Simple breakfast that is balanced, filling, colorful, nutritious and delicious. Here's what I did: Cucumber Tomato Red pepper Red onion Chickpeas Feta Olive oil Apple cider vinegar Salt Pepper Fresh parsley 1. Combine all of the above ingredients in a bowl except for the feta and mix well. You can really swap/add anything you like to this and change up the vinegar and herbs based on what you have on hand. It is a very forgiving dish. I do more olive oil than vinegar in this salad (like 2 to 1 ratio...but you can look up Greek salad dressing recipes if you are looking for precise measurements). Crumble a little feta on top when serving. 2. Fry two pasture raised eggs in ghee or avocado oil season with salt and pepper. 3. Mash 1/4 of an avocado on a slice of toasted sourdough bread (or any bread that has an ingredient list without any chemicals, gums or conditioners), sprinkle with hemp hearts and everything but the bagel seasoning. One of the easiest and most flavorful ways to cook veggies is by roasting them in the oven at a high heat (400 degrees). You can use any veggies you like- such as cauliflower, butternut squash, carrots, radishes, brussel sprouts, potatoes, peppers, onions, etc. The options are truly endless. My go to recipe is to toss all the veggies in avocado oil or melted ghee, 2-3 heaping tsp of whole grain mustard (or dijon), along with salt and pepper until everything is well coated and seasoned. Place the veggies on a sheet pan and make sure they are spread out and not overcrowded (you want some room on the pan so they don't end up steaming). Place in a pre-heated oven set at 400 degrees for 30 minutes. Then flip the veggies and place back in the oven for another 20-25+ minutes until they are tender and beautifully golden brown (even slightly charred). Let the veggies rest with a tent of aluminum foil for a few minutes before serving. Great for meal prepping large batches of veggies that can be used in many different recipes, such as in quinoa bowls, wraps, salads, or as just a side to some protein. Simple veggie forward meal that is on the table in less than 30 minutes! This is what REAL FOOD looks like...even the slice of toast on Jose's plate! It is a piece of sourdough bread with 4 ingredients from a local bakery, not the franken-breads that are sold in supermarkets. 💥💥NEWS FLASH: We are in a hypothyroid epidemic, but it is never just about the thyroid. In order to maintain healthy thyroid function, you have to be able to convert inactive T4 hormone into active T3 hormone. 20% of this conversion occurs in the intestines. 60% of this conversion occurs in the liver. Even while I was away on vacation many of the meals I ate would be considered "healthy", definitely full of color and nutrients... because this is the food I ENJOY eating, and it doesn't matter whether I am home or out, it's the food I usually want to eat! It's what I crave and what I find satisfying =) Eating well is one of the forms of preventative health care that I do DAILY to stack some healthy cards in my deck in the hopes of staving off disease and illness. For those of you that think Jose and my Dad are deprived of any fun meals living with me, here is the proof that that is just fake news!! Here is what we had on Superbowl Sunday ...Homemade meatballs (I used grassfed ground beef mixed with organic ground pork along with herbs, breadcrumbs, eggs, garlic etc) in my homemade sauce with a big green homemade salad on the side with a homemade dressing. Did you notice the key word that appeared multiple times there? Homemade...made at home...homecooked...with love xxoo That's the key to making most meals healthier, making them at home yourself- you get to control the ingredients and the quality and quantity of what you and your family eat. So you make sure you are: 🚫 Not consuming any hateful 8 oils ✔️ Eating better quality food, like grassfed local meat 🚫 Enjoying fresh bread from a bakery (WITHOUT any added gums/stabilizers, dyes, corn syrup, chemicals etc.) ✔️ Eating organic produce 🚫 Limiting your intake of salt and sugar This is how you begin to build your health and create a sustainable way of eating that will keep you out of the doctor's office and free from dis-"ease". It is done through getting back to REAL food that you make yourself (with love), that has limited whole food ingredients, and connects you to your family. As a rule of thumb I am always trying to find ways to add vegetables to my plate to make sure I am getting all the nutrients, fiber, and nourishment I need to keep me feeling full and to strengthen my immune system (just one of the many benefits of eating from the rainbow). Well, when I got home late from work last week and realized I didn't have any fresh veggies left in the house 😱😱😱... I panicked for a moment before remembering that I always have a freezer stocked with veggies that come in handy for times like these! I was looking for something quick to make (since like I said I got home late- I know you busy moms can relate) and so pasta was the go to choice- all you need to do is just throw up a pot of water and dinner is pretty much done lol. Since I never have pasta without adding in veggies... I added some frozen spinach and kale to the sauce when I heated it up and put some peas, ghee, salt, pepper and garlic in a pot with water and heated those up until tender...and then I grabbed some kimchi from the fridge for another veggie source and just like that I have a meal that is more filling and nutritious then just a plate of raviolis with some sauce. #morningstories. I was awake so early this