My harvest for today β₯οΈπΏ If you guys didn't know, my parents moved in the country side last fall so this is the first summer I have my own garden. It use to be mom's. Every evening, I water it and remove weeds from it... Fennel, french bean and salmon pasta. We enjoyed this so much that I thought I would share the recipe. 170g pasta Handful of french beans Fennel (the herb, not the vegetable) 2 garlic cloves 2-4 spring onions Olive oil 200g smoked salmon a lemon Boil your pasta in well-salted water, adding the French beans 3 minutes before the end. Warm up a good glug of olive oil and swirl around a couple of garlic cloves and a load of freshly ground pepper with a couple of finely chopped spring onions. Turn the heat off and stir in a couple of tablespoons of chopped fennel fronds and squeeze the juice of half a lemon. Drain the pasta and add it to the pan, moving it around to coat it well in the dressing. Top with slivers of smoked salmon. Squeeze over extra lemon to taste. This makes enough for two people. Can I recommend bronze fennel? While florence fennel is fussy and hard to grow (for me anyway) this giant herb just keeps on coming! It's a great ingredient in salads and as a herb in, well anything really. The flowers attract hoverflies and the seeds are great in curries, pickling and so on. It also helpfully self-seeds so you'll always have a few extra plants to give away. Most importantly, fennel is the favourite snack of two of the worlds greatest guinea pigs.
