KHINKALI 🥟 I don't know what it is about Georgian food, but it's absolutely the best, who's with me? 🙋🏻♀️ So here's khinkali again, only this time I didn't listen to the recipe and made it with Italian pasta dough. Would probably recommend against it as it was too delicate for these heavy boys Pasta (makes about 20 dumplings) ▫️250g flour + some more for dusting ▫️1 egg ▫️225ml water 🔹Keep the surface dusted with flour at all times 🔹Knead until very firm, then roll out to about 0.5cm thick 🔹Use a glass or cookie cutter to cut out circles 🔹Roll out each circle again, but don't make it too thin Filling ▫️350g minced beef (or 50:50 with pork) ▫️250ml water ▫️salt, pepper ▫️optional - fresh coriander, 1 onion 🔹Mix everything together, adding the water bit by bit. You want all the water you've added to be absorbed before you add more. 🔹Place one tbsp of filling in the middle of each circle of pasta dough 🔹Fold the edges like an accordion, trying to get to 19 folds - how many did you get? Some success and a lot of learning on Scallops. Wanted to try something all new to me. Definitely tasted good, but know how to make it better for next time. This week I was challenged to seafood, egg, and garlic. I first went to something breakfast related, but thought let's go different. All tasted great with room to improve. Pan seared wild-caught sockeye salmon topped with an over easy egg from @frankiesfreerangemeat no corn/no soy fed pasture-raised chickens, "stir fry" veggies & arugula sauteed in grass-fed cow butter, topped with a sprinkle of raw milk Roquefort cheese, and a serving of my Dad's homemade kraut.
