rectangular baking tins with lids were used back in the early 19th century as a way to minimize the amount of crust on a loaf of bread (what?! The crust is the best part! 😳) Baking in these tins was also space efficient, especially in railway cars, where 3 loaves could be baked in the same space as 2 normal sized loaves. These are usually referred to as “Pullman” loaves now after George Pullman, railway pioneer. Next time, I’ll definitely tweak this potato bread recipe to get the final dough size in the sweet spot, around 1075g for this size pan.
