Chipotle bbq tofu⁠ Tofu tossed with what I had at home with egg noodles, broiled broccoli and asparagus, sautéed mushrooms and watermelon radishes! 🍉 🥦 🍜 .⁠ .⁠ .⁠ ⁠ Recipe:⁠ In a bowl:⁠ 2 T of tomato paste.⁠ 1/2 cup of tomato sauce or chipotle sauce.⁠ 1/4 of sushi seasoning or rice vinegar. ⁠ Add 2 T of chipotle spice to the bowl.⁠ 2 T of soy sauce or liquid amino.⁠ 2 T of maple syrup.⁠ 2 T of garlic paste.⁠ 1 T of ginger paste.⁠ A pinch of salt. ⁠ 1/4 cup of tapioca powder.⁠ 1 tsp of salt. .⁠ Press tofu for at least an hour to remove excess water. Aubergine dumplings alla parmigiana hidden under lots of cheese, from Flavour by @ottolenghi @tara.wigley and @ixta.belfrage . This has to be one of my favourite recipes in this book, the dumplings are so delicious and are simmered in a slightly spicy rich tomato & olive sauce. Cauliflower tacos:⁠ ⁠ Preheat oven to 350F.⁠ You will need:⁠ - 1 medium cauliflower head.⁠ - 6 small cremeni mushrooms. - 4 drops of smoked hickory drops. - 2 T of soy sauce.⁠ - 1 tsp of paprika powder.⁠ - 2 tsp of cumin powder.⁠ - 1 tsp of onion powder.⁠ - 1 tsp of garlic powder.⁠ - 1/4 tsp of salt.⁠ - 1/2 vegetable bouillon.⁠ ⁠ By @sculptedkitchen⁠ ⁠ Method:⁠ 1. Pulse your cauliflower or dice them into tiny florets. Remove and replace with mushrooms. Pulse into tiny crumbs. Add cauliflower crumbs and mushroom crumbs together.⁠ 2. Cauliflower tacos:⁠ ⁠ Preheat oven to 350F.⁠ You will need:⁠ - 1 medium cauliflower head.⁠ - 6 small cremeni mushrooms. - 4 drops of smoked hickory drops. - 2 T of soy sauce.⁠ - 1 tsp of paprika powder.⁠ - 2 tsp of cumin powder.⁠ - 1 tsp of onion powder.⁠ - 1 tsp of garlic powder.⁠ - 1/4 tsp of salt.⁠ - 1/2 vegetable bouillon.⁠ ⁠ By @sculptedkitchen⁠ ⁠ Method:⁠ 1. Pulse your cauliflower or dice them into tiny florets. Remove and replace with mushrooms. Pulse into tiny crumbs. Add cauliflower crumbs and mushroom crumbs together.⁠ 2. Add all the rest of the ingredients together and mix together with your hands.⁠ 3. Spread evenly on the baking sheet. ⁠ 4. Bake for 20 minutes. ⁠ 5. Butternut and sage lasagne gratin from Mezcla by @ixta.belfrage , and my entry for the first monthly challenge at the #rainydaybitescookbookclub . This is one of the easiest veggie lasagnas I’ve ever made, with sliced butternut squash, halved cherry tomatoes, sage and garlic mixed together with olive oil and tomato paste layered with parmesan and nutmeg scented cream and lasagna sheets. The oven does the rest of the work and dinner is served! Chilly rainy nights call for warm spiced stews like this Cauliflower Chickpea Coconut Stew with cumin seed, turmeric and green chile. Served it with saffron dill rice and stewed collards fresh from the farmers market. . Ingredients: 1 leek sliced thinly 1 small carrot diced 1 tsp minced ginger 1 garlic clove diced 1/2 tsp cumin seeds 1 tsp turmeric 1 small Serrano diced (seeded depending on heat) 1 can light coconut milk 1 quart veggie broth 1 head cauliflower 3 cans chickpeas Salt to taste Juice of 1 lime Cilantro to garnish . Sauté leek and carrot in olive oil over medium heat until just starting to brown. Add the spices and cook for 1 more minute. Add the broth, coconut milk and green chile. Add the diced cauliflower and chickpeas. Bring to a boil then turn down to simmer for about 45 mins until the cauliflower is soft but not falling apart. Add salt to taste and the juice of the lime. Meanwhile cook the rice with a pinch of saffron threads per package instructions. Green beans for Gan Bian Si Ji Dou are usually blanched in hot oil for a few minutes until the skins blister before tossing them with the sauce. 