Creamy sweet potato & lentil soup with roasted chickpeas By @helens_vegan_kitchen Makes 6 large portions Soup ingredients: 1 tbsp oil 2 tsp black mustard seeds 2 tsp cumin seeds 1 onion, roughly chopped 2 garlic cloves, sliced 250g carrots, chopped 350g sweet potatoes, peeled and chopped Pinch of dried chilli flakes 1 tsp salt & lots of black pepper 300g @The.veganrecipe dried red lentils 1.5 litres of veg stock 200ml oat milk Roasted chickpeas ingredients: 1 x 400g tin of chickpeas, drained and rinsed 1/2 tsp mild chilli powder 1/2 tsp turmeric 1 tsp cumin 1/2 tsp salt 2 tsp maple syrup 2 tsp olive oil 1️⃣ To make the soup, add both seeds to a large pan with the oil and fry for a couple of minutes. Spaghetti and Spinach with Sun-Dried Tomato Cream Sauce Recipe Creamy Sun-Dried Tomato Spinach Pasta Recipe Ingredients: 8 oz spaghetti 1 tablespoon olive oil 3 cloves garlic, minced 1/4 teaspoon red pepper flakes 1 cup sun-dried tomatoes, chopped 2 cups baby spinach 1 cup heavy cream 1/4 cup grated Parmesan cheese Salt and pepper to taste Fresh basil leaves, for garnish Directions: Cook the spaghetti according to package instructions until al dente. Drain and set aside. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for 1-2 minutes until fragrant. Add the chopped sun-dried tomatoes to the skillet and cook for another 2-3 minutes, stirring occasionally. Stir in the baby spinach and cook until wilted. Pour in the heavy cream and bring to a simmer. Let the sauce cook for 3-4 minutes until slightly thickened. Add the cooked spaghetti to the skillet and toss until evenly coated with the sauce. Meatless Monday #4 recap - Haitian Legume (stewed vegetables) with brown rice, plantains and 🥑 avocado. Okay week #4 of meatless Monday down! When I list the health benefits, I’m seeing a common theme….. high fiber and lots of vitamins :). Adding more vegetables to your diet is probably the easiest way to improve your health 😊 Family Feedback “FF”. One again we got 3 out of 4 thumbs ups. My oldest is ridiculously picky and this dish didn’t win her over. I knew it wouldn’t, but everyone else was happy and I was not hungry in the middle of the night! I even made an extra batch to share with my mom and dad. Recipe notes: This is not a quick dish to make. With all the chopping and the various steps to cook down the vegetables, it takes hours! Nutritional Benefits: There are so many vegetables here I won’t list them all. My main veggies in here are: Eggplant high fiber, potassium, vitamin C, vitamin B Cabbage fiber, folate, potassium, magnesium, vitamins A and K Spinach vitamin A, vitamin C, vitamin K, iron, folate, potassium and even a little protein!!! Creamy One Pot Lasagna! By @plantbased.traveler Ingredients: 6 lasagna sheets 10 oz vegan mince * 2 heaping tbsp tomato paste 32 oz can crushed tomatoes 32 oz vegetable broth or water (simply use tomato can 👆🏼 to measure) 1 cup unsweetened plant milk (I like extra creamy oat milk) 1 medium sweet onion 3 garlic cloves 1 small carrot 1 celery stalk 1 tbsp olive oil 2 tsp Italian seasoning 1 tsp dried basil 1 tsp paprika 1/2 tsp crushed fennel seeds Salt and pepper to taste Method: Finely dice peeled/washed onion, garlic, carrot and celery. Heat up a small dutch oven (or non stick pot or deep sauté pan), cook vegan mince until browned and crumbled, then set aside. Add olive oil, and sauté diced vegetables for 5-10 minutes until fragrant and softened, then add mince crumbles back to the pot. Add tomato paste, stir for a minute, then add crushed tomatoes, plant milk, broth/water, herbs, and spices. Break lasagna sheets in 2-3 pieces, add them to the pot, and bring everything to a boil. Simmer for 20 minutes, stirring occasionally, or until pasta is al dente. Enjoy! Japchae noodles! Korean sweet potato starch noodles are so good if you haven’t had them, highly recommend trying them!! 🫑 This is my take on it- I use a lot of veggies and got the sauce recipe from @itslizmiu Ingredients & procedure: 🥕 matchstick cut carrots 🧅 onion, also thinly slice the white part of scallions and cut the green parts larger. 🫑 This is two larger bell peppers 🍄‍🟫 soak dried mushrooms and slice 🍃 blanch spinach and squeeze out water 🍜 soak the noodles 🫙 Make sauce, check @itslizmiu for exact recipe but it’s basically soy sauce, water, garlic, black pepper, and some sugar. The prep takes the longest as this dish comes together very quickly once the actual cooking begins. 🥕 Sauté veggies (carrot, onion, bell pepper) on high heat in batches to not crowd the pan. 🍄‍🟫 cook the scallion bottoms, mushrooms, noodles and sauce, tossing to combine 🫑 add the veggies back in to combine and for the last minute add the spinach, green onion tops, and a heavy sprinkle of sesame seeds.

