My all time go to when I want to whip up something quick yet nutritious, serve as it with a slide of schezwan sauce or have along with some garlic fried rice. Ingredients: • 1 180g tin canned tuna drained and flaked. • 1 potato peeled, boiled, and mashed. - Optional • 1 small to medium-sized onion grated • 1 small piece ginger grated • ½ cup coriander chopped • 12 - 15 curry leaves finely chopped • ¼ tsp paprika • ¼ tsp tumeric powder • ¼ tsp salt • ½ tsp black pepper • Mustard seeds • Cold pressed Mustard Oil for frying. Method: • Bring a small saucepan of water to boil. Peel and roughly chop potato into large chunks. Add in boiling water for 20 mins. Drain. Mash in a medium-sized bowl. • Into the mashed potato, add drained tuna, grated onion and ginger, paprika, coriander, salt & pepper. If you have a green chilli, you may add that in- finely chopped. If not, omit. Mix well. • Take a small amount, form into an oval shape. Arrange on plate. • In a frypan, add some oil until it covers the base. Fry each cutlet till golden brown. Enjoy hot! Having Psoriasis & Adenomyosis, both conditions require a lifestyle of GF & DF. Gluten-free pasta holds a very special place in my heart because...well, maybe because some people wonder how will they ever not eat bread, cupcakes, pastries, etc. but for me, it's Pasta. Ingredients: • 1 cup Red Lentil GF Pasta • 4 pcs of Shitake Mushrooms - sliced • 4 pcs of chopped Garlic • 1 cup Coconut milk • ½ cup Parsley • 1 cup mixed veggies (I used peas, corn, string beans) • 1 Tabelspoon Paprika powder • 2 Tabelspoons Olive Oil • Lods of pepper, chilli flakes, and pink himalian salt for taste. Method : • Chop the Mushroom and Garlic • Boil water in a pot for the Pasta - add and cook for 10 - 12 mins • Add Olive Oil, garlic, and paprika to a gold pan and let it all heat up together for around 2 mins on low flame. • Once the oil is infused, add in the Mushrooms + Pepper + salt + chilli flakes and sautee for 3 - 5 mins • Add in the veggies & sautéed for 3 mins • Add the coconut milk. Let it simmer for 3 mins (add in a little pasta water if needed) • Add in the Pasta & parsley - take the pan of the heat and give all a good mix. I love Dosa's made from different grains & lentils. This is a very simple Split Orange/Masoor Daal dosa (no overnight soaking) served with my Dad's signature Potato veg. Ingredients: Dosa Batter • 1 cup split orange / masoor lentil • 1/2 teaspoon cumin seeds • 1 inch ginger • 1-2 green chillies to taste • 1/2 teaspoon salt or to taste • 1 Tabelspoon Rice Flour • water to blend, around 1/2 cup (4 oz) Method: • Rinse & soak masoor dal in around 3 to 4 cups of warm water 30 mins.. • Transfer the dal to a blender along with cumin seeds, ginger, green chillies, salt, and rice flour. Add water and blend to a smooth paste. • Transfer batter to a bowl. You can add some water here if you want to adjust the consistency. • Take a ladel of batter & spread it on the pan. • Drizzle oil all around the dosa and also a few drops in the centre. Cook for a few minutes until the bottom starts appearing golden brown. • Once the bottom starts appearing brown, scrape the sides using a spatula and release the dosa from the pan. • Flip, press & cook the other side also for a minute. Potato Bhaji • 2 large potatoes • 1 tbsp oil - I used a mix of cold pressed coconut & Mustard • 1/8 tsp asafetida hing • 1/2 tsp cumin seeds • 1/2 tsp mustard seeds • 1/2 tsp turmeric • 1 red chilli finely chopped • 1/2 tsp salt • 1 tsp lemon juice • 1 tbsp cilantro finely chopped hara dhania Method: • Boiled the potatoes until they are soft and let cool. • Peel and chop the potatoes in small pieces. • Heat the oil in a pot or pan on medium high. Test the heat by adding one cumin seed to the oil. If it cracks right away, the oil is ready. • Add the cumin seeds, mustard seeds, and asafetida. As the seeds crack, add turmeric, potatoes, green chilli, and salt. Stir-fry for a few minutes. • Add lemon juice and cilantro & serve. Perfect week meal anyone can simply make at home! Skip the takeaway and cook up a hearty meal right in your kitchen. The secret of a flavourful sauce is fresh herbs and vegetables. Use freshly grated ginger, garlic and finely chopped onions. Shallot/ onions are less in moisture and easy to melt in the curry sauce. Ingredients: • 1 Packet Meatless Mince • 1½ cup Guten Free Yellow Lentil Penne Pasta • 2 bunches Beetroot Leaves with stems • 1 Big Yellow / White Onion • 5 Cloves of Garlic (coz garlic, why not) • ½ Inch Ginger • 2 Thai Red Chillies • 1 Big Red Capsicum • 1 cup coriander • ½ cup Dill leaves • 1 Tabelspoon Roasted coconut oil • 1 Veg soup cube • 1 cup coconut milk • Vega Feta as desired. • Cumin + Fennel + Carawy seeds add as desired • Sprinkles of salt • Lots of pepper Method : • Add Roasted coconut oil + seeds • Add Mince + soup cube and cook for a good 7 - 8 minutes until Brown • Add Onion + Garlic + Ginger and cook for about 3 mins or until fragrant • Add Beetroot Leaves and stems - cook for about 1 min • Add Red Capsicum - cook for about 1 min • Add coconut milk - cook for about 2 - 3 mins on very low flame • Add in the Pasta + coriander + Dill- stir lightly • Remove from flame and add Vegan Feta. • Serve hot and enjoy. • If you are making this for a meal prep - portion in airtight containers and refrigerate for up to 5 days. "Healthy" fried black-eyed peas recipe makes for quick, but still comforting alternative to a traditional long-simmered pot of the soul-food version. These pan-fried peas are highly flavorful, with the smoky, complex flavour coming mostly from the paprika-infused cooking oil. Ingredients: • 1 can black-eyed peas • 2 Small Potatoes • 1 tablespoon coconut oil (I added ½ teaspoon olive oil) • 4 garlic cloves roughly chopped • 6 - 7 curry leaves thinly chopped • 2 teaspoon sweet smoked paprika • 1 small red onion diced • 1 medium red bell pepper diced • Salt to taste and loads of black pepper Method: • Drain and rinse black-eyed peas thoroughly • Heat skillet with oil on low heat. • Add garlic & curry leaves and saute 2-3 minutes. Add paprika and cook for another 1-2 minutes. • Increase heat to medium. • Add the potatoes & cook until just tender • Add red onions and red peppers and mix well. • Add black-eyed peas and fry for 5 minutes, stirring occasionally to make sure all individual peas are touched by the infused oil. • Season as needed with salt, pepper, and more paprika • Remove from heat and garnish with fresh basil or parsley. I would love to share my Ayurvedic cultural practice during food preparation and consumption. I’ve been doing this since I was a teenager. We should practice cooking our own food more often. An Angry cook who is filled with contempt will send out the negative energy into the food . Meditative conscious cooking is an Ayurvedic Practice for 1000s of Years in Vedic culture . food should always be offering to God and the Earth Mother Goddess ( she is a vegetarian). Food should always be offered to God first . then it naturally becomes blessed food or offering , In Sanskrit we call this “Prasadam” or Prasad , blessed food that will nourish your Soul and you will make Spirtual Advancements. People who are angry and negative , who hold too much anger , lust greed and Jelousy should never be a chef or cook. 🙈, and you should stay away from their food too. Always have pure clean thoughts for others before preparing..This is known as Joyful Conscious cooking. WE ask God to take out all the negativity in this food. Esp when this meat came from a living being , whatever the animal was. Whatever fear , anxiety , pain and suffering that is in this Meat God will remove it so you will not consume it into your being. So this is why we cannot cook with the false ego in the mode of ignorance , passion and goodness In conclusion, I would say it’s so vital to Cook with mindfulness and positive intentions . It can indeed enhance the overall experience and nourishment of your food. Offering food as a sacred practice, as in the Ayurvedic tradition, emphasizes the spiritual connection to what we eat. Quite an architectural shot here from the one and only @davidcharbit of some of the biodynamic leeks from @tablehurst.farm farm back in the autumn. (Currently leeks from @secrettsmilford) As the British brown and red onion season shuts down for the season due to depleted stocks, the conscious cook will be relying heavily on the trusty and reliable leek to see their allium needs through the rest of winter and spring. We needn't immediately reach for the import. That's learned, spoilt behaviour that needs to be unlearned. when @starbuckscanada launched their pistachio latte i was truly obsessed and now it’s gone so here is my homemade version until it’s back 🥲 optional: turning the leftover pistachio into cookies🤪 syrup: mix 1/2 cup water, 1/2 cup white sugar, 1/4 tsp almond extract and 1/2 cup chopped unsalted pistachios in a saucepan over medium heat. simmer for 10mins before straining into a jar. let cool before storing in fridge. double the recipe for a full jar. #conciouscooking #zerowastetips #budgetcooking #pistachio #starbuckspistachiolatte

All I can say is WOW.😘 What a community we live in. I have had some time to do some reflecting since I did a pop-up this past Saturday @hortonridge . Here's what I have taken away from this amazing experience. This is one of the places on earth I feel most comfortable. The Valley has this certain vibe to it, unexplainable for the most part, as it is more of an internal feeling (like the warmest hug that holds you tight, felt mostly in your soul). In the morning, I had the opportunity to share my passion with a bunch of high-spirited folks @wolfvillefarmersmarket. Then, in the evening, I was pleasantly surprised to see many of those fine folks attend the pop-up. I also had the pleasure of meeting a few new friends. The quality of people who have gravitated to this area is nothing shy of brilliant. It feels as though most people you engage in conversation with have an intriguing story to tell, one in which they share with passion and a sparkle in their eyes. An excitement for life without any doubt that "today is a good day." We all have less than desirable days, but it is truly hard to