Get an overload of umami flavors with these comforting creamy comforting gnocchi with mixed mushrooms. Little ones' approved! Extravirgin olive oil, chopped garlic, chopped mixed mushrooms. Sautèe and add  some chopped parsley and salt (I used truffle salt, but you can use any salt, the smoked ones are pretty good here). I did not have a lot of garlic, so I added a couple of tablespoon of roasted garlic achaar by @brooklyndelhi. Add some broth (I used homemade beef broth) and let the mushroom soften (20 minutes or so). I also added some saffron here. Add the gnocchi @delallofoods, more hot broth and some heavy cream. Cover and cook for 5-6 minutes. Add plenty of grated parmesan; if you want some black pepper, too. Serve. Buon appetito! (Not paid for this post) Hear, hear! The little ones devoured them - and they usually are not crazy for mushrooms. Amazing ‘Chicken’ Ragu from @tamar.e.adler’s Everlasting Meal Cookbook, made with more of that vegetarian smoked goose in place of shredded cooked chicken and served with gnocchi. Wow! This was another meal where I was surprised by how well the elements came together (and while it looks visually similar, a very different taste profile from yesterday’s dinner). The recipe has a short and simple list of ingredients and as I was making it I wondered if I should add garlic, or stock, or more seasoning, but trust Tamar: it works. I ended up with a rich and luxurious bowl with very little effort, and now I know how I’ll be consuming a lot more of my bulk jar of dried mushrooms. It was comforting and creamy and soothing and very good. This will be my last post as part of my current ‘challenge’ with this book, largely because the pile of other books waiting for my attention is getting out of hand 😅, but I thoroughly recommend it and will be taking lots of the ideas and spirit forward as cooking inspiration.
