Oreo Cookie Sandwiches 🍪🍫🥛 Credits @_sweetmonkey_ Full recipe below. Cookie: * 16 tbsp unsalted butter, melted * 1 cup brown sugar * 1/2 cup granulated sugar * 2 large eggs, room temp * 1 1/2 tsp vanilla extract * 1 tsp baking soda * 1 tsp salt * 2 3/4 cup flour * 1 cup white chocolate chips * 1/2 cup crushed Oreos Frosting: * 16 tbsp unsalted butter, softened * 3 1/2 cups powder sugar * 1/2 cup crushed Oreos * 1 tsp vanilla extract * 2-3 tbsp heavy cream Instructions: 1. Preheat oven to 350° F and line 2 large cookie sheets. 2. In a stand-in mixing bowl or medium mixing bowl combine sugars and melted butter. Add in eggs and vanilla extract and whisk together. 3. Add in flour slowly till fully incorporated. 4. Fold in white chocolate chips and crushed Oreos. 5. Using a medium cookie scoop, scoop 9 large balls onto each cookie sheet. Bake for 12-15 minutes. I flatten the cookie slightly with a back of measuring cup about half way thru baking. Remove and using a round cookie cutter, in a circular motion make cookies perfectly round. This is optional. 6. Let cookies cool on a cooling rack and make frosting. 7. Make frosting by beating together softened butter, powder sugar, and vanilla extract. Add in heavy cream. Today I didn’t just make a salad, I made a SALAD 🙌🏽 🖤poach 2 chicken breasts in water, soy sauce, star anise, garlic, ginger and coriander. Happiness in a bowl! After a busy morning prepping the backyard for planting, we needed a refreshing pick-me-up to fuel our afternoon. Enter this stunning chia seeds pudding, made with a creamy blend of almond milk and coconut milk, sweetened with a drizzle of maple syrup. Topped with a colorful medley of dragon fruit, kiwi fruit, and blackberries, this healthy treat was the perfect companion for our late lunch of barbecued veggies. The combination of textures and flavors was absolute bliss - the crunch of the fruit, the creaminess of the pudding, and the subtle sweetness of the maple syrup. I prepared this pudding in the morning, knowing we would need a nourishing boost to get us through a day of digging, planting, and soaking up the sun. And boy, did it deliver! 🎵 it’s not a soup, not yet a steeewwwww 🎵 but somewhere in between lies the magic in this brothy beany bowl of goodness. Added twist KIMCHI bc kimchi goes with everything. Risotto carbonara with eggplant🤌. Recipe below: 200gr arborio rice Vegetable stock as much as it takes 40 gr guanciale 2 egg yolk 100 gr parmiggiano 1 small onion chopped Render the guanciale out and remove it from the pan. Sweat the onions and then add the rice and toast it a bit. Then add a laddle or two of stock at a time and cook the rice for 18 minutes. Meanwhile mix the egg yolks with the parmiggiano and a lot of black pepper and temper it with a bit of stock. When the risotto is ready and just a bit cooled down, add the egg mixture and mix well. For the eggplant, bake the eggplant in the oven until cooked. Peel it and cut in in half length wise. Then use a fork to fan it out and bread it, then fry it. Made a Filipino 🇵🇭 dish Kare Kare with the help of Mama Sita @mamasitasrecipes seasoning packet of course!🤭 It’s a peanut butter stew dish and traditionally with ox tails and mix vegetables. I made it with eggplants, string beans with a tablespoon of skippy peanut butter and not traditional but I had brussel sprouts and mushrooms too and added those 🍄🟫 For protein it was served with some crispy pork belly on the side I picked up from a Chinatown roast meats shop. What brought the dish together was the shrimp paste, Bagoong and gave the dish a slight saltiness and umami. •Asian Fusion Burrito• ::INGREDIENTS:: {for the meat} 1 lbs ish ground pork 1 tbs Hoisen sauce (can live without but I like it) 1 ish tbs fish sauce 1/4 cup brown sugar 1/2 ish tsp garlic powder, just a few shakes if you’re a non measurer 1/2 cup low sodium soy sauce 1 tsp corn starch {for the sauce} 1/2 cup Mayo 1-2 Tbs sriracha 1 Tbs low sodium soy sauce {for the Fixins) Thin sliced purple cabbage Cilantro Sliced cucumber Matchstick carrots Thin sliced fresh jalapeño Sliced green onion *also did some thin sliced radish and baby bell peppers