Busy Day Means Crockpot Meal! 2 chicken breasts, medium size is best skinless and boneless. I like to tenderize first but you do you. 4 large carrots 1 summer squash 2 celery stalks 1 whole yellow onion 6 cups of chicken bone broth 1 bay leaf A couple sprigs fresh thyme (I used 4) A pinch of sage Dash of pepper A couple sprigs fresh rosemary (I use two) 3 cloves garlic In your crockpot, place chicken breasts at bottom Add bone broth, onions, carrots, celery,summer squash, onion, garlic, sage, bay leaf, thyme, rosemary, pepper (any thing else you want) Cover and cook on low for 7-8 hours or high for 4-5 hours. About 45 minutes before serving, remove the chicken from the soup. Life at E I G H T months postpartum. 🤍 The most noticeable thing about life right now is how different it is compared to after having my first three babes… We have so much to do in our daily rhythm now — several work obligations, school drop offs & pickups, dance & tball and a lot (like a lot) of laundry. It’s much more difficult to stop and actually reflect on the fact that we still have a new baby. And why I might be feeling… different now. I have weird curly hair, rolls in places I never have before and an acne spot that won’t disappear. I really, really like cookies. And I crave fresh air & sunshine. Working out is a struggle because my balance and endurance still act like I’m pregnant. But I lace up my tennis shoes anyway. Sleep isn’t even worth mentioning because with four kids… what is decent sleep anyway. Mentally & emotionally, I’m in a daily fight with presence and productivity. I long to slow down, to be present, to soak it all in before this baby isn’t a baby anymore. But the days just keep passing, and she just keeps growing. And I wonder if we’ll have more or if the lasts of the baby years are passing me by, too. There’s a lot that I don’t know, that I’m not aware of these days and a bit that I do… I know I’m grateful. For these wild, wonderful kids, it was just a few years ago we didn’t know if we’d ever have even one. And I know it’s normal — the busyness and the rolls, the mental fog and bittersweetness of it all. Yesterday I was a leader. Now, as a mom to 4 kids, you might think I always have to be a leader. That is true, but when you have strong-willed children, it is sometimes easier to find another opinion to follow than make up your own mind. (Thanks, mom!) Back to yesterday... Our church plans fell through with my parents. In the past, there have been times when we are away that we have resorted to church-at-home. But yesterday, we tried a new church!! Without Jeff here, I lead, and my littles went to Sunday School and my boys came into the service and participated. And they did well! This may not seem earth-shattering to some, but it takes a certain amount of MY courage to go into a new environment and maybe stand out. I want my children to know that worshipping Jesus in a church is important, even when it is different to what they know. I also want them to know that they can do scary things, like going into new places, and maybe one day, they will lead their own family too. Starting Dinner! The Base For Our Crockpot Chicken Pot Pie Is Going! It’s A New Recipe So I’m Excited! I was planning on making my from scratch biscuits BUT I lost track of time while gardening. So Instacart & Publix to the rescue! Ingredients: 4 chicken breasts boneless, skinless 1 yellow onion chopped 1 tsp rosemary 2 bay leaves 1 packet French onion soup mix 1 1/2 cups carrots chopped 1 1/2 cups celery sliced 1/4 cup Italian parsley chopped 1tsp oregano 1 tsp paprik 1 tsp salt 1 tsp pepper 8 oz chicken stock 21 oz cream of chicken soup 1 1/2 cups peas frozen 1 1/2 cup carrots frozen Biscuits (store bought or homemade) So I was going to made the biscuits but time slipped away from me while clearing the flower beds and gardening soooo store bought it is tonight. Instructions: Place chicken breasts in a large slow cooker. Pour chicken stock, French onion soup mix, onion, herbs/seasoning and chicken soup over top. Stir mixture on top of chicken, cover crock pot and set to cook for 2 hours on low or 1 hours on high heat. Add vegetables on top of chicken, cover crock pot and set to cook for 6 hours on low or 3 hours on high heat. Thirty minutes before cook time is up, remove chicken breasts from slow cooker and place on a cutting board. Shred the meat using two forks and return shredded meat to crock pot. (You can also use a hand mixer in the crock pot ) mix well, and let cook for the remaining 30 minutes.
