I was today years old when I learned a Bloody Mary w/gin is called a red snapper. Bloody Mary’s are acceptable at all times of the day in the Dolgucci house. I love this mix Durty Gurl. Cute packaging with the pinup girl, no preservatives, non gmo, and made in 🇺🇸 ! I like adding a shot of pickle juice too (this week bread and butter). Today’s dinner wasn’t what I had planned. I had veggies peppered for something else, but I was craving tots. And like most of my creations, I was hungry and wanted something that could be thrown together quickly w/ingredients that needed to be used up (in this case spinach, havarti cheese, and a carton of egg whites). Recipe : eggs (and or liquid egg whites), cheese of choice (I used havarti) , breakfast meat of choice: ham, sausage, pepperoni ( I like applegate naturals maple chicken sausage - no nitrates, no antibiotics), veggies of choice (I used spinach, mushrooms, and purple onion), garlic powder, onion powder, salt, pepper, and TOTS (I like Alexia potato puffs- they’re lightly seasoned and of course non gmo!) Preheat oven to 375. Spray a 9 x 13 oven safe class dish. In a bowl, beat 8 eggs and 1 cup of egg whites (equivalent to 5 eggs)- you could also use 12-13 whole eggs OR 2 1/2 cups egg whites- add salt and spices to taste. (I used garlic powder and onion powder.) Add 1 1/2 cups shredded cheese. Set egg mixture aside. Cut veggies of choice and spread across baking dish. (I used 1/2 purple onion, 1/2 yellow bellow pepper, 8 oz mushrooms, and covered with a layer of spinach. I would’ve preferred without spinach, but the spinach was going bad and needed to be used.) Season veggies with salt and spices of choice. (I used salt, pepper, garlic and onion powder.) Slice sausage links and spread over veggies. Pour egg mixture over veggies & meat. Top with frozen tots. My mom has been making this egg casserole every Christmas morning for as long as I can remember but I’ve already made it 3 times this year because why should I limit my favorite breakfast to just once a year? When my husband first started joining us for the holidays we tweaked the recipe to be gluten free and haven’t turned back since but you can use any bread you fancy 🤗🙌🏻 It’s simple, is made ahead to just pop in the oven the next morning morning, and a crowd pleaser every time. Thanks Mom love you! 🧡 @kyess4 - 10 eggs - 3 cups milk - 2 cups shredded cheddar cheese - 16 oz pork sausage (best with Jimmy Dean’s Hot sausage) - 6 cups cubed bread (Canyon Bakehouse Mountain White is a great one for this) - 1 tsp salt - 2 tsp mustard - Pepper to taste 1. Cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. Set aside on a paper towel covered plate. In large mixing bowl, combine eggs, milk, mustard and salt; whisk well. 2. Distribute the cubed bread evenly in a buttered 9 x 13 x 2 inch baking dish.
