Turning back towards the cottages bordering the old village green, I can smell scents more earthy and tangible than those faint echoes on the breeze. The warmth of the day has awakened the ROSE GERANIUM aromas and set them adrift on the evening air and the first of the garden roses have unfurled their buds, releasing a heady blend of MYRRH and NUTMEG. I hug myself gleefully, remembering that the pale-petalled dog roses will soon be showering wild confetti over all who seek their magic. In almost every garden, the last of the light is reflected in glossy BAY LAUREL leaves, their excellence in the kitchen giving them a prized position by the door. But now I need to head away from the haunt of humans and seek the sound of fiddles. Leaving the new-cut swathe of green my eyes follow the winding path up the hill before me, silvery and enticing under the now-rising moon. Over to the left stands a dark patch of woodland, and from that deep realm I sense a wild and untamed presence betrayed by musky VETIVER and sharp PINE NEEDLE. It’s the serpentine path up the mound, though, that my feet are bound to follow. At the very top dances the silhouette of a lone Rowan, all long limbs and feathery leaves, blossom-crowned. These are the scents of ROWAN DANCE, the story-candle from The Old Shop that I made to mark the May. Tonight’s dinner: I made some yogurt flatbread using just a few ingredients and then topped it with yogurt, tomatoes (definitely will be better once they’re in season), a chimichurri-esque sauce, + poached eggs. For the yogurt flatbread: 1 cup oat flour 1/2 cup Greek yogurt 1/2 tsp salt 1/2 tsp baking powder Combine ingredients in a small bowl. Stir until everything comes together and forms a ball of dough. Divide the dough into two portions. Roll out the dough using a rolling pin (sprinkle a little extra oat flour if you need to prevent it from sticking). Heat a medium skillet with olive oil. Once the oil is heated then place the dough in the pan and allow it to cook for about 3 minutes on one side and then flip it over. After it has finished cooking in the second side remove it from the pan and top it with all the goodies.