What recipe do you like the most? by @Plantyou 1️⃣ Chana Masala Inspired Chickpea Coconut Curry Ingredients 1 tbsp olive oil 1 yellow onion, diced 3 cloves garlic, minced 2 tbsp curry powder 1 tsp cumin ½ tsp turmeric ½ tsp paprika ¾ tsp salt 1 can crushed tomatoes, 15 oz 1 can coconut milk, 13.5 oz 1 can chickpeas, drained and rinsed 1 tbsp almond butter, optional 1 handful spinach Instructions In a pan over medium heat, add the onion and olive oil. Stir until fragrant, approximately 3 minutes. Next, add the garlic, curry powder, cumin, turmeric, paprika and salt. Stir until fragrant, approximately 5 minutes. Add the crushed tomatoes, coconut milk, chickpeas and almond butter. Bring to a simmer, then lower the heat, and cook on low for 6 to 8 minutes, until everything is combined and warm. Stir in the spinach until it is wilted. Serve with fresh cilantro and naan bread as desired. 2️⃣ Golden Glow Soup paired with my favorite crackers . 🙏Lends 4 to 6 servings
From start to finish 20 minutes . 1 tbsp olive oil or vegetable broth 1 yellow onion, diced 2 carrots, diced
4 cloves garlic, minced 1 rib celery, diced 1 tsp dried oregano 1/2 tsp black pepper 7 cups vegetable broth 1 can white beans, drained and rinsed 2 lemons, squeezed 1 handful fresh kale 1/4 cup tahini 1 tsp lemon zest 1 cup orzo 1/4 cup fresh dill 1 tsp turmeric . In a pot over medium heat, add the onion, carrot, celery and garlic. Sauté until softened, approximately 5 minutes. . Add the vegetable broth, drained and rinsed can of white beans, lemon juice and lemon zest to the pot. Bring to a boil, then simmer for 10 minutes covered. . Stir in the kale, fresh dill and orzo and cook for another 10 minutes until the orzo is cooked through, keeping the lid off and stirring intermittently to prevent the orzo from sticking. Stir in the tahini and turmeric until combined and heated through. Enjoy!

Son limas remojadas en salmuera y secadas al sol, hasta que el interior se vuelve negro y hueco. Se usan para aromatizar sopas, guisos, arroces o té. Este estofado es una sinfonía de distintas capas de acidez muy sutil, que envuelven a las verduras (cebolla pochada, patata, zanahoria y kale): la de la lima seca, la del tomate y la de las bayas de agracejo. A ello se une la del yogur que sirve de acompañamiento. Vegan BANG BANG CAULIFLOWER By @daria_cooks_vegan Ingredients •1 cauliflower, cut into florets •1 cup / 240 ml plant-based milk (I used full-fat oat milk) •2 tablespoons lemon juice •3/4 cup / 105 g all-purpose flour •1/2 cup / 80 g rice flour (sub in cornstarch) •1 teaspoon paprika powder •1 teaspoon salt •dash of black pepper •1 tablespoon hot sauce •1 cup / 100 g panko crumbs (or more as needed) •vegetable oil for frying 🌱For the sauce: •1/3 cup / 80 g vegan mayonnaise •2 tablespoons chili sauce •2 teaspoon hot sauce Instructions 1️⃣In a bowl whisk together vegan mayonnaise, chili sauce and hot sauce. Put into fridge. 2️⃣In a bowl combine flour, rice flour, oat milk, lemon juice, hot sauce, paprika, salt and pepper. Mix until smooth. Dip cauliflower florets into the batter, then cover them with panko crumbs. 3️⃣In a pot heat vegetable oil until thermometer shows 350 °F / 180 °C. Which  #recipe would you try?👇 By @Wholesomehedonista 1️⃣ Vegan Wrap Hack ✨ Make a cut halfway down a large tortilla (I used an almond flour tortilla) Fill each quarter with toppings of choice, I used: - Mediterranean Grilled Portobellos (brushed with olive oil, balsamic, rosemary, salt and thyme) - Pesto (you can make your own but I just used Trader Joe’s vegan kale cashew pesto) - Hummus of choice - Mashed avocado - Caramelized onions (no oil in ones I made- just sliced up a red onion and put it in pan with about 1/2 cup veg broth, cooked on medium until thick and caramelized, keep adding more broth as needed as liquid dries out + add some coconut aminos if you want for flavor!) Fold, starting with cut end first. Grill in pan on stove top or panini press until golden on both sides. Enjoy!! 