Food prep for bro and family. Made a small batch of lemon/blueberry jam and used to make swirl buns. Made a few cinnamon as I ran out of jam. . Bro also requested beans and sausage. Mom worked all her life and used to make this when time was short. Not the healthiest back then, but widowed, working, with kids, you do your best to provide and she more than did. Made this using @fieldroast sausages. . Made stir fried veggies and tofu with a side of the best vegan kimchi. . Choose compassion. Be vegan. . Vegan is EASY once you make the connection. . Vegetable korma, dal and rice. First time making a Dal in the pressure cooker. I left it to cook for 10 mins then to depressurise for about 10 mins while I cooked the korma and rice. Best Dal ever! Rice bowls- brown rice plus whatever needs to be eaten in the fridge- beans, carrots/onions and fennel( from mom’s garden) , lettuce mom grew plus quick vingrette dressing I mixed up, bbq soy curls, Boursin dairy free chez; yesterday rice bowl with @morningstarfarms nuggets . Two good ways to use up leftover baked veggies. First a baked potato and (air fried) chick pea salad. Dressing is vegan natural yoghurt, Dijon mustard and cumin. Potato hash or home fries is so easy to make and really satisfying. 😍 I usually just cook it with whatever potatoes and peppers I have on hand along with a lot of seasonings. I love them topped with cheese, sour cream, definitely some type of spice and salsa is really good too. 🌱 Here’s my recipe: 🌺2 pounds potatoes, cubed 🌺1 cup of water 🌺1 tablespoon of each neutral oil & butter 🌺1 bell pepper, chopped 🌺1 small onion, chopped 🌺1 teaspoon garlic powder 🌺1 teaspoon onion powder 🌺1 teaspoon garlic powder 🌺1 teaspoon paprika 🌺Salt & pepper to taste Optional toppings: 🌺Parsley 🌺Chives 🌺Cheese 🌺Sour cream 🌺Tomatoes 🌺Jalapenos 🌺Salsa Clean and cube the potatoes, peel if you like. Throw into a hot saute pan with a cup of water. Cover the pan and allow to cook on medium for about 10 minutes or until the potatoes are fork tender. Once the potatoes are cooked, pour out any remaining water. Add the oil and butter to the pan along with the chopped onions and peppers. Cook over medium heat with potatoes until the onions begin to soften. Add all of the seasonings. Continue to cook over medium heat until the potatoes brown. Today, am making a dish from Northern Vietnam, bánh cuốn (steamed rolls)😆but using rice papers as my hack; ninja's way🤣Well, it turns out to be so good tho I hv no patience at all in rolling those sticky wet rice papers one by one. Tried to double the papers and had used some oil to smoothen all the surfaces but still the rolls are far from perfect bcos they were glued to each other and torn up apart when separated😮‍💨Been spending more than an hour for this video and pictures. So much so, wasn't good enough to make these bcos the first attempt mostly resulted in failure but at the very end, it was still worth the try😂🤣NO! An absolute FEAST cooked by some talented friends: Vegan Philly Cheesesteaks accompanied by a Caesar salad with tofu ‘chicken’ and crispy chickpeas. All washed down with a couple bottles of vino 🍷 The cheesesteaks were a combination of sliced tofu, mushrooms, onions and green peppers, all fried up and caramelised in delicious umami seasonings and stuffed into a fat ciabatta with melted vegan cheese. Messy, rich and juicy, a solid 10/10. I meal prep, but not like most everyone else. I actually could never stand eating the same thing day after day after day. 🌱 What works for me is prepping ingredients, not meals. Creamy Miso Broccoli Soup with Spicy Chickpeas recipe Dr. Ayesha Sherzai @thebraindocs This is an easy to make, delicious soup. Posted March 28, 2024 by @thebraindocs this video has a list of ingredients only. See pictures for the list. I did my best to follow along with the video and jot down the directions. Of course, I did not follow exactly, as I don’t use oil. *I soaked 1/2 cup of cashews in boiling water for 5 minutes and set aside. *In a big soup pot, I sautéed 1/2 a diced yellow onion in some no-sodium veggie broth, then added 5 cloves pressed garlic and 1/4 tsp turmeric. I added a combination of chopped broccoli and Romesco (green) cauliflower, 4 generous cups, plus a diced carrot. After this cooked for a few minutes, I added the 5 cups of veggie broth, 2 T miso (less than recipe), 3 T nutritional yeast (more than recipe), 1 T low sodium tamari, 2 T lemon juice, 1/2 T date syrup, fresh ground pepper. I rinsed and drained a can of cannellini beans. I put half of the beans in the soup. The other half I put in my food processor with the soaked and drained cashews and a few spoonfuls of the vegie broth. I blended this until smooth, then added it to the soup. For the chickpea topping, I started with a can of rinsed and drained chickpeas, 1 T sesame seeds, 1/2 cup chopped broccoli plus a bit of diced bell pepper. I added 1 T gochujang (less than recipe), 1T sesame seeds (less than recipe) 2T low sodium tamari, 1 T date syrup and 3 T hempseed (to replace the breadcrumbs). I tossed everything in a skillet with a splash of water to prevent sticking. It took about 5 minutes to cook and sizzle. I got 8 1/2 cups of soup and about 2 cups of topper. This soup is lovely and rich. The topping adds a nice kick. I was worried 3 T of miso would be too strong, so I only added 2 T today. But I will try it with all 3 T next time (and I will try red miso). It gave the soup depth.

