My favorite steak is ribeye but this sirloin had been calling my name. I took it out of the fridge last night so it had 24 hours to get to room temperature and then I cooked it using a thermometer to get the middle temperature to 55. Will from @trewayfarm taught me this method and I can honestly say I've never had an over cooked steak since! It was left to rest for about 5 mins while I cooked the eggs. This was the most perfect steak. Fat typically makes foods more rich, moist, and flavorful. And it carries 9 calories per gram, a more than double the amount of carbs and protein which have 4 per gram. Being both calorically dense and super delicious is obviously a dangerous combination, so being able to find balance while enjoying these foods is key. Aside from being delicious, fats are essential to a robust and healthy diet. Fat helps regulate hormone production, supporting optimal metabolic function and overall hormonal balance. It helps us absorb fat-soluble vitamins, and it’s also a key component of cell membranes, aiding in cell structure, integrity, and signaling. Omega-3 fatty acids, especially EPA & DHA - derived only from marine life - are especially beneficial for brain and heart development and function. They’re also anti-inflammatory. Being as calorically dense as they are - fats provide sustained energy, keeping you feeling fuller for longer and potentially reducing cravings. And fats are kind of sneaky, because they’re pretty much in everything. Highly processed foods are typically rich in both carbs and fats, but deficient in protein - so a diet rich in these foods can lead to an unhealthy body composition and unhealthy consequences down the road. With all the benefits fat provides, I’m sure you can imagine how you might feel if you’re not getting enough. Hint: you’d feel like garbage. So how much fat should you have? It’s going to vary based on the individual, but it’s recommended that fat intake makes up 20-35% of your daily average caloric intake. For dieting individuals who aren’t overweight, I recommend going no lower than their body weight in pounds multiplied by .3 - so someone weighing 150 lb shouldn’t have any less than 45g daily on average. Overweight and obese individuals have a bit more leniency on how low they can go, but eventually they’d need to increase their fat intake to avoid any negative side effects. FAT It's funny how being bought up in the non fat generation how it screwed everything up. It's kind of a fat phobia that we have gained and it takes a bit to understand that fat is not the bad guy here, even with all the research and evidence supporting this. Fat comes in four different types like Saturated fat, Monounsaturated fat, polyunsaturated and trans fat. So polyunsaturated contain essential omega 3 and essential omega 6 - remember when we mentioned with protein there are 9 essential amino acids and essential means your body cannot produce it, you need to be eating it. Eggs and fatty fish have these essential polyunsaturated fats in them. Its also comes in seed oils too but i do not recommend as they are HIGHLY processed and create a lot of inflammation in the body. Saturated fats are not bad for us they come from whole food sources such as meat, butter, cheese and tallow (animal fat) all the good fats that help with energy satiety and fat loss. Not actually having anything to do with and unhealthy heart or cholesterol profiles. Trans fats are usually man made fats like seed oils and have altered the chemistry due to the hydrogenation process like margarine. There are naturally occurring trans fats found in dairy products that are not detrimental to health. Good fat provides fuel and it is a very clean and efficient fuel source in the body. Fat is important for many things and coming from the generation of the fat phobia it can be hard to get your head around it. Fat is need for EVERY cell membrane in EVERY single cell in our body. Fat is super important for our hormone production. There are fat soluble vitamins and fat has an important role in our immune function. Fat keeps us feeling full and it also makes food taste good too. Eye of round is perfect for jerky. I cut slices, freeze them on trays until somewhat solid and easy to slice (1/2-1 hour), and slice as evenly as I can. Then I lay the strips in layers in a container and sprinkle with salt in between each layer. They brine in the container for at least 12 hour. Last time I did about 48 hours, and it was the best jerky I've made yet! Tastes like candy. I also left the fat on last time. I had been cutting it off, because everyone says the fat goes rancid very quickly, but we saw @ribeyerach eating jerky with a large strip of fat on it, and decided to try leaving the fat on. We had an idea to put beef fat with the moose meat I have, because the moose meat has almost no fat on it. So last night, after this moose roast had dry brined for at least 24 hours, I cut a slit down the middle of it, and put beef kidney fat we got from a local farmer into the slit, then tied it up to keep the fat inside the slit. I cooked it the same way I always do for roasts, and it was the best moose meat I've had so far on carnivore. (Also, if you are interested, the fact that I even FEEL like eating meat that isn't beef means that I feel a lot better after my double surgeries. I'm so happy that I finally am getting some strength back now. It has been a wacky winter here in BC. Snow, then it melt, more snow, then it melts and now more snow. I truly enjoy every season we get but I wish it would you know just pick a season and stick with it for a while. I have been working in the kitchen again and I decided to make a Carnivore-ish Lasagna. Recipe 3-4 pounds ground beef (I had a big tube of ground beef) 300g Chicken Deli Meat sliced as noodles 680mL can of Tomato sauce 1/2 cup homemade broth 2tsp Redmond Salt 2 tbsp homemade Italian Seasoning 750g 2% Cottage Cheese, drained 3 cup Mozzarella shredded Preheat oven to 350*F. Brown and cook the ground beef in a large pot or cast iron pan. Drain fat out, save for another use (cooking). Add in the tomato sauce, broth, salt and Italian seasoning. Bring to a simmer and cook 5-10 mins or until the sauce thickens. Remove from heat and stir in chicken noodles and cottage cheese. Pour mixture into a large casserole dish or leave it in your cast iron pan if it’s large enough. Top with cheese and place into the oven for 45mins- an hour. Until it’s all heated and cheese is all melted and slightly browned. Allow to cool 15 mins before serving.
