Shrimp Pesto Pasta using Sankhya Farms Basil Salad Dressing: Ingredients: 250g shrimp, peeled and deveined 250g pasta (like linguine or spaghetti) 3 tablespoons Sankhya Farms Basil Salad Dressing 1/4 cup cherry tomatoes, halved 1/4 cup black olives, sliced 1/4 cup roasted pine nuts 1/4 cup grated Parmesan cheese Salt and pepper to taste Fresh basil leaves for garnish Crushed red pepper flakes (optional for spice) Instructions: Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water. In a large skillet, heat 1 tablespoon of Sankhya Farms Basil Salad Dressing over medium heat. Add shrimp and cook until pink and cooked through, about 3-4 minutes per side. Remove shrimp from the skillet and set aside. In the same skillet, add the remaining 2 tablespoons of dressing. Add cherry tomatoes, black olives, and roasted pine nuts. Sauté for 2-3 minutes until tomatoes soften slightly. Add cooked pasta to the skillet along with 1/4 cup of the reserved pasta water. Toss everything together to coat the pasta evenly with the dressing and vegetables. Add cooked shrimp back to the skillet. Stir gently to combine all ingredients. Sprinkle grated Parmesan cheese over the pasta and toss again until the cheese melts and coats the pasta. Season with salt, pepper, and crushed red pepper flakes (if using) according to taste. Garnish with fresh basil leaves before serving. Side Dish: A simple mixed greens salad with a light vinaigrette dressing would complement the Shrimp Pesto Pasta. Wine Suggestion: A crisp and fruity Pinot Grigio would pair well with the flavors of the pasta dish.
