Doesn’t take two to Mango! 🥭 . . . Looking at the brighter side, social distancing means healthy snacking at home. Also, my bae, mango, is back and also tastes the right amount of sweet and amazing! So, made some Mangolicious Chia Pudding last weekend for a couple of my friends. It serves as an easy peasy and healthy dessert/snack/breakfast. I ate it for dessert and as a part of my breakfast the next day. . You will need the following for 2 servings: - 1/4 cup of chia seeds - 200 ml of coconut/almond/any milk of choice (Read: I would highly recommend coconut.) - 1/2 a medium sized mango diced into pieces - 3-4 diced strawberries, optional - A pinch of Cinnamon - 1 tsp. of natural vanilla extract, optional - 1-2 drops of Stevia liquid or 1/2 tsp. Honey, optional - 1/2 tsp. of pumpkin seeds How do you go about it? - Mix the chia seeds, milk, vanilla, stevia or choice of sweetner in a bowl and refrigerate for an hour. - In a bowl/mason jar/whatever-floats-your-boat, stack this mixture and then freshly cut mangoes and strawberries. - Garnish with some nuts/seeds/mint. Real Talk: This one was brutal, painstakingly, brutal. Honestly I feel so dejected about this race that I debated about posting. I am physically and emotionally hurt by the results of this marathon. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ The first 10 miles, I felt amazing. Absolutely amazing. But then all of a sudden I felt the wind knock out of me and my body and mind were ready to stop. Little did I know this would set the pace for the rest of the day. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Mile 18, I saw my Aai and I was feeling every emotion and ache in my body. I started getting cold, since I was walking more and took the jacket off of my dad’s back 😳. I stopped at almost every medical tent to have biofreeze put all over my body. At Mile 20, my brother gave me a pep talk, so I hobbled forward. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ As I was getting closer to the end, I tried to push myself, but as soon as I would, another muscle would spasm out. I did get a burst of energy when I heard my parents cheering me on (totally unexpected as I thought I was meeting them after the race). I finally was able to jog across the finish line and I immediately felt like a failure. I knew for a fact I had blown my time (5:26:12 vs 4:21:07), walked almost the last 10 miles and didn’t think I pushed myself hard enough. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Thank you to #mytribe for all of your support from near and far. ✨ 3rd marathon in the books and I’m looking forward to next year’s 50th anniversary of the #TCSNYCMarathon @nycmararthon (🤞🏽 for an international marathon too). Despite all of that, I’m still feeling hurt, frustrated and ashamed. Eventually that will fade and I will start to focus my energy on training, which I miss already (go figure 🙄). ✨A Diwali special recipe✨ . . . Today has been a no breather and I am typing this while I am commuting in a cab to my friend’s Diwali party braving the Bangalore rains. But I wanted to shoot a quick healthyish Diwali recipe your way as a little Diwali gift from my end, so here we are! My flatmates have already tried this and they love it. 🙋🏽‍♀️Without further ado, here goes the recipe for a quick Amaranth/Rajgira Halwa (pudding) sans any milk and refined sugar. Almost Vegan and gluten-free for my friends here who avoid dairy and gluten. You will need: • 2-3 cups of Amaranth Seeds • 1 cup of desiccated Coconut • 3-4 cups of Almond Milk or milk of choice • A small cup of crushed almonds, pistachios and cashews • Handful of raisins • 1/2 tsp green elachi/cardamom powder • 3 heaped tsps. of Jaggery Liquid. I used the one by @happyhealthymeorganics. • 1-2 Tbsp. of ghee or oil of choice. Again @happyhealthymeorganics . How to go about it? • In a deep pan, add the milk and bring it to a boil. Add cinnamon powder and jaggery liquid and leave this mix on a low flame. • In another heated pan, add the oil/ghee, add the nuts and sauté it on a medium flame. • Add the Amaranth Seeds and let them pop while you sauté the mix for 2-3 minutes. • Add the desiccated coconut and sauté again for 2-3 minutes. it • In the milk, add the Amaranth Seed mix and let it all cook for 10 minutes on a medium flame. Serve it hot or cool it in a fridge and sprinkle the crushed nuts. And tadaaaaaa! Easy Peasy Oatmeal Mug Cake . . . Finally getting back to my regular life after shifting houses and jobs. Adulting can take a toll on you, man. 