So found sainsburys tomato red pepper and lentil with a slice of bfree bread and vegan spread cheese. ⭐Tea: my mam and step dad visited for tea so I didn't take any pictures, it was just so nice to have people round. I didn’t make them as I wasn’t keen on eating pita bread, but when speaking to my cousin last week she suggested I try + make a healthier version. Challenge accepted + completed 😊😊😊 these arayes were unbelievable. SO delicious, completely addictive + healthy too. Absolute win win 🤩 traditionally mince meat is used in arayes but I wanted to keep it leaner so I only used mince chicken but you can definitely use meat if you prefer. Trust me - make these for dinner this week. They are simply divine 😋😋😋 . . . Ingredients + Method: - Using a @kenwoodworld food processor, finely chop onions + parsley. - Add the chopped onion + parsley to the mince chicken. Mix well. - Season with garlic powder, salt, pepper + seven spices. Back to school. Such a mixed bag of emotions. Relief but also I know I’m going to really miss the boys (even though I’ve wanted ‘me time’ for the last 6 months!). I emailed the boys school a while back to ask about what’s happening with dietary requirements during Covid. Olly is starting school for the first time but thankfully jack being there for two years has paved the way. We have been asked to take in bread so that the cook can make sandwiches for them but otherwise they will cater for their allergens. This includes nuts dairy soya wheat egg beef coconut. When jack first went to school I met with the headteacher and the head cook and we went through a 3 week menu that they could rotate. They were so accommodating. I always have a chat with the teacher before term starts to explain it all and they have all had training on how to use as epi pen. There are posters of jack in every room of the school explaining his allergies and what to do if something happens. It helps that the other kids then know about it too but rather than being made the odd one out the kids are so good at protecting him. I know we are very lucky and the school isn’t too big which helps but communication is key!! Sending lots of hugs to all the allergy families right now. I know how daunting and overwhelming it can feel starting somewhere new but the more we all talk about it and put plans in place the safer our kids will be. I've been dreaming of this brunch! I had to wait until I had all the elements at the same time. Toast, grits, sausage, and eggs! A good ol' southern breakfast, but vegan all the way! Toast: Toasted BFree (@bfreefoods) gluten-free bread drizzled with coconut oil. Grits: regular ol' Quaker grits with EVOO. Sausage: Beyond Meat (@beyondmeat) hot vegan sausage. Eggs: VeganEgg scrambled with a little EVOO. (This is NOT a low-fat meal!) It's pretty damn amazing how much these "eggs" taste like what I remember eggs tasted like! And I just love the #BFreebread! Really different and good! (@WholeFoods, you're sleeping on this!) Of course I adore the Beyond Meat sausage! And grits . . . I couldn't give up butter until I discovered that grits taste great with EVOO instead. Then I was able to finally kick butter to the curb! (Even then, that was a long time ago.) I can't do this very often, but it was a nice brunch! Foods memories are so powerful! My omni days are long behind me, but it's fun to occasionally relive those days in a healthier way!