🌱Ingredients:⁣ ~ 1 lb green beans⁣ ~ 8oz firm tofu - drained, mashed, pan-fried & lightly seasoned with salt⁣ ~ 3 teaspoons finely minced ginger⁣ ~ 3 teaspoons finely minced garlic⁣ ~ 3 dried/fresh chili - seeds removed, softened & cut in half⁣ ~ oil, toasted sesame oil, salt to taste⁣ ⁣ 🌱Sauce: Mix together 1 tablespoon light soy sauce, 1/2 tablespoon stir fry sauce (check highlight for recipe) & 1 teaspoon sugar until all incorporated & set aside.⁣ ⁣ ✅Bring a pot of water to boil, blanch green beans quickly in hot water for 1 min. Drain green beans & wipe dry with a paper towel.⁣ ✅Place green beans in a heated non-stick pan with 2 teaspoons of oil. While turning the beans constantly, pan-fry green beans over low-med heat until the skin is slightly blistered or wrinkly, about 8 mins. Be sure to keep the beans in a single layer for even cooking time. Transfer cooked beans to a plate. ⁣ ✅Using the same pan, add 1 teaspoon oil, then sauté ginger & garlic until fragrant. Sharing a fluffy & delightful savory treat that is perfect for the upcoming Lunar New Year's breakfast😍. ⁣ ~ 250g all-purpose flour, separated in half⁣ ~ 5g yeast⁣ ~ 5g sugar⁣ ~ 150ml water, room temperature⁣ ~ 1/8 teaspoon baking soda, mix with 1 teaspoon water ~ 1/4 teaspoon salt⁣ ~ 1 teaspoon oil⁣ ~ 3/4 cup chopped scallions⁣ ~ white/black sesame seeds⁣ ⁣✅Combine yeast, sugar & water in a mixing bowl, then add in 125g of flour. Using a spatula, mix all ingredients until well combined. Cover & let mixture proof until it turns bubbly or 1 time the original size, about 30-40 mins (proofing time varies depending on temperature)⁣ ✅To make the bread, add baking soda mixture to the proofed dough, then add the remaining flour & mix well with a spatula.⁣ ✅Transfer mixture onto a cleaned surface & knead into a smooth dough or until the dough is not sticky (do not add any flour to speed up the process here). Then, dust some flour on the countertop & place dough on top. Cover & let rest for 15 mins.⁣ ✅Roll dough into a 10-inch round, then rub in salt, brush the dough with oil & top with chopped scallions. Black bean tortilla soup on this chilly #meatlessmonday. Quick and easy. You likely already have most of these things in your pantry. No exact measurements. You can’t go wrong! 1 large diced onion 6 cloves minced garlic Taco seasoning to taste (I didn’t have so I used cumin, smoked paprika, coriander and garlic salt) 1 can small diced or crushed tomatoes 1 can black beans rinsed well 1 can pinto beans, rinsed well Small bag of frozen veggies (I used a succotash mix) Water or vegetable broth Sauté the onion and garlic. Add in the spices and beans. Add tomatoes and veggies. Cover with broth or water and bring to a boil for a few minutes and then simmer for 20-30 minutes. Add a generous squeeze of lime and cilantro. To serve garnish with plenty crushed tortilla chips, avocado, jalapeños and more cilantro and more lime. #Repost @sculptedkitchen ... I used to think taking a day off would ruin my chances of staying on top of things. I’m no longer interested in posting a porridge bowl or a smoothie bowl to fill in the gaps between creations. 
