It’s been quite a blooming week so far! Literally! After Mother’s Day there is always a lot of surplus flowers that need rescued from potentially ending up in the trash so we are delighted to step in. Even though they aren’t food, we are so grateful that our stores donate the surplus flowers to us so that we can brighten lots of peoples days. These are just some (yes, there were lots more) that were distributed to the Murrayfield dementia project, early years centres, primary schools and nursing homes across Edinburgh, Headway, corstorphine community centre, Edinburgh carers and lightbulb arts. The potted plants are still awaiting homes as we need to deadhead and rejuvenate them before we know where they can go; thankfully the rain has helped perk up some of the dried out ones. we’ll keep you posted. 😁 💐🪴 Also, a massive shout out to our store who had to record everything manually so that we could still take them after the power cut knocked out the scanners. This Food Waste Action Week, we’ve been considering how we can reduce our food waste to help fight the climate crisis. Our Business Development Manager from our Catering solutions team, Darren Porter, shares his top tips all in the name of this year’s slogan: ‘Win. Don’t Bin!’ “Shopping lists are a brilliant way of controlling waste. As is using smaller portions of prepared products and filling the gaps with fresh salad or veg - it’s cheaper and healthier as well. “My favourite tip is using excess vegetables and making soup or sauce for pasta and freezing them for use later - it’s great when you’re in a hurry and just need to defrost and cook. This is also a brilliant way of buying smart and preventing waste. I had a monster harvest of some really hot chillies one summer, so I chopped and blended them with garlic, ginger, and a little water then poured into some large ice cube trays and froze for later. These were then added like special stock cubes to pasta sauces, stews, chilli con carne, and even some stunning Bloody Mary’s at Christmas time! Don’t Bin!’ Our Business Development Executive from our Catering solutions team, Scott Brown, shares some of his top tips to prevent food waste: “A good tip is to be conscious of portion size in relation to supermarket’s packet sizes. An example is pasta – a portion of pasta is 80-100 grams, but pasta is most commonly sold in a 500 gram pack. So, a family of four who cooks the whole pack are potentially creating waste. “Cooking too much can be a good way of reducing cost and waste though, if you batch cook. Simply portion up the over production and chill or freeze as homemade ready meals. This works really well with things like stews, chillis, and curries. The young adults in my house prefer this to a takeaway when returning from a night out, so it’s money saving as well! “Finally, thinking about what you can do with leftovers instead of wasting them; can you create something new? A great example is what’s left on a chicken after a Sunday roast; often this just goes in the bin but there’s probably a lot of chicken still on the bones. Our friends at the Ray Mears @target had an issue with their power for the fridges in store, so instead of throwing that food away, the manager called our Food Rescue Team and they hopped on it! All of this food was immediately put in our refrigerated truck (11 WHOLE pallets of food!) and kept out of the landfill! My local Starbucks packages up spent coffee grounds for their customers to take and use in the garden 🌱 I was excited to get a bag with SO much spent coffee. I give my own spent coffee to my indoor plants, but I don’t create enough grounds individually to be used on a garden scale. I pick up expired foods from our county's food distribution warehouse each month for our animals. These eggs expired in Aug and we have plenty of our own eggs so I decided to feed them back to our poultry. I find this to be an easy protein and calcium option especially during their moulting season. Shredded till everything is fine and undistinguishable, they eat it up with excitement. The amount of food waste is quite shocking. A take away I had is that many generous people are donating from their gardens to local food banks and guess who is getting it? My pigs..... By the time I rip open the grocery bags of beautiful, spoiled tomatoes, everything is a sloppy mess. But I'm dedicated to not letting the generosity of others go to waste. Seed collection. Although I don't currently have a garden or access to one, I've been collecting seeds from random fruits I've had, with the hope that my next apartment this year will either have more lighting (video coming up about what to look out for as a sustainable student when apartment hunting for the first time) or fingers crossed a garden, or at least a balcony. The frustrating of not being able to grow foods on a larger scale is something I often think about so at least by saving these seeds from being wasted, I can start planning ahead on my future garden dreams. I know certain shop-sold fruits and veg are made so that they cannot be regrown at home, but honestly, what's the harm in trying. If it works, amazing we have free food! If it doesn't, then no money has been wasted and we've learned more throughout the process. My first attempt at pickled cauliflower. I used the same brine recipe as my pickled eggplant however as the cauliflower lost it's crunch, I just washed it, pulled it apart, filled with herbs and garlic and covered with the hot brine. Breadcrumbs! So versatile and so easy to make yourself. Much like the powdered sugar I use a little herb grinder to make this. We make our own bread and when it goes stale we let it air dry which prevents mould. We also break it up into small pieces because they're so hard to break apart after they've hardened. I then pop them in the blender and voila. It's so much more affordable too, it shocks me that people actually buy breadcrumbs from the shops. Like, do you ever really actually finish your whole loaf? I have heard of methods of making this without a blender which involve a bag, a rolling pin and a lot of pent up aggression. I tried this previously but it wasnt as effective and left my bag completely ruined by the sharp edges of the crumbs. Either way, making your own means you can control the size of the crumbs, what bread it's from. You could probably add a bit of seasoning to it too but I tend to leave that for the batch I'm just about to use. SMALL BUSINESS SUNDAY So, today I’m going to start wrapping my Christmas presents. By wrapping, I mean reusing old packing and boxes. We opened our first cpllection point in Hamarapur in October together with @indiasbarn . They also arrange regular clean-up drives! 😁👏 Education and promoting awareness is also an absolute important part to fight plastic pollution, especially in countries battling poor waste management structures. 📖♻️ Together with our local partner Indias Barn we arranged a clean-up drive educating young pupils in the village of Hamarapur about the threat of plastic waste pollution in the environment and how Empower's solution can help provide a better future. 🤓🌍 A total of 72,5 kg of plastic waste was collected by the villagers. 🤩♻️Several kids joined for fun in the clean-up and gained both knowledge and experience about how the solution works! 🌱Stuffed sweet potato🍠 with (leftover) red lentil veggie sauce & topped with smashed avocado🥑. This is the 2nd night using our one pot ‘clean out the fridge’ red lentil veggie sauce but with a completely different flavour from yesterday’s dinner. While some may think it’s boring to eat similar food 2 days in a row, I love the creative challenge of producing something different. This was a real hit in our household🏠. . I knew we would get approx 3 nights (for 3 people) out of the veggie sauce- so yesterday I divided it up according to the meals we had planned. We’ve used it for 2 dinners now & I’ve put the 3rd portion in the freezer for when we’re short of time or can’t be bothered cooking! It’s good to know there is a healthy backup meal waiting whenever we may need it. We love using food in this way- creating, preventing waste🚯 & being economical at the same time, it works for us!!! . • Depending on the size, bake the sweet potato🍠 at 200 degrees C for about 1hr or until tender. Carefully slice off the top & scoop out some of the pulp. Add this along with quinoa to the red lentil veggie sauce! Return to oven for 15mins.
