilla batter and repeat the process until you’re out of the batter.
