Day 6 of my Keto Lifestyle consisted of a lot of energy, motivation, alert and most importantly, HAPPY! A lot of my days looked like me dragging my feet, foggy-brained and constantly exhausted. I legit hated waking up every morning and feeling heavy (not weight wise, mind wise). I feel less hungry now. Before I started the Keto Lifestyle I felt hungry every hour and gravitated towards unhealthy snacks, junk food and a lot of carbs! 🍞🥖🥯🍫🥨🥐 For din-din this evening, I did Spinach and Feta Salad 🥗 again and a huge Wild Caught Salmon 🐠 . It tasted soo delicious and heavenly. 🤤 Im stuffed! Day 5 on the Keto Diet! Weak, bitchy, tired and feeling NOT SO NORMAL. 🤪 I am happy I finally pulled the trigger in making this transition. Why am I doing it? An experiment to see if I can eliminate and have my psoriasis and eczema under control. With my work outs 2-3 times a week, it’s also allowing me to get toned and trim. Work outs during the early stages of going keto has been hard but I keep pushing. A lot of water and electrolytes have been doing me well. Health Chat ✨ One sobbing prayer in the car for God to heal me (even if it meant making me sick first) resulted in 1. getting three (three!) severe food allergies 2. being diagnosed with diabetes, and 3. being forced to give up bad sugars and bad carbs — AND WERE THE BEST THINGS TO EVER HAPPEN TO ME. (Let me explain). I’m down four jean sizes (four!), my shirts are so loose they hang off one shoulder, nearly all my inflammation-induced symptoms are gone (bloating, heartburn, acne, poor sleep, brain fog, mood swings, and extreme exhaustion) — ALL gone. Living it keto ✨ So I’ve been trying out the Keto diet for about a month now & here’s the benefits I’ve discovered (personally since I cannot speak for other’s experiences): 🌸Way less acne (I didn’t get much in the way of acne anyway, unless it was hormonal induced at a certain time of the natural moon cycle, but now it’s basically just gone completely which is nice :) 🌸my brain feels better! What I mean by this is way less headaches. I used to get more frequent headaches for sure. I can also think straighter & more clearly with way less brain fog than I was experiencing before. I’m finding my memory has improved dramatically. 🌸 at first I did crave sugar as I was going through a pretty intense withdrawal that included sweating and flu like symptoms (!) Wow, but now I legitimately don’t crave sugary treats. It’s like a miracle in my case. I used to be 100% hooked on everything sweet. 🌸I have lost some weight. This is not a bad thing at all, because I can really do with losing a few for the sake of a healthier BMI atm. 🌸No bloating after meals due to the lack of/ low carbs 🌸 the most important & impressive aspect has to me been the shocking disappearance of my dry eye syndrome which was driving me nuts ( it can be painful) before I tried this diet. No other diet has ever changed this ongoing & apparently incurable issue for me so I’m very happy about this discovery in particular. My eyes very rarely seem to ever bug me anymore. So one month and so far, so good. I’m not saying I’ll never again touch a slice of bread or a donut but I’m really determined to keep going in this direction currently. Oh and the food is 100% delicious! Bone Broth Noodle Soup - Need to shake a cold and lacking in energy. With 5 mins and the leftovers in the fridge I threw together this soup to try and get the immune system up to speed. It’s a collagen bone broth (this one is a powder but you could use your own, store bought liquid, or whatever you have on hand) garlic, a sliver of red onion, Silverbeet (Swiss chard) - you could use spinach, kale or any leafy green, thyme and edamame noodles. All in a Pyrex bowl, covered in boiling water, left for 5 mins (covered) and stirred. Let’s hope this helps!

Learning new ingredients can at times be frustrating and somewhat discouraging 😞. Every easily, we can toss in the towel and give up. We have to remember, there is always a learning curve, and some new skills might take time. Today, I am developing recipes for Keto friendly Puerto Rican desserts. Here are twotraditional, polvorones (our version of shortbread cookies) and tembleque (a gelatin like coconut dessert). For every ingredient we decide not to eat, we find a replacement. Sometimes the replacements are ingredients we do not normally use. The main issue and struggle I have on a keto diet is, I just loooove fruit toooo much. Going keto I tend to enjoy lemons so much more to have that fresh juiciness at least, but I admid missing the fruit varieties so much. Sorry to those who hate runny eggs but oh my… no better feeling that a keto brekkie for dinner 🤤 poached eggs on cauliflower and cheese fritters 🧀 check out that yolk! Fritter recipe: 1 bag of diced cauliflower (this was on special I’d normally do my own but it was clearance) 1/2 cauliflower if you want to dice it. 3/4 cup parmasen 1 cup grated cheese 3 eggs 2 - 3 tablespoons coconut flour Salt and pepper Mix all ingredients well and fry palm sized balls on a low heat. It will look crumbly but when the cheese melts it’s sticks it together. You may need to squish your ball with a spatula as the cheese melts. I added jalapeños to mine because I need the fire 🔥 Enjoy ☺️
