Chicken Arrabbiata With Parmesan Dumplings! #glutenfree #lactosefree #lowfodmap My gluten and lactose free, low fodmap chicken arrabbiata with parmesan cheese dumplings is one of my favourite meals! It is a great crowd pleaser, perfect for impressing guests or just as a yummy meal for yourself! It is a fabulous example of how you can adapt a ‘normal’ recipe to suit your dietary needs and it still tastes fabulous! No missing out here! This recipe is originally by @goodfoodeveryday written by @esthermclark which I adapted to be gluten and lactose free as well as low fodmap! To make it gf, I switched to gf flour for the dumplings. To make it lf I switched to lf milk for the dumplings. To make it fodmap friendly I omitted the onion and garlic and instead fried to seal my chicken in garlic infused oil. I also omitted the sundried tomato pesto and add tomato paste instead and my own homemade, low fodmap stock. For personal preference I use diced chicken breast instead of thighs! Despite all these changes and adjustments the meal is still wonderful and thoroughly enjoyable! It shows that if you’re clever and willing to experiment with your cooking you too can eat and enjoy the meals you really want to eat with no missing out! Gluten & Dairy Free, Low Fodmap Burger & Chips! 📍 @honestburgers - Various Locations, UK 🇬🇧 @honestburgers is one of my favourite places to eat! They cater SO well to my intolerances as everything is made to order, allowing you to customise your meal to suit your needs as well as preferences! The staff are always friendly and knowledgeable about allergies and intolerances too which means you can enjoys a stress free meal! Plus you actually get a super meal! A BURGER & CHIPS! What a dream! I chose the Honest Burger in a gluten free bun (at no added gf bun cost!!!). This consists of a pure British beef patty (no added ingredients so it is fodmap friendly!) with smoked bacon, lettuce and I switched to vegan cheese from normal cheddar (again at no added charge!!!). Their honest burger normally comes with a homemade onion relish which I asked to not be included (due to my intolerance) and pickles which I am just not a fan of. I chose @honestburgers famous Rosemary Salted Chips which never disappoint! They are the BEST chips I have ever had in my life! Salmon En Croute! 🐟 #glutenfree #lactosefree #lowfodmap Happy Good Friday! It is tradition to eat fish for Good Friday dinner and my gluten and lactose free, low fodmap salmon en croute is the ultimate celebratory fish dish! It is an instant crowd pleaser, it not only looks impressive but tastes amazing too! Salmon en croute was always one of my favourite dinners, but since discovering my food intolerances I have not been able to eat it, but now there is no missing out! My gluten and lactose free, low fodmap salmon en croute consists of a homemade puff pastry topped with a layer of mustard and then a large skinless salmon fillet placed on top. The salmon is topped with a herb and lemon, cream cheese and spinach mixture. This is all then topped and sealed in another layer of my homemade puff pastry! The large parcel is then decorated with little pastry fish which add a cute, personal touch! I served sliced of my gluten and lactose free, low fodmap salmon en croute with oven bake potato chips and peas! This recipe is by @beckyexcell it is definitely a lot of work especially if making your own pastry, but it is so worth it! It is actually quite easy to adapt a traditional Easter meal. 1. Roast Lamb 2. Roast potatoes 3. Roast vegetables. Choose low FODMAP ones such as carrots and parsnips 4. Low FODMAP gravy. e.g. Bay's kitchen, Massel's or use the roast juices combined with Comptons gravy salt 5. Chocolate! 20g of milk chocolate it low FODMAP - equivalent to 6 mini eggs. Yes this is quite a small serving however you can enjoy this serving every 3-4 hours. Alternitavely, opt for dairy free chocolate instead. Low FODMAP Vegan Quinoa Tofu Bowl. Food is an essential part of providing our body with vital energy and ensuring healthy skin! As someone who was recently diagnosed with PCOS and SIBO, I am constantly trying to reduce my inflammation and manage my insulin-resistance. It’s important for me to eat meals that are filling but also, tasty. Ingredients: Quinoa: A low FODMAP ingredient that is great for someone with SIBO. It also has a GI (glycemic index) of 53, which works well for those who are insulin resistant. Extra-firm tofu: low FODMAP and a GI of 15. Acorn squash: 1/3 cup is a low FODMAP serving. The GI for this vegetable has not been tested but it is likely low due to butternut squash having a GI of 35. Chickpeas: ¼ cup or less of canned chickpeas are actually low FODMAP. A GI of 10! Avocado: 1/8 portion is low FODMAP and a GI of 40. Pumpkin seeds: 2 tablespoons is considered a low FODMAP serving. A GI of 25. Rich in zinc, which is deficient in those with PCOS. Sauce: vegan mayo, lemon, olive oil, parsley, cayenne pepper, salt, pepper. Low Fodmap Pizza Night! 