I'm so glad it's finally close to being done! โข Chicken Cordon bleu casserole 6-8 Tyson chicken patties, cut into pieces 1-2 cups chopped ham Mix - 8oz cream cheese mixed with 1 stick of butter, tsp salt, 1 Tbsp mustard, 1tsp lemon juice Layer the chicken and ham in a 9x13 dish, pour sauce over and mix all together. Top with 1-2 layers of Swiss cheese and bake for 40 minutes at 350ยฐ. Broil on low for 2 minutes to crisp up cheese ๐ Enjoy!!!! In exactly 52 weeks from now I will be recovering from an epic London Marathon! I have entered through a charity close to my heart and am very much going to need the full year to train and prepare. The one and only time I have completed a marathon (also London) was in 2013 when I had so many training injuries I had to walk the second half and completed in 6 hours. This time I know what Iโm up against. I entered the ballot last year and didnโt get in and then left it too late to prepare properly. Not this time. Tomorrow is Day 1, Week 1 of 52 and Iโm sick so itโs a great start!! ๐คง๐ค My big scary goal is to complete in a sub 4 hour time, whilst keeping shin splints, hips and knees all in good working order. I havenโt completed more than a 10km run since then and barely a handful of 5km really if Iโm totally honest. My mindset has shifted and I am all in on a growth mentality. I am always trying to be better. I set high goals and I set them higher when I get close to achieving them. Just to give you all an update over this past weekโฆ Dad and I have tournament here on the home pond tomorrow.๐ โข I started off the week with a lower unit gear oil leak. What could have been a tragedy was only a small inconvenience thanks to Donleyโs Marine in Benton, Kentucky!! They took my boat in on Tuesday and had me back on the water on Wednesday. I spent a grand total of 45 minutes on the water before tragedy struck again. In those 45 minutes I was blessed with that quality smallmouth!๐ฃ๐ฅ Shortly afterwards, my trolling motor took its last breath and was too far gone for a simple cheap fix. Fortunately, NextGen marine, located here in Murray, Ky., is planning on getting us on the water just in time for the tournament tomorrow with a new trolling motor!! โข Of course, here is another example of how significant of a role my parents play in my dream. I absolutely COULD NOT do this without them. They are two of the most selfless people that I know and two of the greatest Christians that I know. I am so thankful for them!! โข Lord willing, we will get to compete tomorrow! Because I havenโt been able to practice this week and keep up with the fishing, this tournament will prove to be rather tough. In geological terms, Milos Island is a new landmass. Only 3.5 million years ago it was no more than a volcanic dome in a shallow sea. Successive eruptions brought the island to the surface and expanded to 55 square kilometres of jagged and colourful rocks and cliffs. This hike was an up-close look at how far the island has come and where it came from. The massive crater is now a gently sloping field of wildflowers over 1.5 kilometres long. The rim is peppered with steaming hot sulphur riddled vents. Finally, there is a sweeping view of the rocky coast line adored by sultry secluded beaches along the Mediterranean shore. I am going to get really honest for a moment and it would mean a lot to me if you would read this to the end. Recently I came to a fork in the road called life. I could continue on the same path mentally bashing my head on the wall trying to do all the things, as a mom, business owner, retail employee or friend. Or I could take some risks professionally in my retail job and business. Making a choice to switch to a new company that has the drive and values that align with mine as well as ask for more responsibility at my retail job has been a huge change. Being able to have multiple streams of income to keep up with the costs of everyday life as well as put money to the side for a down payment is a necessity nowadays. With rising costs and interest rates I need all the extra income. Putting at least $50+ per paycheck into my savings is my first step to achieving my goal. I am beyond excited to see where the future lies. All because I finally I took the courage to see my own self worth and say I am worth more than what I have allowed myself to achieve. Knowing that my dream of having my farm to table country retreat and Mushroom inspired house is within my reach because I made some changes. The chance to raise my youngest (and grandkids way in the future like 10 years) in the wild of the woods is within my grasp. LIFE IS A JOURNEY Goal settingโฆ..Anyone can do this, young or old. About 14 months ago I had a light bulb moment. I looked into the mirror and realised that it was time to do something about the excess weight I was carrying. I totally disliked what I saw that day in the change room. Anything I tried on that day looked terrible on me. This was the exact moment when I knew things had to change. I approached my brother who put me on the right track. He became my mentor and my motivator. So I started this journey by setting myself some goals. Big goal: 15kg Small goals: 500g - 1kg a week Was this achieved, most definitely. I went from 79.9kg to 65kg and I feel great. Today we performed a mulch job and cleanup in Worcester. The clients were thrilled with the transformation. ๐๐ We have proudly served this family since 2019. We will be working on the grass in the front soon. Excited to tackle a lot more mulch jobs this upcoming week. We also have cleanups and mowing on the schedule. We are kicking it into high gear. This Monday we will be working in Paxton and Worcester. Tuesday in Milford. The remainder of the week will feature jobs in West Boylston, Douglas, and more. The clients were ecstatic with the attention to detail and care that we display. Our team did an exceptional job here with natural pine mulch. The mulch was procured from Bells Lawn and Garden. The smell of fresh pine, hand dug edges, weeding, and bed sculpting was satisfying work. We will return to help the clients level their beautiful healthy lawn on the side of the garage. We will also be providing a quote for new sod in some of the few bare spots in the back yard. We locked in new future work as a result of our efforts. When we work, we give it ๐ฏ% and the neighborhood quickly takes notice. Grateful and blessed. Today we started off with a cleanup and then onto a beautiful property for some weeding, garden bed creation, and fresh natural pine mulch. Today's mulch was procured at Bells Lawn and Garden Center. Tomorrow we will return to finish this meticulously cared for property in Worcester. After job completion, we will post all the photos. We will planting our signs all over Worcester County starting tomorrow. We need to order more signs soon. The neighbors were impressed with our work and we handed out a lot of business cards as a result. It's rewarding when your hard work is immediately noticed by so many. ๐ Thankful and blessed for all the work we have ahead of us. We will be back onto lawn cleanups after this job is completed. Then it's onto mowing believe it or not. Typically we start May 1 mowing, however mother nature has different plans for us this season. All the mowers and trimmers have been tuned up. We are ready for anything and everything. Still hiring 6 more people if anyone is looking for a job with a wonderful family business.
