Chocolate peanut butter oatmeal energy bites 💥 . 1 1/4 cup old fashioned oats 2 tbsp chia seeds 2 tbsp ground flaxseed 1-1 1/2cups creamy peanut butter 1/3 cup maple syrup (plus more if needed) 1/2 tsp vanilla extract 1 cup enjoy life chocolate chips 2 tbsp coconut oil . Blend a little more than 1 cup of oats into oat flour in a mini food processor (I would say about a cup and a quarter). Mix oat flour, chia seeds, ground flaxseed (as much as you want!) in a bowl. Add in creamy pb, vanilla, and maple syrup and stir with a wooden spoon. Add more pb/maple syrup as needed until all the flour is coated and you have a “dough”. Chill in fridge for an hour. . In a small saucepan or in the microwave melt the chocolate and coconut oil. Take 1-1.5 tbsp of dough and roll into balls. MAKES 24 BITES • 1 C soft medjool dates (if they’re too hard, soak in hot water for 10 minutes or so) • 3/4 C pecans • 1/2 C cashews • 1/2 C almond flour • 1/2 C GF rolled oats • 1/2 C hemp seed • 1 TBSP vanilla extract • 1/2 tsp cinnamon (optional) • 1/4 tsp salt • 1-3 TBSP water Toppings • 1 TBSP rolled oats + 1 TBSP hemp seed • dark chocolate chips • chopped pecans 1. Add all ingredients except water to a food processor. Mix on high until really well combined (30-90 seconds). 2. Add water 1 TBSP at a time to achieve the right texture. This recipe is TOTALLY dependent on how soft and moist (sorry) your dates are, which can vary greatly, but when you get the right texture - YOU’LL know. Typically I add about 1.5-2 TBSP. The texture of the mixture goes from crumbly to suuuuuper doughy FAST. 3. Once the right texture is achieved, roll into balls and coat with toppings of choice. 4. Store in an air tight container on the counter, in the fridge, or in the freezer if you really want these bbs to last! Do you enjoy having homemade snacks in your house? My youngest came to me last evening asking if we could make these Oatmeal Energy Balls😃 He found the recipe in a kids magazine that he was looking through! We whipped these up last evening in no time. Good Morning! I made these Oatmeal energy balls. I’m calling them power balls. No recipe. But I did just so happen to perfectly combine oatmeal, peanut butter, mini chocolate chips, coconut flakes, slivered almonds, flax seeds, and maple syrup. Refrigerate. Roll into balls. Oatmeal Energy Balls These are great for a quick "pick me up" . . Ingredients 1 1/2 cups rolled oats 3/4 cup natural peanut butter 1/2 cup raisins 2 tablespoons honey Preparation : Mix oats, peanut butter, raisins, and honey together with a fork in a bowl.
