While on the subject of spices, here I made spiced cauliflower salad with pomegranate seeds. At last pomegranates are a reasonable price! Here is the recipe: Base: 1 cup Greek yogurt Juice 1/2 lemon 1 heaped tbsp tahini Pinch salt flakes Filtered water to thin if necessary Mix all the above ingredients and spread over the base of a serving platter. For the topping: 1 cauliflower cut into florets and tossed with 2 tbsp EVOO, 1 tsp each cumin, coriander, smoked paprika and sumac. Salt flakes and pepper to taste. Seeds from 1/2 pomegranate Handful of rocket leaves to sprinkle over Roast the cauliflower florets on a paper lined baking tray in the spices and olive oil at 190C fan for 25 minutes or so until nicely coloured. Last week I received ‘Sebze’ by @ozlems_turkish_table published by @hardiegrantuk. I have been blown away by this Turkish vegetarian cookbook, and I want to cook every single dish. Follow Ozlem and get her book, you will not regret it. In the picture if the first recipe I cooked from the book: a bean salad with a creamy tahini recipe. Next day, slightly pan fry cook it, not all the way through, only until it is slightly brown. Take it out of pan & shred the chicken pieces in tiny. Spread shredded chicken on the wrap along with the filling mentioned below. Secure it tight and well in the wrap before placing it into the oven (secured with foil & toothpick helps).
