Yesterday was such a glorious day I decided we should make the most of it and do what I love most. Which is to drive my Morris to our favourite pub The Square & Compass at Worth Matravers, Dorset for a pasty and a pint of local cider. And then drive to nearby Kimmeridge for a snorkel across the bay and back. It was the first time Iโve had a chance to try out my new wet suit which my friend @sarahabigailjewell persuaded me to buy this time last year when I stayed with her in Cornwall. It was great not to feel the cold! I just wish we lived closer to the sea so I could go more often. I also realise I need to buy a brightly coloured float for safety. Sunday Night Fakeaway !!!! & I can honestly say , I enjoyed this as much as I would have done a takeout !!!! & I feel less groggy for it, so win, win. Egg fried rice....2syns , but only because I used some sesame oil, it's absolutely fine without, but just tastes so much better for it & the 2syns for it are totally worth it !!!! I used #slimmingeats hoisin pork noodles recipe but did it all in the slow cooker & added the noodles at the very end. & Sticky Chicken recipe from the Slimming World Website, so this whole dinner was 5.5syns, and worth every single mouthful !!! I did also have 3.5syns worth of prawn crackers on the side, but 9syns in total for a meal this yummy, instead of ordering in a Chinese was so so worth it . We think itโs safe to say, soup season is officially here in Victoria! The days are getting shorter, the weather is cold! Itโs the perfect combination to make soup. But with this season also comes more coughs and colds ๐๐ผ In our pumpkin soup we love to add more than just pumpkin, we add in immune boosting ingredients- ginger, garlic, lemon and home made bone broth as well as a few other veggies. Shopping list ๐ฅฃ โช๏ธ Pumpkin (butternut is are our fave) we bought 3kg to make enough for roughly 10 servings โช๏ธ One Zucchini โช๏ธ Mushrooms (yes!) 2-4 depending on how much soup youโre making. โช๏ธ Bone broth, home made (see below) โช๏ธ Ginger โช๏ธ Salt\pepper Bone broth- We love savings the carcass from a home made roast chicken or you can buy a carcass from the butcher, 50g ginger, whole garlic bulb (roughly peeled and chopped), a few celery sticks, carrots and a lemon chopped up. Place all of this in a slow cooker, pressure cooker or stove top and cover with water. Allow to cook on low for minimum 8hrs. Scoop out the veggies and chicken, use a sieve to collect all the small pieces. Use this as your liquid for the pumpkin soup. Add the veggies, boil them until soft, grate a knob of ginger into the mix and blend. NIKKI'S EASY-PEASY CHICKEN TACO SOUP......(and Mexican Seasoning mix) Serves 10โฃ 1 point per serve Over on my Facebook page today, I did a cooking demo, making my Mexican seasoning mix and popular Easy Peasy Chicken Taco Soup. Mexican seasoning mix: 1tsp paprika 1tsp smoked paprika 1tsp cumin 1tsp coriander 1tsp dried oregano ยผtsp chilli powder/cayenne ยฝtsp garlic powder ยฝtsp onion powder Combine and store in a small airtight jar, or a clean empty spice jar. (Multiply these quantities to fill your container ๐) Taco Soup: 2 onions, chopped โฃ 2 cans chopped tomatoes โฃ 2 cans Mexican style tomatoes, I used Wattieโs 2 cans corn kernels, drainedโฃ 2 cans kidney beans, drained โฃ 2 chicken stock cubesโฃ 2 cups waterโฃ 2 large chicken breasts โฃ 2 Tbs Mexican/taco seasoningโฃ 1/2 tsp saltโฃ 1 cup red lentils, if you like a thicker soup โฃ Saute onions for a few minutes, then add all ingredients to slow cooker stirring to combine. Place chicken breasts on top. Slow-Cook for 6-8 hours, or pressure cook for 20 minutes. Remove chicken breasts and shred. Return chicken to soup, stir, and keep warm until ready to serve. Taste and season to taste. To serve: Top with a little grated cheese, tomato, and avocado. For a crunchy garnish, slice up one tortilla and cook in a dry frypan until crispy.
