Here's why I'm going to be upping the colourful squash this winter 🎃 what a TREAT!⁣ One of the most famous winter squashes is the pumpkin, followed closely by the butternut squash - a warming pair and delicious pair, that produce a creamy and nutty flavour. Great in soups, roasted and used in purees. It really is super versatile and part of the orange plant food family that owe it's warming hues to beta-carotene, a carotenoid that your body turns into vitamin A and it is high in vitamin C. They also contain antioxidants, such as alpha-carotene and beta-cryptoxanthin. These can neutralise free radicals, stopping them from damaging your cells, which can come in very handy in the winter months with lots of bugs. As it is so high in fibre, it's going to be a wonderful addition to your positive plate as it will support a diverse microbiome. Another top tip as we head into winter! As this is where your immune system does most of its work - inside your gut. So if you're carving out a pumpkin, think twice about throwing away the flesh! One of my top soups is made from pumpkin, red lentil and butter beans. This recipe has just been dropped inside the positive method club and I can't wait to share it with my members.