Butter chik’n with peas served with basmati rice. 😍 This was so creamy and had the aromatic flavors of garam masala, turmeric and cumin. Although it wasn’t spicy, it did have a mild heat while also being a bit sweet. (The chik’n was made with @butlersoycurls ) I feel like I could eat it every single day. But then again, how else would I eat all the other amazing vegan foods that I love? 😂❤️ And if you’ve never made it before, it contains less seasonings than many other types of curry. Easy, 10 Minute Spinach Pasta Recipe Ami-James Deane @broccoli_mum I love a dish that comes together quickly, and this was perfect for a busy night. Ami did not specify amounts for all the ingredients, so I guessed at some quantities. Original recipe in pictures.l, or see her post from April 1. 1 bag of spinach (mine was 5 oz) 1 block of firm tofu (mine was 16 oz) Juice of a lemon (I used 2 T) 1 tsp garlic salt (I used garlic powder) 1/3 cup nutritional yeast (I used 6 T) 1/4 cup plant milk (I used soy) Favorite pasta (I used 10 oz red lentil, and could have used 13 oz) I put the spinach I boiling water for 1 minute, then added it to the food processor with everything else (except the pasta 😁). I blended until I had a lovely green sauce. I transferred the sauce to a large glass bowl, and microwaved it for 2 1-minute intervals, stirring in between to warm the sauce. I cooked the pasta, drained it, put it back in the cooking pot and stirred in the sauce. Done. I served this dish topped with almond “parm”, plus fresh veggies on the side. My husband put diced tomato and hot sauce on his. I thought this tasted nice. My husband did not like the texture of the tofu sauce. So I am eating the leftovers. I got 7 cups of food. Next time, I would try silken tofu and cashews or substitute white beans. I’ve always thought of celery root as a miscellaneous soup ingredient, something my nonna would throw into clear broths to play a supporting role to bones and bits of meat, then remove if it ended up on one of us kids’ plates on account of it presumably not tasting like much. To be quite honest, my relationship with celery proper is not very strong either so when we started getting lots of celery root in our CSA at @ridgewoodfarmshare I was mildly perplexed. But the beauty of eating seasonally, and eating vegan, is that what look like constraints actually often expand your cooking parameters space, so I went a little rogue here and made a remoulade style salad from the celery root, heavy on lemon, parsley, green olives, capers, mustard and olive oil. Double Chocolate Banana Bread recipe @broccoli_mum I saw Ami make this the other day and I just had to try it. See recipe in pictures or her post April 18 @broccoli_mum. I basically followed the recipe. I did add 6 Tablespoons of cocoa powder instead of 1/3 cup. I started with 3 bananas, but needed to add one more because the batter was too dry. I added 1 Tablespoon of date syrup and 2 T monkfruit sweetener instead of maple syrup. And I put 1/4 cup Lily’s sugar-free chocolate chips into the batter instead of sprinkling chips on top. I cooked this in a glass loaf pan lined with parchment paper at 350F for 50 minutes, then left it in the oven for another 5 minutes with the heat turned off. This bread is very tasty, but a bit dry. Maybe I over cooked it? When I make this again, I am going to add 5-6 soaked and blended dates, keep the banana number at 4, and reduce the cooking temperature to 325F. Since I lined my glass loaf pan with parchment, I did not adjust the heat down for the first bake. White chocolate & lemon cheesecake with a biscoff base, topped with homemade lemon curd. For the gf’s birthday 🎂 This was a solid 10/10. The base: -Biscoff biscuits (whole pack bar 3, saved for decoration) -60g vegan butter The cheesecake: -200g cashews (soaked in hot water for a few hours to soften) -Pack and a half of vegan cream cheese, around 300g -Third of a tub of plain soya yoghurt -50ml maple syrup -1 tsp vanilla extract -30g coconut oil -Melted white chocolate -Lemon zest and juice to taste The lemon curd: Eyeballed this so don’t have the quantities unfortunately but are recipes online. I used: -Lemon zest and juice -Cornstarch -Granulated sugar -Vegan milk & butter -Pinch of turmeric for colour Brought everything to the boil in a pan, whisked until it thickened. Allowed to cool a bit before topping the cheesecake with it. I used a modified version of @addictedtodates recipe- made two of her cheesecakes now and as someone who is more of a cook than a baker they are easy to follow. Definitely recommend her website, both cheesecakes I’ve made so far have turned out so so good, and Elle and I absolutely devoured this over the course of her birthday week. The simplest meals are often the best. 