morning. It’s pitch black outside and a bit frosty but no snow 🤞. It’s just not possible to get on with any making as my clay and slips are frozen. I see posts from other potters where their makes are freezing and cracking, so I’m going to wait awhile yet & continue on the process of making the house look and feel better again. I’m beginning to feel joyful again about the space we live in now we can see it again. Maybe that’s why so many people do a spring cleanup thing? Anyway more of the same today. Sometimes making changes to a recipe does not work out as planned- not all recipes can be easily modified in their original form to be healthier. It is not always possible to just swap out one ingredient for another...and this swiss chard erbazzone from Lidia is an example of that! I tried to make this dough gluten free, by just subbing out gluten free all-purpose flour for traditional all-purpose flour- but it is such a simple recipe with only four ingredients (flour, water, salt, olive oil) that it did not work. When I went to roll out the dough it completely crumbled. So, I tried to improvise by making individual bites as an appetizer in a muffin tin by pressing the gluten free dough that I was unable to roll out into the muffin tin and then top it with some of the spinach mixture...but the dough came out HARD AS A ROCK after baking it for just a few minutes!! LOLOLOL! So, in order to not waste the filling (which has swiss chard, spinach, kale, garlic, salt, pepper, gf breadcrumbs, eggs, and parmesan cheese) I ended up making this with regular organic unbleached all-purpose flour, as the original recipe called for... and Lidia and her ancestors intended! So I say all this to say DON'T GET DISCOURAGED!!! This is what a REAL FOOD SNACK looks like....and let me tell you it tastes even better than it looks! To make: Grab a few rice cakes of choice (I like the Lundberg's thin red rice and quinoa cakes), spread some nut butter of choice (such as peanut, almond, tahini, sun butter etc.) and top with some pomegranate perils (I got these from Trader Joe's). Cut up some fresh fruit to have on the side- and BAM! a yummy whole food snack that actually offers your body nutrients that is ready in under 5 minutes. #morningstories. Hello 👋 how are you? Snowdrops for a January post. I had a few pieces returned from a local florist’s shop recently. I’ll add them to my Etsy shop at discount this week. I think my brain must have been on overdrive last night in bed, like sorting out the whole makers conundrum in one go. Somehow I merged my recent makes with techniques I want to use & shapes to make too for an upcoming exhibition. I think my maker’s brain is slowly getting there with my new design ideas🤞. Wish me luck. My clay & slips are frozen so it’ll be a few days yet before I can make but it’s only early January and the big clear out is still in progress. I even had a sewing project come to mind but my sewing room is full of boxes of work for both mark & myself. I’ve had the fabric for a few years so another project to add to the list 🤣. 👀👀👀 Check out the ratio of veggies to meat/animal protein. One of the best habits you can adopt is filling your plate with lots of colorful nutrient dense fruits and vegetables. The benefits are truly ENDLESS, like decreasing your risk for all diseases, boosting your immune function, helping you maintain a healthy weight, and reducing inflammation to name just a few. #morningstories. Hello 👋 happy Sunday. Still chilly here & still not feeling the urge to get going with the clay but we’re still in declutter and clean mode. It’s amazing how much stuff we hold on to. Stuff we never use, taking up space. Today I’m going to box up about 100+ DVDs ready for the charity shop. We haven’t watched any for years. Then I’m going to tackle the big utility cupboard which is full of boxes for packing parcels, as well as loads of junk. I’m very much of the mindset that if you haven’t used it in the last 6 months then it can go. I do enjoy projects like this and the feeling of having a big calming space is so good for our wellbeing. #morningstories. Good morning. It’s chaos here. We’ve been having a huge clear out or declutter of the downstairs & have bags for the charity shop and boxes for the tip which we need to register for use now, a kiln to move to Nott’m and a 7 foot leather sofa which hopefully a friend is going to want when he visits us today 🤞. We’ve got huge rolls of bubble wrap and polystyrene squiggles in the lounge (obviously needed for parcels but I’d like them elsewhere please. I posted pots today just to remind myself that I do that too haha 😂. Still haven’t touched any clay after weeks. My first show is March but I’ve probably got enough stock for a one day show. As we start a new month/year keep this photo handy so you know which snacks to eat/make/have on hand. I know when I eat more protein I don’t snack as much which helps me not eat sweets and because, I tend to gravitate to sweeter treats protein bites, smoothies, and protein bars are what I need to invest more into. Easy meal idea! Create a wrap with leftovers! Who doesn't love a wrap? For this lunch I used a Siete almond flour wrap to take left over chicken (which I ended up making a quick chicken salad with, but you can just shred up some chicken or another protein source) and top it with spinach, avocado and leftover homemade cranberry sauce from Thanksgiving! For meal prepping this week I went with super light, mostly plant-based meals to help balance out the heavier meals we are likely to be indulging in later in the week. I am always trying to create the 80/20 balance that is needed to sustain a healthy lifestyle so it does not feel restrictive or impossible to stick to. So this week I made some red lentil patties as one of our meals (red lentils, carrots, shallots, garlic, cilantro, tomato paste, salt and pepper) and plan to enjoy them over romaine lettuce topped with shredded carrots, avocado, red onion, and olives. Add some tangy chipotle garlic aioli made with greek yogurt (instead of mayo!) and you have a really healthy, really delicious plant-based lunch or dinner. Another super easy recipe containing eggs coming at you on this beautiful day!   