have one once you step outside and immerse yourself in this community . As we say, "The valley is our utopia." From the scenery that is ever changing to the people that are consistently embracing. I suppose this is just one big ol' THANK YOU 😊. Oh, and here are some pics of what we offered at the pop-up 😆 . Smores cheesecakes may make an appearance at the Saturday WFM market by popular demand. Incoming second meal from @hellofreshuk ‘s … this one is from the ‘Family’ section 🍔 I did add Blue Cheese and fresh baby Tomatoes on top of my patty and Gherkins on the side but that’s the glory of these meals, you can dress them however you deem delicious 🤤 We did find the meat a little gristly but was all in all very tasty, very easy and you can be savvy with how many pots / pans you use! The Wedges could have done with a bit more crisping off but that’s not a reflection of Hello Fresh, that’s simply the visual of my low tolerance of being hungry 🙈 I’d never thought to put Roasted Garlic in with the Coleslaw… NEVER GOING BACK ! 🧄🤤 Yes, I’m a Gherkin lover! This lil beauty is comprised of traditionally made local lamb Shepherds pie mix , 10-year-old Bushmill whiskey & aged Irish cheddar infused cream, @sevenacresfarmandferments Original kraught, homemade local organic russet "hickory sticks," and to top it all off micro shamrocks (aka micro raddish). On an authentic soft tortilla. It's in the name.......from my time living in Kinsale, Co Cork Ireland. I was able to soak up a lot of my ancestral culture, cuisine, and folklore. A country that is very proud of its people, past and present. So, however, you may celebrate today. Please be mindful of tradition. A few tips would be when addressing others today and using "Happy St Patty's Day" Patty is translated to Patricia or a burger. As for " Happy St Paddy's Day," this has been used for decades, most prominently in Ireland, with Paddy as a nickname for Pádraig, or Patrick. Qué tal su jueves? Pues resulta que cuando uno anda desquehacerada descubre cosas que salen requete buenas… Ahí les va esta recetilla que descubrí hace ya rato pero no la quería compartir hasta estar segura de que llenara mis expectativas.. Yo las había comido acompañando los tacos de Cochinita Pibil pero la neta es que van con todo, tiene muchos beneficios a la salud porque además de la fibra que contienen, son diuréticas, aportan propiedades antioxidantes como las vitaminas A, B1, C, E, además de calcio, potasio, hierro y fósforo y son suuuuper fácil de preparar.. CEBOLLAS ENCURTIDAS.. 1 Cebolla morada (yo la prefiero porque su sabor es menos fuerte, tiene notas dulces y es mucho más vistoso el color). 1/2 Taza de Vinagre blanco que puede ser de manzana o bien vino blanco. 3/4 Taza de agua (hervida), aún caliente. 1/2 Cucharada de Azúcar. 1 Cucharadita de Sal. 1 Limon (el jugo) opcional. 1 C Hierbas de olor (yo le puse eneldo, orégano, laurel y mejorana y 3 piezas de pimienta bola grande). PROCEDIMIENTO: Vamos a necesitar un frasco de cuello ancho. Cortamos la cebolla en rodajas delgaditas y las colocamos en el frasco junto con las hierbas de olor y el azúcar. Agregamos el vinagre, el limon y finalmente el agua aún caliente pero no hirviendo que junto con el vinagre deben tapar la cebolla.. Dejamos reposar hasta que al líquido se enfríe, tapamos, agitamos bien para que se mezclen bien todos los ingredientes y metemos al refri.. Al siguiente día estarán listas, y cada día tendrán una textura más blandita. Utiliza lo que tengas a la mano, la idea es disfrutar la cocina usando todos nuestros sentidos.. Puedes agregar unas rodajitas de habanero pero toma en cuenta que el liquido absorberá su picor.. I'm learning to cook things that help assist my body in healing. I often prepare and eat foods to help assist healing and purging in corresponding chakras. This is the view from my bedroom window @thebodyretreat in beautiful Dorset. I’m here this week for the Cook and Tone Returners Retreat. This is where you learn about Conscious Cooking while experiencing a wide range of exercise, including HIIT and Yoga and beautiful walks in the Dorset countryside. As well as enjoying some wonderful healthy food, some of which you get to make yourself. The Body Retreat is run by women for women. It’s a place to decompress and recharge as well as setting your intentions and goals for the future. Un postre delicioso en esta época de otoño; genial para coronar una buena comida o para disfrutar merendando con esta riquísima golosina. 🍎🍏🍎🍏🍎🍏 . . Pasando las fotografías se ve la receta, pero la dejo explicada sin poner cantidades. . 1️⃣Hay que descorazonar las manzanas con un sacabolas y rellenarlas de pasas sultanas, mantequilla y azúcar. 2️⃣Se pasan a una fuente de horno y se riegan con una mezcla a partes iguales de vino blanco corriente y de Pedro Ximenez. Con 100ml totales es suficiente, pero depende de la cantidad de manzanas que hagamos. 3️⃣Se cuecen en la AIRFRYER durante 60’ a 150°C. 4️⃣Se sirven templadas sobre una rebanada de pan brioche caliente untada con la confitura que queramos (yo la he puesto de cereza) y regada con el jugo de las manzanas .