2️⃣ Hot girl summer rolls Recipe I tried so many different topping combos but I liked these the best and they happened to be the easiest + healthiest too! -sliced cucumber spears -mint and basil leaves (makes it taste so fresh!) - sliced carrots -sliced avocado -fresh cilantro - crisp butter lettuce -sesame seeds on top Other topping ideas: vermicelli noodles, crispy tofu, peppers, sprouts Peanut sauce recipe: 1/4 cup creamy peanut butter 1-2 tablespoons maple syrup 1/2 teaspoon sesame oil 2-3 tablespoons coconut aminos or soy sauce About 1-2 tablespoons fresh lime juice 2 tablespoons canned coconut milk (cream on top of can) Fresh grated ginger and garlic to taste Crushed peanuts for topping if you want Whisk very well until thick creamy and emulsified. Adjust flavors to taste. After whisking add little more peanut butter if too thin, splash of almond milk or water if too thick Tips - Don’t soak the rice paper roll, just dip quickly in warm water then lift so only half is in the water, run your fingers along the edges and turn quickly - it’ll soften as you add toppings -lay onto clean dry plate - To roll, fold up the side closest to you tightly around the filling, tuck under the filling roll a little then fold over each of the sides,then finish rolling to close - Try not to overstuff it so it doesn’t break

Preheat the oven to 200°C (gas mark 6). Toss the eggplant slices in 1 tbsp of olive oil and season. Arrange on a baking tray and roast for 20 minutes. 🥄 2. Easy Vegan Laksa By @foodpassionical Prep time: 10 minutes Cook time: 10 minutes (2-3 servings) Ingredients: Laksa paste- 3 shallots 3 cloves garlic 10 gram galangal Handful dried chilli, soaked The broth- 3 stalks lemongrass 300 ml water 250 ml coconut milk 1 1/2 tbsp brown sugar or coconut sugar Juice of 1 lime Salt for seasoning 2 tbsp oil for cooking For serve: 280g noodles any of your fav noodles, cook according to the packet direction Handful bean sprouts, blanched 4 Long beans (cut into 2 inch), blanched 1 small eggplant, grilled or cooked 100g fried tofu Handful coriander Fresh chilli, sliced Method: 1.) Heat 2 tbsp oil, add in the lemongrass and sauté till fragrant. 2.) Add in the blended Laksa paste, cook for 1-2 minutes or until the paste look a bit darker. 3.) Pour water, sugar, salt, coconut milk and lime juice. Stir and mix well. Cook for few more minutes. Turn off the heat once it's boiled. (Discard the lemongrass pieces) 4.) Place the cooked noodles, vegetables and tofu in a bowl. Pour in the Laksa broth and top with fresh chilli and coriander. Cheesy Stuffed Zucchini Boats Ingredients: 4 medium zucchini 1 cup cooked quinoa 1 tablespoon olive oil 1 onion, finely chopped 2 cloves garlic, minced 1 cup cherry tomatoes, halved 1/4 cup fresh basil, chopped 1/4 cup fresh parsley, chopped Salt and pepper to taste 1/2 cup shredded mozzarella cheese 1/4 cup grated Parmesan cheese 1/4 cup crumbled feta cheese Directions: Preheat the oven to 400°F (200°C). Slice each zucchini in half lengthwise and scoop out the seeds to create a hollow center. Place the zucchini halves in a baking dish, cut side up. Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, and cook until softened, about 3-4 minutes. Stir in the cooked quinoa, cherry tomatoes, basil, and parsley. Season with salt and pepper to taste, and cook for an additional 2-3 minutes. Spoon the quinoa mixture evenly into the hollowed-out zucchini halves. Top each zucchini boat with shredded mozzarella, grated Parmesan, and crumbled feta cheese. Lentil Bowls with Avocado, Eggs, and Cholula Spicy Lentil and Avocado Bowls with Perfectly Poached Eggs Ingredients: 1 cup green lentils 2 large avocados, sliced 4 large eggs 1 tablespoon Cholula (or any hot sauce of your choice) 2 cups vegetable broth 1 small red onion, finely diced 2 cloves garlic, minced 1 teaspoon ground cumin 1 teaspoon chili powder Salt and pepper to taste 2 tablespoons olive oil Fresh cilantro, for garnish Lime wedges, for serving Directions: Rinse lentils under cold water and drain. In a medium saucepan, bring vegetable broth to a boil. Add lentils, reduce heat to low, cover, and simmer for about 20-25 minutes until lentils are tender but not mushy. While the lentils are cooking, heat olive oil in a skillet over medium heat. Add onion and garlic and sauté until softened, about 3-5 minutes. Stir in the cooked lentils, cumin, chili powder, salt, and pepper. Cook for another 2 minutes. Remove from heat. Poach eggs to your liking. For a runny yolk, cook for about 3 minutes in gently simmering water with a splash of vinegar to help the whites set. To assemble the bowls, divide the lentil mixture among four bowls.