While I’m not present on social media, there has been tons of developments happening behind the scenes with recipe development, photography and brand collaborations. While I’d love to do it all I do love curling in bed with books. I love working on newsletter. And sometimes tackling a bit of my ever growing list of things to do. I was on the road to burn out the last few weeks and being able to relax and sit with gratitude the last couple of weeks into the new year has been such a welcomed change. New Year’s Noodles with shoyu roasted cauliflower ✨ Some good news for 2022: An all-time record 70% of Americans are now very or somewhat worried about global warming. That’s a jump of 6% just since March 2021. More people than ever are also interested in plant-based diets. I’m not typically a fan of resolutions or making diet changes for a limited amount of time, but I know friends who participate in Veganuary and find a lot of value in getting more practice with vegan eating and cooking. A lot of what I cook is vegan, but I don’t adhere to a strictly vegan diet because sometimes there are climate-friendly food choices that aren’t vegan like local farmers market eggs. But there are also times when I include dairy in my food out of habit or laziness. While I’m not big on resolutions, one thing I am going to commit to in the new year is being mindful of my dairy consumption and trying to build stronger plant-based habits with my food choices. Whether you’re making a resolution to eat a more plant-based diet or not, I hope you’ll enjoy this noodle recipe 👇 . Ingredients: 1 package of refrigerated ramen noodles (could also sub dried ramen or soba noodles) 1 bunch of scallions, sliced 2 garlic cloves minced 1/2 tsp diced fresh ginger 1 large cauliflower diced (I used six baby cauliflower from the farmers market) 2 tbsp sesame oil 2 tbsp shoyu sauce 1 tbsp rice wine vinegar . Mix 1 tbsp shoyu with 1 tbsp sesame oil and brush or drizzle it on the cauliflower on a baking sheet. Roast in a preheated 400 degree oven for 30-40 minutes until tender and browning. Meanwhile heat the remaining oil over medium heat. Add the scallions, garlic and ginger and sauté until fragrant and beginning to soften. Remove from heat. When there are about 5 minutes left on the cauliflower, add the noodles to boiling water and cook per instructions. Drain and add to the scallion oil along with the remaining shoyu and vinegar. Toss over medium heat to combine then add the roasted cauliflower. Toss one more time before serving. This is the second time I’ve made this, and it’s the best kind of comfort food for a cold rainy night. . I layered tortillas with two cans of refried beans, a generous sprinkling of taco seasoning, 1 1/2 cups of white rice, 2 cans of black beans, 1 bunch of spinach that was wilted, and two @fieldroast spicy Mexican Chipotle vegan sausages that were sliced and browned. Topped it off with another layer of tortillas and @sweetcreekfoodsllc medium enchilada sauce. The first time I kept it vegan, but this time I tried it with a sprinkle of shredded jack cheese. Baked in a 375 degree oven for 30 minutes."

I used to think taking a day off would ruin my chances of staying on top of things. I’m no longer interested in posting a porridge bowl or a smoothie bowl to fill in the gaps between creations. 
While I’m not present on social media, there has been tons of developments happening behind the scenes with recipe development, photography and brand collaborations. While I’d love to do it all I do love curling in bed with books. I love working on newsletter. And sometimes tackling a bit of my ever growing list of things to do. I was on the road to burn out the last few weeks and being able to relax and sit with gratitude the last couple of weeks into the new year has been such a welcomed change. Falafel with hummus, zhoug, pickled veggies made by a friend, tomatoes and cucumber stuffed in puffy pita still warm from the oven. I’ve started to eat before going in to work, as the cafeteria has become another Covid casualty- there’s only so many heavily saran wrapped sammiches this girl can eat 🤯 I made the falafel mix yesterday using the grinder attachment on my KA and let the flavour develop over night. They are spiced with cumin, coriander, cayenne & cardamom then rolled in sesame seeds before frying. Curried cauliflower cheese filo pie from Shelf Love by @noorishbynoor and @ottolenghi . This seems to be one of the most popular dishes from the book so far, and now I know why. Cauliflower is tossed in curry powder and roasted before being added to a mustard and very cheesy béchamel sauce and wrapped in layers of butter slathered filo and baked till crispy. Topped with lemon zest, parsley and a sprinkle of kalonji/nigella seeds, it’s absolutely delicious! Nori changes everything! This was almost a basic bowl of noodles thrown together with veggies but when my pan was blazing hot and I reached for an egg to fry GASP I was all outta eggs. Had to think quick for something to pull the meal together and reached for the nori. It added texture, ~umami~, a tiny hint of sweetness, and really tied the dish together. Noodles with miso tahini sauce, veggies, chile crisp, and toasted nori. Swipe for a chaotic noodle twirl.

It’s a monday and it’s raining! 🌧 I hope the weather didn’t dampen your mood. Certainly nothing that a cup of coffee or tea can’t fix. I thought to try out making vegan french toast with the iCook. i used to make french toast on a stove top with 2 slices of bread side-by-side and since the center of the pan is usually the hottest, that means 1 side of the bread is darker than the other. But as you can see all of the slices are evenly toasted and they turned out really crispy too. I included me testing how crispy the toast was! 😆 🧐 the iCook has a wide heat plate underneath that helps with the even heat distribution.
