Ridiculously Easy Oreo Pie Ingredients: 24 Oreo cookies 1/4 cup unsalted butter, melted 1 (8 oz) package cream cheese, softened 1/2 cup powdered sugar 1 teaspoon vanilla extract 1 (8 oz) tub whipped topping, thawed 10 Oreo cookies, coarsely chopped (for topping) Directions: Place 24 Oreo cookies in a food processor and pulse until finely crushed. Transfer the crushed cookies to a mixing bowl and stir in melted butter until well combined. Press the Oreo mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust. Chill in the refrigerator while preparing the filling. In another mixing bowl, beat cream cheese with an electric mixer until smooth. Lasagna Roll Ups, A Delicious Twist on Classic Lasagna Perfect for Weeknight Dinners or Special Occasions Ingredients: 8 lasagna noodles 1 pound ground beef 1 small onion, finely chopped 2 cloves garlic, minced 1 can (14.5 ounces) diced tomatoes, drained 1 can (8 ounces) tomato sauce 1 teaspoon dried basil 1 teaspoon dried oregano Salt and pepper to taste 2 cups ricotta cheese 1 cup shredded mozzarella cheese 1/2 cup grated Parmesan cheese Chopped fresh parsley for garnish (optional) Directions: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside. Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside. In a large skillet, cook the ground beef over medium heat until browned and no longer pink. Drain any excess fat. Add the chopped onion and minced garlic to the skillet with the cooked ground beef. Blackened Shrimp Pasta Ingredients: 8 oz linguine pasta 1 lb large shrimp, peeled and deveined 2 tablespoons Cajun seasoning 2 tablespoons olive oil 4 cloves garlic, minced 1 cup cherry tomatoes, halved 1/2 cup heavy cream 1/4 cup grated Parmesan cheese Salt and pepper, to taste Fresh parsley, chopped, for garnish Lemon wedges, for serving Directions: Cook linguine pasta according to package instructions until al dente. Drain and set aside. In a medium bowl, toss the shrimp with Cajun seasoning until evenly coated. Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until pink and blackened. Remove shrimp from skillet and set aside. In the same skillet, add minced garlic and cook for 1 minute, until fragrant. Add cherry tomatoes to the skillet and cook for 2-3 minutes, until slightly softened. Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes, until slightly thickened. Return cooked shrimp to the skillet and toss to coat in the creamy sauce. Family’s Thai Cuisine in Silverdale, Washington. Sister asked if I always had to take a weird selfie. I told her I’m weird so yeah. My sister had to take me to one of her favorite places. The cook and waiters were hilarious. Telling me I have to move to Washington so I can enjoy their food. 2 + 2 equals pad see ew, good food for you (one of many jokes during dinner). Last night was family dinner night at @craftbysmokeandfire in Anaheim. Since there was 7 of us, we decided to order the All Smoke platter that had brisket, ribs, lamb, chicken, sausage, pastrami and we ordered for the sides street corn, waffle fries, mac and cheese and fried brussel sprouts. We also ordered a couple of their burgers to try (not pictured). Everything was tasty and service was great! We sat outside since it was a beautiful evening. Then we stopped a few stores down to have dessert at @houseofchimneycakes. If you have never been, the cone is made of a pastry dough and covered in sugars or other cookie crumbs and then filled with soft serve and fun toppings. My stepdaughter got the strawberry cheesecake and my daughter got the Mouse. Funeral Potatoes, A Comforting Casserole Dish Perfect for Potlucks and Gatherings Ingredients: 1 package (32 ounces) frozen shredded hash brown potatoes, thawed 1 can (10.5 ounces) condensed cream of chicken soup 1 cup sour cream 1/2 cup unsalted butter, melted 1 small onion, finely chopped 2 cups shredded cheddar cheese, divided 2 cups cornflakes cereal, crushed Salt and pepper to taste Chopped fresh parsley for garnish (optional) Directions: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside. In a large mixing bowl, combine the thawed shredded hash brown potatoes, condensed cream of chicken soup, sour cream, melted butter, finely chopped onion, and 1 cup of shredded cheddar cheese. Coconut Cream Pie Ingredients: 1 pre-baked pie crust 1/2 cup granulated sugar 1/4 cup cornstarch 1/4 teaspoon salt 2 cups coconut milk 1 cup whole milk 4 large egg yolks 2 tablespoons unsalted butter 1 teaspoon vanilla extract 1 cup sweetened shredded coconut Whipped cream, for topping Toasted coconut flakes, for garnish Directions: In a medium saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in coconut milk and whole milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 1 minute, then remove from heat. In a separate bowl, lightly beat the egg yolks. Gradually whisk in about 1 cup of the hot milk mixture. Return the egg mixture to the saucepan and cook over medium heat, stirring constantly, for 2 minutes. Remove from heat and stir in butter, vanilla extract, and shredded coconut until well combined. Pour the filling into the pre-baked pie crust and smooth the top with a spatula. Cover with plastic wrap, pressing it directly onto the surface of the filling to prevent a skin from forming. My first attempt at Sesame Tofu! I love Deep Fried Tofu especially with a crispy light skin and nice soft center! This one is Extra Firm Tofu that is cubed then dredged in Brown Rice Flour! I didn't have Cornstarch, so I used Brown Rice Flour. Not great because it was slightly grainy but did the job. Then deep fried in Sunflower Oil. Then tossed in Soy Sauce, Dark Soy Sauce, Oyster Sauce, Fish Sauce, Sesame Oil, and Sugar. I added some Sweet Chili Sauce (the kind you dip Lumpias in). But a dash of Sambal would be good in it. Topped with Scallion. It was meh. But did the trick. And 10x better the next day after the sauce had time to sink into the tofu! But a nice snack or wonderful on a bed of Bok Choy and served with White Rice! Usually Fried Crispy Tofu is dredged in Cornstarch then deep fried. Then tossed in whatever sauce you'd like or just dipped in a Soy Sauce, Scallion, Garlic, Chili Sauce Mix. I especially love "Stinky Tofu" a famous Taiwanese dish made of fermented tofu that is deep fried and served with kimchi! This dish is neither but it is what I came up with in a food desert of Asian markets! The chimney cone itself tasted a bit stale, which was understandable because it would be very difficult to assemble with a fresh one. There’s hazelnut soft-serve on the top, a thick layer of chocolate acting as a “cover” for the chimney cone and vanilla ice cream on the inside of the cake itself🌰🍦. It was a bit too sweet for me, but was a very fun experience nonetheless. Jiffy Cornbread Taco Bake, A Delicious and Easy Casserole Combining the Flavors of Tacos with the Comfort of Cornbread Ingredients: 1 pound ground beef 1 packet taco seasoning mix 1 can (14.5 ounces) diced tomatoes, drained 1 can (4 ounces) diced green chilies, drained 1 can (15 ounces) black beans, drained and rinsed 1 cup frozen corn kernels 1 box Jiffy corn muffin mix 1/3 cup milk 1 egg 1 cup shredded cheddar cheese Optional toppings: diced avocado, sour cream, chopped cilantro, sliced jalapenos Directions: Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish and set aside. In a large skillet, cook the ground beef over medium heat until browned and no longer pink. Drain any excess fat.