🙄While my kitchen is only partially set, I wanted to start prepping my food ASAP. So, after a little experiment, I finally made these Oatmeal Mugcakes sans any Maida/All Purpose Flour. Without further ado, here goes the recipe. Here’s what you will need: • 1 Large Mug • 3-4 Tbsps. of Oats Flour (Use the grind option in a blender to blitz the oats to a floury/powdery consistency. It’s okay, if ain’t too fine.) • 1 Large Banana • 1/2 Tsp. Pysllium Husk/Isabgol Powder • 1/4 Tsp. Baking Powder • 1/4 Tsp. @epigamiayogurt’s chocolate spread (optional) You can use a sweetener of choice if you want, according to your taste. I didn’t feel that I required any. How to go about it? • In your mug, mash the banana with a fork and mix all the ingredients really well. • Don’t fill the mug until the brim, leave some space for your mug cake to rise. • Microwave this for a minute on the high setting and for another minute on medium high. • Keep checking because this might vary from microwave to microwave. Lunch box #964575588459 When you are carrying lunch and snacks to work, always make sure that you have ample amount of protein, vegetables and that you aren’t shying away from fats. Because I have noticed that most of my colleagues lunchboxes are too carb centric. Coming to this lunch box, it is hands down the tastiest one that I have ever carried to work. A couple of you here and my colleagues had asked me for the Coconut and Lemon Grass Tofu recipe, so here it goes. Also, the credit for the recipe though goes to @cucinamiabynatasha. You will need: • 200 gms of firm Tofu. I used the one by @murginns. • 200 ml of coconut milk • 1 finely chopped fresh stalk of lemon grass • Finely chopped spring onion leaves • 1/2 tsp. of ginger garlic paste • 1.5 tsp of sweet chilli sauce • 1 tsp. Coconut Oil for pan frying the Tofu • A dash of salt, pepper and red chilli powder and turmeric. Suit yourself here. How to go about it? • In a mixing bowl, pour the coconut milk and add all the ingredients except the Tofu and oil, obviously. • After you have mixed everything well, add the Tofu. I cut the Tofu slab in regular sized squares. And poked through the surface with a fork for better marination. • Let this sit for 30 minutes. • Once done, on a heated pan, slather the oil and pan fry the Tofu until golden brown. Flip it and do the same for the other side. • Now, pour the coconut milk marinade over your pan fried tofu and enjoy. You can pour this marinade over steamed vegetables too. A glimpse into my regular Lunch and Snack Boxes . . . An idea of a meal is very simple for me. If I am not going berserk and gorging down a pizza, I need my veggies, protein and some carbs such as rice/roti in every meal. That being said, I keep my snacks pretty simple too- some nuts and fruits because they are zero drama and require no effort. Since consuming veggies are so so so important. Here’s a simple recipe for stir fried veggies to make your vegetable consumption interesting. For this you will require: • A small cup of each- Steamed Broccoli florets, chopped Pak Choi, chopped Mushrooms, chopped bell peppers, onions • 2-3 pieces of chopped Garlic • 1 Tbsp. of @bragglivefoodproducts liquid aminos. Or soy sauce. • Finely chopped spring onion leaves for garnish • Salt and black pepper powder to taste to taste • 1 tsp. of choice of oil • 1 tsp. of white sesame seeds . What you gotta do: • In a heated pan, pour in oil. Throw in the garlic and sauté until it goes a little brown. Add in the onions and repeat. • Add the bell peppers and mushrooms, give it a toss. • Then throw in the broccoli and salt. Sauté and let it cook for a minute. • Add the Pak Choi and toss it toss it. • Add the Aminos/Soy Sauce and peeper and give everything a final toss on a high flame again. • Garnish with spring onion leaves and sesame seeds. Quinoa Porridge . . . Only a few of you could guess the main ingredient when I posted a picture of this bowl in my stories today and quizzed you about it. But all every soul wanted was the recipe. So demanding, you guys! 🤷🏽‍♀️ Just kidding, or am I?