Tonight's dinner was a "chuck together what I have in the fridge" meal! I marinated chicken thighs in Greek yogurt, fajita spice, red pepper and onion and baked it in the oven for around 30 minutes, served with a mixed salad, halloumi, cheese coleslaw and a generous squirt of mayonnaise. LowCarb Flammkuchen mit grünem Spargel, Zwiebeln und Walnüssen. Ein Traum! Mein Rezept: Für den Teig: 120 g Magerquark 80 g geriebener Käse - z.B. Emmentaler 1 EL geriebener Parmesan 2 Eier Für den Belag: 250 gr grüner Spargel 1 große Gemüsezwiebel 250 gr Creme fraiche 100 gr Frischkäse 100 gr Walnüsse Salz und Pfeffer Magerquark, Käse, Eier und Parmesan vermengen und auf einem Backblech zum Fladen formen. Bei 200°C Umluft auf mittlerer Schiene 20 Minuten backen. Den Spargel putzen und in Streifen,, die Zwiebel in Ringe schneiden. Die Walnüsse grob hacken und 2/3 davon mit Frischkäse und Creme fraiche vermischen. Die Masse gleichmäßig auf dem Fladen verteilen. Spargel, Zwiebeln und restliche Walnüsse darüber streuen und mit Salz und Pfeffer würzen.
