It is loaded with lots of vitamins, minerals and insoluble fibre. Cabbage also contains good amounts of polyphenols and sulfur compounds. There has been some research to suggest that cruciferous vegetables like cabbage contain many powerful antioxidants such as sulforaphane and kaempferol that help to decrease inflammation in the body. (1) Cabbages can be eaten raw as part of a salad or coleslaw, they are also delicious when combined with other vegetables to make coleslaw. Beetroot such a beautiful vegetable. They are delicious baked or boiled and then added to all sorts of salads and meals. A small amount of beetroot added to a juice also adds extra flavour and nutrients. Purple/ blue coloured vegetables and fruits contain the pigment Anthocyanins, this is what gives them their distinctive colour. Anthocyanins also have many antioxidant properties that help to protect the cells from damage. Beetroots are also a great source of fibre and have a superior nutritional profile being rich in vitamins A and C, they are also rich in minerals such as calcium, iron, folic acid, manganese and potassium. I like to include them in my beetroot and lentil tabbouleh. Make up a tabbouleh recipe of your choice and then add in 1/2 cup cooked lentils and a small grated beetroot it is Devine!! A great recipe to make with this kids on a rainy day and the best part is itโs a recipe the whole fam can enjoy ๐๐ผ โ โ โ โ โ โ โ โ โ INGREDIENTS 1 ยพ cups plain flour 1 teaspoon baking powder ยฝ teaspoon salt ยฝ cup maple syrup or honey ยผ cup Greek Yogurt ยผ cup coconut oil melted 2 large eggs 3 tablespoons lemon juice plus zest of one lemon ยพ cup blueberries fresh or frozen 1 tablespoon flour for coating blueberries 2 tablespoons grated lemon zest INSTRUCTIONS 1. Preheat oven to oven to 180ยฐC. Grease and flour an 8x4 loaf pan. 2. In a small bowl, combine the flour, baking powder and salt. 3. In a separate large bowl, beat the Greek yogurt, honey, coconut oil, eggs and lemon juice; stir the dry ingredients into the wet ingredients and whisk until mixed through. 4. In a small bowl, toss the blueberries with flour to prevent them from sinking into the loaf. Gently fold into the batter along with the lemon zest 5. Transfer to prepared loaf pan and bake in the preheated oven for 45-55 minutes or until a toothpick inserted in the center comes out clean. Did you know it's Nutrition Week? ๐ฟ The big focus this year has been on increasing our vegetable intake - aiming for 5 serves a day (we generally are only getting half of this). ๐ ๐๐ ๐ฝ๐ถ Nutrition does not need to be complicated or expensive. Whilst there are some basic guidelines we like to follow there is also not one size fits all approach (so I believe) - we need to listen to our bodies (do you bloat after eating quinoa for example?), look at our lifestyles (are you breastfeeding or training a lot??) and the time we have to find the best way for us to nourish our bodies and enjoy food.