😈 . Couple of days back, @shobhitraina reminded me to post a breakfast recipe. Hadn’t tried this beaut in a long time. So, I thought I shall make me some porridge post workout today and share it with you guys too. You will need: • A small cup of Quinoa well rinsed • 250 ml of coconut/almond milk or milk of choice • 1 tsp. of Cinnamon Powder • A tsp. of honey (optional) • Pan fried banana and Apple • Pomegranate arils • 2 cups of water . How to go about it: • In a saucepan, add Quinoa and Water. Bring it to a boil. And cook for 10-15 minutes on medium heat until • Add the milk, let this cook again for 5 minutes. • Add Cinnamon and Sweetener of choice • Serve in a bowl and top it up with pan fried banana and apple which are the two stars of this porridge. • Top it up with Pom arils and eat it away. I also sprinkled a teensy bit of dark chocolate for some added jazz. • For pan fried apple and banana- Slice the fruits. In a pan, add a tsp. of coconut oil and put the sliced fruits and char both sides a little of each fruit. Tastes soooooo yummy! If you wanna speed up the whole process for a weekday breakfast, just keep some cooked Quinoa handy. Ditch the water and cook the Quinoa and Milk together for 5 minutes and go ahead with the rest of the process. Hope you have a good week! When you are your own girlfriend, you always get your breakfast in bed.🙃 . That’s me channelling my inner Carrie Bradshaw. Anyhow, I loooooove having amaze and queen sized breakfasts because I will always be a proponent of Team Never-Skip-Breakfast. Also, there was a serving number 2 involved.😼 . That being said, it’s not a cardinal rule to have big breakfasts. It suits my lifestyle and requirements, might not suit yours. Because I have a lighter lunch and an okayish sized dinner. If you are person who saves up calories for the later part of his/her day, then this arrangement might not work for you. Sometimes small tweaks can bring about a big difference. For instance, filling my breakfast omelette with a 1/2 Tbsp. of Hummus is a master stroke that I learnt from @veeraleite. Lunch Box Idea 964337905380 . . . One of my gazillion kitchen experiments made me realise that Quinoa + Chickpeas (Read: Desi Chole) is an amazing combination. And if you cook the Chickpeas in Desi Ghee, that’s an added bonus! Also, hello plant based protein options!🙌🏽 . Anyhow, this lunch + snack box has boiled eggs missing because I got them made at the office cafe. Few things that I keep in my mind, when I carry my boxes to work or anytime I am travelling, that might help you too. . • Make sure you have healthy portions of protein in your meals and they aren’t entirely carb centric. • Vegetables are your best friends. I like them steamed but you can go for a stir fry. • A portion or two of seasonal fruits and dry fruits can keep you satiated and can curb the urge to snack on junk. • If you can outsource it, don’t carry it. For instance, I get my boiled eggs from my office cafeteria. • Don’t shy away from protein supplements. They are an easy and handy way to get your protein intake on track. Also, I consume a plant based protein supplement after my workout because Whey doesn’t suit me. You can go for a trusted brand of Whey Protein supplement too. Little effort. Little planning. Repeating dinner for lunch and carrying a part of my breakfast as a little snack to work is something that I do ALL THE TIME! “Neha, what is this green (Read: Shrek like) thing that you keep eating?” . . . Common question I am posed with when I carry this to work by my coworkers who look at me with utter amazement and sometimes with disgust while I am gorging it down. Couple of days back, when I put up a story about it, a lot of you hit me up with inquisitive DMs. So, here I am clearing the air.😅 . It’s just OVERNIGHT OATS WITH SUPERGREENS. . I ate Overnight Oats as a part of my breakfast after a really long time. So, I thought I would jazz it up with some Invincible Supergreens by @happyhealthymeorganics which is a mix of seven amazing greens such as Spirulina, Wheatgrass, Alfalfa, etc. I generally mix it with water and drink it up but sometimes I put it in my smoothies, breakfast oats or chia pudding too. A little homework for you would be to see why you should incorporate one in your diet, okay? For this particular bowl, I mixed the following in a jar and refrigerated it overnight. • 3-4 Heaped Tablespoons of Oats • 200 ml of Coconut Milk • 1/4 tsp. of jaggery liquid • 1 tbsp. of Supergreens In the morning, I heaped it up with a little mango. The Lazy Girl Pancakes . . . Last week, I woke up craving for a big bad breakfast. Checked my pantry and all I had were eggs and Bananas. Sad planning on my end!