There are many misconceptions about what it takes to actually conquer candida related symptoms. This highlights the gap that exists right now in the health and wellness world. The standard dietary advice for candida is not meant for vegetarian, vegan or plant-based women. Warning...Rant Ahead... I am soooo over people saying you need to restrict more food if you want to try a vegan candida diet. I am so tired of people treating a vegetarian, vegan or plant-based diet like we have special dietary needs. It's a lifestyle, not a diet, and clearly people who do not understand plant-based nutrition will continue to offer you alternatives for animal protein, spreading fear about the carbohydrates in a plant-based diet. The truth is not all sugar is the same, not all carbs are the same not all proteins are the same. Plant-based foods have so much more to offer us than just carbs, and a plant-based approach is a food first approach. We are conditioned to believe we need to do detoxes, and rely on antifugal after antifungal, that the sugar in a date is the same as table sugar, and it's this mindset that keeps us stuck. You can do it on a plant-based diet because it’s about fixing your digestion and nourishing your gut. In fact to do this, you can and quite frankly need to be on a whole food plant based diet. Breaky anyone? Veggie stackers, let’s go ✨🌱 This is by far one of my favourite recipes to date. It’s super yummy and keeps me full for hours. Oh, and did I mention it’s super healthy too? Recipe below: You will need: 🌱 225g of firm tofu. I used the @macro_wholefoods brand (use half and keep half for another time) 🌱 1 x ripe avocado 🌱 1 x lemon 🌱 Cracked Pepper and sea salt 🌱 1 x tomato - dice half, and keep 4 thin slices for your stacker 🌱 1 x red capsicum - dice half for your guacamole and leave to horizontal slices for your stacker 🌱 1 x zucchini - made into 4 horizontally cut slices 🌱 2 x slices of butternut pumpkin 🌱 1 extra large mushroom (I used Portobello) -sliced in halve horizontally 🌱 2 x small mushrooms - keep whole 🌱 Choice of salad Okay let’s start. I lay my tofu down flat on the chopping board and cut across and through it horizontally rather than down and vertical. This will make thin, beautiful slices for your stacker. Have this ready on a piece of foil to stick in the air fryer on 200degrees Celsius for around 5-10 minutes depending on how crispy you would like it. If you don’t have an air fryer, you can pan fry in water. Guacamole- made with one ripe, mashed avocado, half a lemon squeezed through the mash, half a diced tomato, half a diced red capsicum, sea salt, cracked pepper and chilli flakes (optional) - this will be used to spread evenly on your tofu slices once they are cooked. Whilst your tofu is cooking, you can either throw your veggie slices in the air fryer at the same time, OR depending on the size of the air fryer and if it fits or not, you can put your veggies into a flat pan with a few tablespoons of spoons of water (or oil.. I don’t use oil in my cooking but the option is there) and cook until they are charred. It usually takes around 10 minutes regardless of what cooking method you use. Once everything is cooked to your liking, start layering. I layered everything like so: tofu, guacamole, fresh tomato slices, pumpkin, capsicum, zucchini, mushroom slices, lemon slices (for decoration), whole small mushrooms. Add your favourite salads, squeeze with extra lemon, salt and pepper to serve ✨

My journey with eczema lasted over two decades. Back then I had no idea of the long road that was out in front of me. It had gotten so bad that I had rubbed off my eyebrows due to the chronic itching. I worked in the beauty industry, as a hairstylist and constantly had to answer questions regarding my skin. I had to field questions about my skin all day. People wanted to know what happened, have I seen a doctor, what am I eating, what creams am I using. It became a roller coaster as it disappeared while I was pregnant with my first baby, but then began to flare up on and off for years until it became chronic. I had not made the connection to my gut or candida, this held me back as I was looking for a quick fix. I was able to reverse this issue with a whole food plant-based lifestyle. That's it, just diet and lifestyle. This is not a quick fix, I had years of inflammation to contend with. It took me almost three years to reverse it completely, but when I looked in the mirror and realized that was me looking back, I was nothing short of amazed. I spent years trying to imagine what my skin would look like under all that inflammation and here it was. Clear skin really does come from within, and it all starts with the gut. Once I got out if the quick fix headspace, this is when I started to see real results. This is something I continue to struggle with from time to time, but I think that being aware of the differences is the first step. We live in an age when we have a constant stream of information coming at us. Having a mind that is full can lead to overwhelm and anxiety. This is when even the little things will feel like too much, and this seeps into our diets as it contributes to mindlessly eating. Mindless eating can be reaching for food or snacks without thinking at all about what you are doing. It can feel like sitting down to eat a meal, and noticing your plate is all of a sudden empty. It can be not looking for the food at all but looking for the emotion that is attached to the food, without making the connection. It can be finishing food without ever really tasting the food. On the other hand when you become more mindful about what and how you eat, you feel present and enjoy your food. You think about where your food came from, the people who grew your food, or how it was prepared. You choose food based on what you need, and what nutritional value your food can offer you. You acknowledge any emotions that surround certain foods. Nutrition goes deeper than just the nutrients we consume. I have created a plant based approach to candida, to help fill the gap. You need to look at the whole picture and that includes your relationship with food. Your mindset and perception have a lot to do your road to success. My struggles with candida related symptoms kept me stuck. I was stuck in a mindset that did not let me listen to what my own body was trying to tell me. I became plant-based while I was struggling with symptoms, but becoming plant-Based wasn't enough in it's own for success. 👉I had to be willing to learn an entirely new way of eating and looking at my food. 👉I had to search out help, when I got stuck. 👉I had to stay focused on the solution, not my symptoms. 👉I had to step out of my comfort zone and try new things. (I still do this, I just learned how to make my own dairy free cheese from whole food ingredients.) 👉And most importantly I had to see it through, with commitment. This means that when after 3 months of being plant-based I still had signs of eczema on my eyes, I did not give up. I did not stop the process. I did not go back to my old habits, and quite frankly I didn't want to. It too about three years for over two decades of chronic eczema to go away, and 5 years now with no signs of it returning.