😍 This was hearty, filling and very flavorful. A rice medley of short-grained brown rice, red rice, and wild rice with piopinno mushrooms, barberries, cilantro, and scallions. Topped with lemon/tahini dressing. Plated with steamed baby bok choy. If unfamiliar with piopinno mushrooms, they have a firm texture and have a mildly nutty flavor. Words cannot describe how incredible these Black Bean Tacos were. 😍Crunchy with a creamy and cheesy black bean filling. Served with guacamole and salsa that my partner made. So good! 🌱 How I made this: I sauteed onions and garlic and then added cooked black beans. Added a bunch of seasonings and then smashed the black beans. Separately, I lightly browned one side of a corn tortilla, then flipped it and filled the top portion with black beans and cheese. I closed the taco and fried it lightly in neutral oil until the outside was crispy and then flipped and crisped up the other side. 🌮 The tacos were served with shredded lettuce, guacamole and roasted salsa. Quinoa Peanut Crunch Salad with edamame Recipe Emily @plantbasedspoonie posted April 11, 2024 Emily posted this recipe, and it sounded amazing. I changed a few things. She shaved her veggies, which look lovely and elegant. I just chopped mine for a more “rustic” feel, and swapped kale for the broccoli. I added edamame. I used some real peanut butter, and fresh garlic and ginger in my dressing, and skipped the curry powder. See her original recipe as two screen shots in pictures, or see her post from April 11. Crunch salad 1/4 red cabbage, chopped 1 bunch lacinato kale, chopped 1 large orange carrot and 2 small purple carrots, julienned 1 red bell pepper, diced 1 1/3 cups shelled edamame, thawed 4 green onions sliced 1/2 cup dry quinoa, cooked (makes 1 1/2 cups cooked) Peanuts to garnish Dressing 4 TBL tamari (up from 3) 2 TBL Peanut powder (down from 3) 2 TBL No salt peanut butter (my add) 1 clove garlic, grated (instead of powder) 1” fresh ginger, grated (instead of powder) 1 TBL date syrup (instead of maple) 1 1/2 TBL rice wine vinegar 2 tsp chili garlic sauce (instead of Sriracha) 3 TBL Green tea (instead of water) Make quinoa. Thaw edamame. Chop veggies. Whisk sauce ingredients. Mix salad together. I got 12 cups of salad, and for me, 3-4 cups is one serving. Keeps for a few days in the fridge. This Pesto Linguine is pure indulgence, and completely vegan and dairy-free. My family is always so happy when I make anything with pesto. It’s rich, vibrant and good on pasta, potatoes, bread - and probably a bunch of other things. Here's how I made it: 🌱12 ounces linguine 🌱1 tbsp salt Pesto 🌱.5 cup walnuts, chopped, toasted 🌱.5 cup olive oil 🌱.25 cup nutritional yeast 🌱.25 cup shredded vegan parmigiano (I love @violife_foods parm. It is literally hands down the best vegan parm out there) 🌱2 garlic cloves 🌱Salt to taste 🌱1 teaspoon lemon juice (optional) 🌱2+ tablespoons water (as needed) 🌱1 cup fresh basil Toppings: 🌱Vegan parmigiano 🌱Basil 🌱Nutritional yeast Heat a large pot of water to boiling with a tablespoon of salt. The pasta will absolutely not soak up all of the salt. Cook linguine according to directions on the box. (Note: if you are using a gluten-free pasta, I seriously recommend @barilla gluten-free pasta. This pasta stays together better than all the others. Also, if you are using a gluten-free pasta, be sure to undercook it for about 2 minutes and then drain. Because we are reheating the pasta, the gluten-free pasta will 100% fall apart if it is completely cooked before reheating.) For the pesto, add all of the ingredients into a blender except for the basil. Blend until it is creamy. Add the basil and blend lightly, until the basil is incorporated. When the pasta has finished cooking, drain well and add back to the pot. Add the pesto and cook through on medium heat for just a minute.