🍕 #glutenfree #lactosefree #lowfodmap Who doesn’t love a pizza night?!?! Just because you have food intolerances doesn’t mean you have to miss out! To create my low fodmap pizza I use @scharglutenfreeuk free from pizza bases and make my own tomato sauce by mixing tomato purée, garlic infused olive oil and mixed herbs together and applying a generous layer over the base getting quite close to the edge to avoid large crusts. I then topped my pizza with 25g cheddar cheese (serving size matters if low fodmap/low lactose), torn up ham slices, some sliced tomatoes and red peppers and to finish it all off and take your pizza to the next level, big dollops of @asda free from green pesto (do not hold back!) which amazingly is low fodmap! Now all you need is a good movie and some dessert! Mediterranean Haddock, Olive & Tomato One Pot! #glutenfree #dairyfree #lowfodmap My delicious Mediterranean Haddock, Olive & Tomato One Pot is a great quick and easy mid-week meal! Anything that can be cooked as a one pot dinner is an instant winner for me! Especially when it tastes this good! It consists of rice cooked in a delicious white wine and stock sauce flavoured with with oregano and basil. Sun-dried tomatoes, black olives and plum tomatoes add a lovely infusion of flavour that the haddock absorbs as cooked. Lamb Moussaka! #glutenfree #lactosefree #lowfodmap Lamb Moussaka is my absolute favourite meal! It is a meal that takes a bit more time and effort but is SO worth it! It is the perfect dinner for entertaining guests or just treating yourself! I must admit my Lamb Moussaka is never as good as my mum’s! I usually have a (gf) sandwich everyday but try to switch up my fillings, but another simple twist is by using free from wraps! Although, I can’t complain, I do love a sandwich, when it’s good it’s a perfect easy lunch! I love a simple chicken salad filling with mayo! I have found you do need the mayo or a sauce in gf sandwiches or wraps etc otherwise, as you know, they are the driest thing! Breakfast Inspiration ✨ Maple Ginger Ground Chicken Sausage with sautéed collard greens, bell peppers, & roasted potatoes. This was an everyday breakfast when I first got diagnosed with #LPR. It’s is #LowFODMAP, high protein, and totally delish! 😊️ Lil’ Health Update: I’ve been finding it pretty difficult to stay on track with the low acid diet recently. I’m trying to give myself grace in this new chapter of learning how to eat for healing my body, but that’s a balance that I’m still trying to figure out. I know I’ll get there, but there’s times when I want to have a drink or a pastry or even something as simple as garlic without needing to hack shit out of my throat for next day+. 🤷‍♀️ It’s a process and unfortunately there are no “cheat days” with this disease. There will always be repercussions from eating/drinking badly the next day. I’m looking forward to continuing my education on the #LowFODMAPdiet and to finding a balance that’s right for me and my body, but dang it’s tough! 😮‍💨 #BeTrueToYou

Need help with making meal prep simple, especially while working on healing/improving your gut health? Don’t worry bestie, I got you! One of the questions I get asked most about my SIBO healing process is HOW did you do it?! Healing your gut can feel really difficult (and can actually BE very difficult!) but one of the biggest things I did to support the process might seem surprising. I MEAL PREPPED! Right now you’re probably thinking, OK but I don’t get what meal prep has to do with gut health. That’s cool, I’ll tell you what it meant for my gut health & you can decide if it’s right for you. For me, it meant I always knew I had “safe” meals that satisfied my cravings available. It meant I was never rummaging in the fridge/pantry looking for something to shove in my face because I was so hungry I couldn’t see straight. It meant I could easily time my meals & snacks for ample digestion & to support motility (more than 3-4 hours between meals would really mess me up!) Gut friendly food options can also be more expensive than “regular” options, so meal prepping helped me use what I had more & shop a bit less to save money. Who doesn’t love that?! Grilled Chicken, Jacket Potato & Salad 📍 @buffalogrill - Dole, France 🇫🇷 (Various Locations) On the drive down to Morzine (France) for a family ski holiday, we stopped in Dole for one night to break up the journey. @buffalogrill was right outside our hotel and was a perfect, easy, stress free eating out experience. It definitely was not the best meal but I was thankful that they could cater for me and were so accommodating. The staff were friendly and helpful. I went for plain grilled chicken which was quite fatty and leaked clear juices when cut but it tasted fine. Unfortunately I could not have chips as they are not made in a purely gluten free fryer despite being labelled gluten free on the allergy list and menu, however, they offered me a jacket potato instead. It was rather powdery but still pleasant enough. I also had a salad with it which had seen better days. Overall a not the best meal but that was to be expected. However, I was thankful that it was a quick and easy meal that I could eat, especially after a very long day in the car! Pineapple Sticky Chicken 🍗 !! yum yum. This is a traditional meal my mom would always make growing up. Just tweaked a little to be low FODMAP/ paleo! The aroma that fills your house when baking it is swoon worthy. And it’s only 15 mins of active time! Ingredients (can half if needed) -2 lb chicken drumsticks - 1 8oz can pineapple juice - 1 cup coconut sugar -1 cup coconut aminos Directions: - preheat oven to 350 - dissolve sugar over medium heat on stovetop with juice & coconut aminos, about 5 mins - lay drumsticks in a baking dish, then pour the dissolved sugar mixture over top of it - bake for 2 hours, flipping the drumsticks halfway Bon apetit! #paleo #paleomeals #lowfodmapmeals #lowfodmap #pineapple #yum #easymeals #easychickenmeals
