Dim potol (curried bottle gourds with eggs) is quickly turning into some kind of a soul food for Mom and I. This is the third time I've cooked it in the last month. The recipe is pretty simple. Here's how I make it: I start by hard boiling three eggs. Once that's done, I let the eggs cool, while I toss the bottle gourds (I used 8 this time) with a teaspoon of salt. Next, I heat mustard oil in a wok and once it starts smoking, I add the bottle gourds and fry them till they are lightly browned on the outside. I use a spatula to transfer them to a bowl, leaving as much oil as possible in the wok. Then, I peel the eggs and set them aside. Next, I lower the heat to the minimum and add a teaspoonful each of whole cumin and turmeric powder into the wok. Once the cumin stops chattering, I add the a finely sliced onion and a little ginger paste into it. I stir everything together for about 20 seconds. Next I add the eggs and stir-fry them till they are reddish on the outside. I add a little cumin powder and coriander powder into the wok and add the bottle gourds. I stir everything together and let the flavors blend well together. After that, I turn off the heat and adjust seasoning. I usually serve this with piping hot steamed rice and a bowl of stewed lentils (dal) on the side. Mom loves it, so it's quite likely that I'll make this again many times in the coming days. ❤️🙌

What is a Hybrid/Sexlink breed? Let's look at the famous Golden Comet you'll find in most feed stores. This hybrid is bred from a New Hampshire Red and White Rock. They are bred for mass production of eggs which is a great way to fill those egg cartons up. However, hybrids can have short lives (3-5years) due to egg binding, reproductive failure, health issues from rapid growth and are a little too friendly to their predators. Even though there's cons to consider as with any breed, hybrids have extremely sweet personalities and do make wonderful additions to your flock and hearts. 🥚🔨This activity was so fun for Mack, and so beneficial for our chickens and pigs! We’ve been drowning in eggs since the weather has warmed up, and we needed a way to offload some, so we decided to feed them back to the chickens, eggshells and all! I know it sounds crazy and a bit cannibalistic, but chicken eggs aren’t just healthy for humans, they’re healthy for chickens and other animals as well! - Bake shells at 350 for 5-10 mins. - Put in bag and let your kid go ham crushing them up! - Scramble the eggs and slowly add in the crushed egg shells (so they don’t just glom together at the bottom like mine did … oops). - Let cool. Feed back to animals. Enjoy. 😊 Mack had a blast helping throughout the whole process (we made quite a mess with the scrambled eggs on the stovetop 😅), and the animals got an extra boost of calcium and protein. Win-Win!!!