Swipe for a few videos showing you how easy it is to make these delicious egg bites in about 20-25 minutes!  1. Chop raw veggies into similar sized small pieces and place in a well greased muffin tin. I used broccoli, mushrooms and onion in this video. You can saute the veggies for an extra step and to bring out a little more flavor, but I skipped this step to save on time. Season with salt and pepper.  2. Preheat the oven to 350 degrees. 3. Crack 7-8 eggs in a measuring cup with a spout and add about 1/4 c milk of choice, salt, and fresh black pepper. Whisk thoroughly. 4. Pour the egg mixture over the veggies until the muffin cup is about 3/4 of the way full. You can top with grated cheese of choice at this point if you'd like! 5. Put in the preheated oven and set timer for 14-18 minutes, or until the eggs are fully cooked.  Lastly remove from the oven and let cool for a few minutes before removing the egg bites from the muffin tin. These egg bites store well in the refrigerator for a few days and are a good healthy high protein snack or a quick on the go breakfast! You can also enjoy them in a wrap with salsa or cut up on avocado toast, but I thought they were pretty great on their own =)  Did you find these step-by-step videos helpful? We moved in just over three years ago; unplanned and unexpected by us. There was no time to sort things. We also had a storeage unit of things from my mother-in-law’s home that we moved into here. And then one of our kids’ family moved in. This building became unfunctionable, FULL of things we could barely get to, and I often wondered how nice it would be if it just went up in flames. This was clear-out-the-shed week!! Pulled everything out, sorted what I wanted to keep. Filled up three trash cans and a couple of trash bags and watched the sanitation workers haul them away today. Washed all the dogs’ shed bedding. Put aside some things the kids wanted. Sent a FULL truck load to Good Will. It feels soooo GOOD to be unencumbered and unburdened by unwanted and unnecessary stuff. I found one mouse home and recent termite damage was also discovered. As soon as that is dealt with, I’ll be able to put the much wanted and cherished things back inside and make a sheltered, cozy spot for the pups. I’m getting ready to pack for a trip that will take me several places in the next couple of weeks. Different activities and different weather types will require different clothing options. I know what it’s like to travel with as many bags as the law allows weighted down using every available pound. Most of the time everything brought with me is used and worn; necessary, though? I think not. After battling all the suitcases to and from different locations, I often wonder why I do that to myself. This time I’m hoping to be a little more limited in what I take with me. Clothes and shoes are fun… The things we love to collect are fun… but when they become like a chain around our neck, causing us to stumble, slowing us down, making us struggle; is it really worth it? My goal is to make everything fit into two carry-on pieces. I’ll let you know how that goes.

Healthy Recipe Alert: Frozen Yogurt Treats 1 cup unsweetened plain Greek yogurt 3 tbsp of peanut butter 1 small diced banana 1 tbsp local raw honey 1/2 tsp cinnamon Whisk above ingredients until smooth. Line a baking tray with parchment paper and form round discs with the yogurt mixture on the paper. Put in the freezer for a few hours until frozen. Melt dark chocolate (I used Guittard dark chocolate baking chips 72% for this recipe) with a tsp of coconut oil. Dip the frozen yogurt discs in the melted chocolate and place back on the parchment paper. Sprinkle chopped nuts of choice on top. Place back in the freezer until the chocolate is hardened (only takes about 20 minutes or so). Let them sit out for about 10 minutes before eating so the yogurt will soften a little bit. Enjoy!! This lightly sweetened treat is so satisfying (due to the protein and fat content). You should definitely give this one a try! Let me know if you do! What is the cost of staying the same? Well, if you look around, you'll see what most people are doing, or rather not doing! Soooo these bars are probably the BEST DESSERT I HAVE EVER MADE...like ever lolololol And those that know me know that I have made countless desserts! To piggyback on the story I posted yesterday from @thefoodbabe when you EAT real food that contains REAL ingredients (like almond flour, butter, maple syrup, lemon juice/zest, vanilla extract, gf rolled oats, pecans, blueberries and blueberry jam) then treats like these (while they still should be enjoyed in moderation) are a great way to enjoy dessert and create the 80/20 balance that's necessary to make this a lifestyle change and NOT A DIET!!!! This dessert is very different than a store-bought treat- which typically includes 20+ ingredients, many of which are chemicals, gmo's, dyes and preservatives. Nothing REAL about that.
