Finally got back in the kitchen. Its so hard in Dubai where life is 100mph and constant dinners, lunches and brunches out all the time. Seems like its all glam but realistically its masking a void of having a decent home cooked meal surrounded by your amazing friends who feel like family here. So thats what we did. Opening up my new apartment to new friends has really made my heart feel full…and our tummies! A feast of spicy seafood linguini was just one of the dishes knocked up. I don’t think you can underestimate the joy and nurturing that comes from cooking meals for one another or yourself. So much gratitude for Betty, the amazing woman and human being who’s been cooking incredible, healthy, inventive, beautiful food for me at my friend Cis’s mountain refuge in Costa Rica where I’ve been visiting for the last twenty years. She’s one of the smartest, most capable and life loving people I’ve ever meant, and a true healer. She knows so much about healing through food, plants and nature. She told me he secret ingredient is “amor!”. I learn so much from her and this beautiful land when I’m here, one of my favorite places on earth. All the food is grown right here on the farm, truly a paradise. I don’t always eat beautiful meals like this. 🌸 🍎 As my emotions fluctuate like waves, creating nourishment like this makes me feel really good. But sometimes I’ll eat four corn dogs because I felt like it. And because I didn’t make any time to chef it up. Being conscious of my emotional eating patterns has been very successful in helping me navigate a healthier path. I don’t ever feel good after eating processed meals. They are difficult for our bodies to digest and we get very little nutrients from them. So, I’m starting this new thing... when I have the energy, I like to try and prep stuff for myself. Almost every night, I plate an elaborate Vegan meal and present it nicely on my tiny table, along with the serving dishes in case I want more. I touch down on a pillow—my preferred seating area is the floor—and begin a process that’s been called “gratifood” by Chef Stevie Ray Riehs.  Before the the first bite passes through my lips, the process has begun, and not just the process of digestion but of immense gratitude. Why? Because we all know it to be true—somehow what you are feeling transfers into the food—i.e putting love into it.  I thought to myself “rather than keep these meals to myself and my guests, why not share them with the everyone?” But there are so many food pages; it has to be different! It was an a-ha moment when it hit me.  There are so many food pages that focus on the cooking process but I couldn’t think of one that focuses on the eating process. What if we were to put love into the parts of the process that happen after the food has left the pan. I will certainly share some recipes here that will synonymize plant-based cuisine with healthy and delicious meals but this page is completely different than any other because it highlights what happens around the table!  You can come back here to see what I’m eating but more importantly how I’m eating. My biggest pride would be if even one person takes example of what they see here and turns dinner-time in their household into a sacred ceremony. The final thought I had was "why not start now!" So I got out my camera. And here it is, the first of many photographs of my tiny vegan table!