this round Avocado Lime wedges Pickled red onions (recipe pinned on my profile and I only made mine a couple hours before and they were perfect Cooked jasmine rice Tortillas (optional) ::METHOD:: Brown pork on stove top. Combine 1/2 cup soy sauce, brown sugar, hoisen, garlic powder, and corn starch. Pour over cooked meat and let cook down until thickened and sticky. Can either throw these together as wraps or bowls. Not Just Another Chicken Caesar by Ali Slagle from I Dream of Dinner. When I got my assignment for the Food52 Tournament of Salads, this was accidentally given to me. We straightened it out (the Big Fat Halloumi Salad was wonderful, see earlier post) but I figured that since I happened to have all the ingredients, I’d do this for supper. Good choice. I always have chicken thighs in the freezer (my son’s signature dish of Butter Chicken calls for them) and the Costco package runs about 2 pounds for each of the 6 packets in which they are sold, a bit more chicken than called for was not a problem. I used two heads of romaine and what radicchio was left over from the two previous salads. The finished dish simply disappeared. My sister and my son both loved it. So did I. I’d give it a 9/10, only because it doesn’t have the surprising combination of the halloumi salad, but I would certainly make it again. Since I doubled the dressing/marinade, I am more than half-way there. Unlike some reviewers, I am not bothered by starting with mayonnaise, since traditional caesar uses egg and oil for a base emulsion. Marinating the chicken in this pungent mayo-garlic-anchovy-parm-lemon zest bath was easy and the result fantastic. I will give it a try on the grill next time. The croutons were so easy, I don’t know why I don’t make them more often. Chickpea Korma Full disclosure, I used a premade blend of organic garam masala, but, nonetheless, this turned into an incredibly satisfying meal with brown rice for my weekday lunches. This was a great way to incorporate some meat-free meals into my week. Not only did I use an entire 5 oz box of baby spinach, but I also steamed some broccoli stems to eat along side of this tasty dish. With inflation being so high right now, we could all use some canned bean meals; am I right? Beautiful as a meal prep or a dinner party with some homemade naan, this could serve as a beautiful, rich dinner that’s gluten free and completely vegan. Roasted Peanut Kale Crunch Salad These types of salads are great for meal prep since they last dressed for days!! 🥰🥰 High in fiber and totally vegan, it’s a great way to get in several servings of veggies in a day! I followed the recipe exactly, but left out the peppers (I didn’t have any on hand), hand chopped the greens and halved the dressing. Jambalaya!! This dish starts with browning the sliced andouille sausage, removing them from the pan and then adding in the “holy trinity” of diced celery, onion and green bell pepper. Once translucent, add in the Creole seasoning. I decided to forego the chicken in lieu of shrimp, so I skipped the chicken step and added in the dry rice to toast. Then I added in the chicken broth and returned the sausage to the pot and covered on low heat for 20 minutes before adding in the shrimp for the last 5. It was heaven!! This type of jambalaya is the Cajun style type—with no tomatoes—and will be making on repeat. Some jambalayas with shrimp have you use shrimp stock instead of broth, but for time’s sake I used what I had. Large shrimp wasn’t essential here (I used 31-36 size), and they turned out the same diameter as the sausage medallions which was aesthetically pleasing. This recipe was my riff on @thekitchn recipe available online. Noodles, anyone? Haha. What’s not to love? I paired these noodles with super firm tofu that I’d frozen and thawed. I think this makes it a LOT easier to squeeze all the water out and crisp up in the pan. PLUS, it soaks up a lot more flavor, too!! This was my riff on @pinchofyum Saucy Gochujang Noodles with Chicken—subbing the chicken with tofu, of course. The sauce is incredible! Top yours with chopped peanuts or spicy chili oil, but mine here is with coriander 🙌🏼🙌🏼.
