In alle gevallen is het beter om de Shanghai paksoi niet te lang te verhitten - dan komt de smaak het beste tot zijn recht. Landcress: Je kunt landcress gebruiken zoals je rucola eet: op een broodje, met andere slasoorten in een salade of door pasta’s bijvoorbeeld. Door de geconcentreerde smaak is dit ook een goede groente om gerechten mee te garneren. Zuring: Je vindt het werkelijk overal in de natuur, in allerlei gedaanten. Zuring smaakt - verrassing - zurig, zoals citroen of rauwe rabarber. Je gebruikt het als sla. Zo kun je er goed een handje van door een dahl roeren of er een pesto van draaien. Meiraap: Deze groente doet z’n naam eer aan, want meiraap is een echte voorjaarsgroente. Kies voor de jonge, stevige knolletjes. Die zijn sappig en een beetje peperig van smaak. Lekker voor in een tajine van wortelgroenten. I love perennial veg that come back each year without any stress and bother like this Land Cress! Especially at this time of year when other things are scarce. It’s very like watercress, dark green and bitter, so probably full of iron and much better for you than the insipid stuff they sell as watercress in supermarkets nowadays! Especially when it’s organically grown and fresh picked from your own garden, all it’s vitamins and minerals will be bursting forth and no plastic packaging or food miles. And also (probably because of its spiciness) not readily munched by the slugs and snails or birdies, like other salads so it’s a win win win in my books 😀 ❤️ Have you tried growing Land Cress? It may be February but there’s fresh deliciousness on offer on the lotty. I have: 🌱kale sprouts (one of my yearly highlights) 🌱miners lettuce (Claytonia) 🌱salad burnet (perennial fabulousness) 🌱land cress (brilliant self seeder) 🌱sorrel (also perennial) 🌱wood ear mushrooms 🌱chives (perennial) 🌱bunching onions (yup, they’re perennial too) 🌱primroses (both flowers and leaves are edible…and they’re perennial) 🌱Thyme (another perennial!) 🌱mullein (prolific self seeder) I’ll be eating some fresh (kale, miners lettuce, land cress, chives, bunching onions, sorrel, primroses); fermenting some (salad burnet); dehydrating some (wood ear mushrooms and thyme and mullein). The thyme and mullein I’m using to make a cough medicine. Inspired by Michel Roux's watercress soup recipe I tried substituting landcress (you don't need a river to grow it and it is one of the few things at its peak in the veg patch now) with really delicious results. I've been having a great time with this bed of self-seeded upland cress and mâche, even though it was obviously an unplanned part of my garden this fall. I harvest some of the young cress leaves almost daily to pile onto avocado toast, sandwiches, pizzas, creamy pasta. It has a relatively strong, peppery taste so is a perfect complement to anything with a creamy or fatty element. Mâche is a lot milder in flavor and is great in mixed salads or a classic French potato salad with mustard-based dressing. I don't think I've ever met a leafy veggie I didn't like and I'm always on the lookout for new ones to add to my salads or cook with! My land cress is ready to harvest! Have you ever heard of this vegetable? It's more common on the mainland, and I've seen it sold in grocery stores. I have grown these to a more mature stage and have used them is soups in place of water cress, but I'll harvest these to use in my salads. I grow these in hanging planters so I can keep a better eye on them and make sure I get to eat them first! Land cress (Barbarea verna) is a hardy biennial plant grown for its edible dark green leaves that are peppery in flavor. It belongs to the Brassica family and is rich in vitamins, calcium, and iron. You can eat them raw or cooked. Starter plants will be available soon! #landcress #uplandcress

Remember my over wintered Chilli plants? They’re out in the Greenhouse now and producing nicely! 🌶️ These are Basket of Fire Chillis, an F1 hybrid variety which means I can’t grow them from saved seed. The answer to that? Keep the plants going ad infinitum! One of these Chilli plants is now entering its 3rd summer. In October I bring them in to the kitchen which has a lovely sunny window sill. I keep them fed with liquid seaweed, and they’ve continued to blossom and grow new fruits throughout the winter. And how is this for an early season harvest! 🌶️ A couple of these Chillis were used straight away for this evenings stir fry. Tonight I used Chard, Brassica Flowers, Land Cress, Magenta Orach and Broad Bean shoots. 🌶️ Yes - you read that right! The Broad Beans in the Polytunnel are now over 4 feet tall, so today I pinched out the growing shoots. Waste not want not - they joined the other leaves in the stir fry! ~ ~ I took a morning drive to pick up raw milk, what a gorgeous morning it was too! It’s been a while since I bought raw milk since my eldest daughter wouldn’t drink it while pregnant. On the way home I stopped at a local river where I foraged nettle and land cress. I never wear gloves when foraging nettle, as long as you just pinch the top leaves and don’t touch the hairy stems, all is good. I’m grateful for the free spring greens Jehovah provides! Cured salmon & land cress This salmon has had the briefest of cures, just overnight packed in salt. Land cress is coming in to flower everywhere so it's time to eat it before it runs to seed. If you aren't familiar, it is similar to watercress in its peppery flavour but is more bitter which is probably why it is also known as bittercress or hairy bittercress. It can be found in most gardens and green spaces in the UK. The punchy flavour of the landcress mayonnaise stands up well next to the salty salmon.

American land cress is one of my all time favourite winter salad leaves. It looks and tastes very similar to watercress but it's miles easier to grow - just keep it on the damp side (not difficult lately) and it's perfectly happy. I usually pick the leaves young when they're pleasantly peppery - but if your land cress gets a bit big and old you can also cook it, when it loses its bitterness and takes on a rich, spinachey deliciousness. Landcress and Wrinkled Crinkled Cress I have grown the wrinkled cress before and it was really successful and delicious. The plants are very small at the moment but I hope they will be ok.
