CURRIED KEBABS Pack of Chicken thighs 2 Tbls lemon juice Salt and pepper 2 Tbls curry powders of choice(scan to check if Syn free. I used Tesco mild) 1/2 a big pot of fat free Greek yogurt ( can add extra garlic, fave curry spices or chili I kept it simple as kids like these too) οΏΌ I marinated the chicken thighs all day in the rest of the ingredients but Iβve done it without marinating and it is fine still. Put them on skewers, I had red and green peppers and onions. The children didnβt have any veggies on theirs. Cooked in pre heated oven 180 for 45 mins, check half way and turn if you like. I served with fat free Greek yoghurt mixed with mint sauce. ( syn in how much you use ) sweetener salt and pepper. Today has been amazing I was dreading doing this run as Iβve done it in the past and it put me off running. But I can safely say despite the weather, I actually really enjoyed it. It was really well organised, my run club had organised where our cheer squads would be around the route, they were ace ! I aimed to get it done between 2 hours and 2 hours 15, and I did it exactly that in 2hours 6. Having red bull on the finish line was a needed although I was temped to ask if they had any sugar free ones lol, also treated myself to an espresso martini after which I deserved. Cooked the chicken in the oven as per the recipe, but rather than drizzle the mix I put the chicken in the bowl to make sure it was fully coated. Had myself a litrle break since thursday evening from here as i was feeling a little down and disappointed with myself. I weighed in and put 2.5lbs on, this shouldnt be an excuse but moving locations for my job has really messed my routine up, previously i was able to go to the gym straight after work for 5pm now i would be getting there at 6.15pm and not getting back home until around 7.30pm at that point i dont want to be cooking and eating after 8pm and my daughter would be starving. I need to change my mindset and plan plan plan, i know ive got it in me as it works for me so i dont know why im not utulising my skill. April has been a total wash out so i really need may to be on track as i have 16 weeks until my holiday A 16lb countdown would be a start for me as that would be a great loss for my holiday so i need to get this show on the road.