😒 Anyhow, when life give you lemons, you make the tastiest lemonade. Before you judge me, this is a first serving that was followed by two later. The picture is for aesthetic representation only!🤷🏽‍♀️ . Ingredients (You can suit yourself with the quantity here!) 1. 2 Ripe Bananas 2. 3 egg whites, 2 whole eggs 3. Optional: 1/2 tsp. of baking powder and 1/2 tsp. of natural vanilla extract. 4. For toppings: I used 2 or more (Read: Don’t go overboard like me🤓) heaped spoons of Natural Peanut Butter and a small seasonal Mango. . How do you go about it? 1. Mash the bananas really well in a bowl with a fork. 2. Add in the eggos! Go for a desired consistency. 3. On a pan, add your choice of vegetable oil, pour the batter and flip’em Pancakes until one side is golden brown. 4. Stack them up and top it with your desired toppings. Another ‘Carry-your-food-to-Work’ Idea💡 . . . My mom thinks that I have gone too ‘angrez’ with my food habits and I don’t eat ‘real’ food because my diet lacks Roti or the Indian Flatbread. Can you believe? Anyhow, to please my mothership and also my cravings, I decided to jazz up Roti and make Tofu Rolls for dinner last week. She was enthralled when I sent her the picture of the final product. (Read: Though my Mother would be rolling her eyes at the mention of Tofu while reading this post. But chill, mommy! Chill!👯‍♀️) . I carried this to lunch the next day at work along with some light snacks. Also, before you judge me, this was a PART of my snack game that day. Okay? Now, how do we make the rolls? 1. Make yo Roti. The most difficult part for me and I am definitely outsourcing the next time. 2. Make minced Tofu/Paneer, anyway you swing. I have a super easy recipe on my feed, refer to that. 3. On a pan, pour and heat a 1/2 teaspoon of ghee/oil. Slather your Roti in this nicely for a minute on medium flame so that it goes a little crisp. 4. Put a nice and clean Lettuce Leaf on your Roti. 5. Add your Tofu/Paneer, spread a ‘little’ bit of low fat mint mayo and ‘wrap’ it up! Easy and simple. Simplest, if you like making your Rotis. Don’t count me into that club yet!🙇🏽‍♀️ . Another correction: I meant to write ‘Steamed Veggies’ here but realised it after editing and uploading the picture. Changing it would have been too much of an effort. So, cut me some slack? Okay? Oatmeal anyone? Over the past 1 year oats have become my go to breakfast, lunch and dinner. I mean I can eat it anytime. They are like blank canvas for whatever toppings you can fit into the bowl. Make it sweet or savoury, your choice. I eat oats more than anything else and then I feel that @quaker_india should hire me as their brand ambassador. Isn't it? Jokes apart, I had this simple bowl of oatmeal for my morning breakfast. I simply cook my oats in milk or water or even both at times but today it's just water. Mostly, I avoid adding sugar to my sweet oats as I prefer to have natural sugar in form of sweetner which I easily get from the fresh fruits. Check the recipe below for more details. Now transfer it to serving bowl and top it with more cinnamon, walnuts and honey. 6. Serve hot.

Mango Guacamole . . . Yes, I love Mango too much and I put it in everything from Omelettes to Guacamole. Hence, before my boy, Mango, goes out of vogue for this year and our love affair ends again, I wanted to share this ultra amazing and easy recipe with you guys. This will make a good snack along with crackers or on a toast or can be a simple salad dressing. You will need the following: • 1 Avocado Don’t go all Hass, go local. Though how I wish I could get into Hass. If you get this reference, you will just GET it.🙃 • 1 medium sized finely chopped mango. • 1 Finely Chopped Tomato • 1 Tbsp. Olive Oil • 2 Tbsp. Lemon Juice • Salt, pepper, chilli flakes to taste . How to go about it? • In a bowl, scoop and mash the Avo really well with a fork. • Add the oil, lemon juice, spices and mix. • Throw in the mango and mix again. DONE! I stored this for 2-3 days in the fridge and had it for breakfast and snack. It tasted really good with @nourish.organics seed crackers, especially!
