According to @zoeharcombe who wrote her PhD on this topic, none of the four Cochrane reports (Gold standard in academic research) on saturated fat and health outcomes has ever found anything for any dietary fat intervention (reduced or modified, total or saturated) for anything related to CHD events, strokes or non-fatal heart attacks. There have been no findings against total fat ever, and there have been no findings against saturated fat that have withstood scrutiny (as reported in the Cochrane publications themselves). https://www.zoeharcombe.com/2020/06/cochrane-saturated-fat-reviews/ The only evidence that links red meat to any negative health outcomes is epidemiological. This is correlation and not causation. Often the studies are based on poorly done questionnaires where meat is included in things like lasagna and pizza. It’s not the meat causing the problem, but the sugar and refined carbohydrates and seed oils that they eat with it. There is no research to my knowledge linking people who eat good quality unprocessed meat with any negative effects, if they’re not eating all the other rubbish alongside it. Some of the research out there is also funded by Seventh-day Adventist and other vegan groups. It’s very hard to get real information these days without bias. The moral of the story is, don’t believe everything you read. Make sure you look at who funded the study and if there are any conflicts of interest.

Simplified Pad Thai with Shirataki Noodles serves 4 ready in 30 mins 2 packs of Shirataki noodles (Roughly 200g/ ½ lb. each), drained and rinsed 1 1/2 tbsp fish sauce 1 1/2 tbsp soy sauce 1 tbsp sugar 2-3 tbsp fresh lime juice (to taste) 1-2 tbsp coconut oil or any oil you prefer (for cooking) 1 tbsp minced garlic 200g (roughly ½ lb) fresh shrimps 2 eggs, lightly beaten 30 g bean sprouts Granish : 3 green onions, finely sliced 1/2 cup fresh cilantro leaves, torn 35 g unsalted toasted peanuts roughly chopped Lime wedges Instructions: 1. Prepare the Shirataki noodles according to package instructions. Rinse them thoroughly under cold water and drain well. Set aside. 2. In a small bowl, mix together the fish sauce, soy sauce, sugar and fresh lime juice. Adjust the seasonings to your taste preference. Set the sauce aside. 3. Heat the coconut oil in a large skillet or wok over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant. 4. Add the fresh shrimps to the skillet and cook until they are cooked through, about 2-3 minutes 5. Push the shrimps to one side of the skillet and pour the beaten eggs into the empty side. Allow the eggs to cook undisturbed for a few seconds until, then scramble them with a spatula until fully cooked. 6. Add the prepared Shirataki noodles and bean sprouts to the skillet, along with the sauce mixture. Toss everything together until well combined and heated through, about 1-2 minutes. 7. Remove the skillet from the heat and stir in half of the sliced green onions and torn cilantro leaves. 8. “The majority of studies, and especially the higher quality studies, showed that those who avoided meat consumption had significantly higher rates or risk of depression, anxiety, and/or self-harm behaviors” (Meat and mental health: a systematic review of meat abstention and depression, anxiety, and related phenomena, 2021). It is not a coincidence that if you eat a non-species appropriate diet that you will suffer consequences. You cannot be a vegan and get all the nutrients that you need, either for your body or your brain. This is why supplementation is crucial if you eat a diet without any animal foods. But even then, in my opinion, it is not ideal. There is such a huge increase in mental health issues, and I believe that the food we are eating, and the food we are avoiding, has something to do with this. Do you agree?

I know that feeding a family can be difficult when everybody has their different requirements. As a general rule of thumb, I try and make one thing that I can add carbohydrates to for the others or that I can subtract the carbohydrates from for me. Last night I made burgers. I just didn’t have the bread. I really enjoyed my meat and veggies and didn’t feel I was missing out at all 😋

Let me tell you about my client Julie ⬇️ Julie came to me struggling with classic insulin resistance symptoms. Many of us love our dogs, but did you ever think of your four legged friend as being good for your health? There is actually lots of research linking the health benefits of keeping pets such as dogs. In fact, I recall seeing a very funny meme during the lockdowns with the dog hiding from all the family members that were so desperate to take it out, as outdoor exercise was one of the few allowed activities 🤪 Dogs also love us unconditionally, which is great for our mental health. Positive interactions with our pet such as cuddles and fun play increases oxytocin, the hormone that can reduce blood pressure and cortisol levels. Dogs can also help calm our anxiety and provide companionship which is very beneficial for our stress levels and overall heath. These are one of my all time favorite muffins I make! I almost always bring a batch when I travel. They are a great breakfast or snack! With Spring breaks coming up I figured I would share it again! PRO TIP: freeze them and store them in a HARD tupperware if putting them in checked luggage so they aren't crushed into crumbs by the time you land! I have had that happen before😫 But if you forget, just eat it with a spoon, it will still taste good. Reese’s Muffins Makes 18 Muffins 1 Muffin:277 Calories, 25g Fats, 3g Net Carbs, 7g Protein Filling: 6 oz cream cheese, SOFTENED 1⁄2 Cup peanut butter 1⁄4 Cup powdered erythritol 1 egg 1⁄2 tsp vanilla extract Muffins: 1⁄2 Cup butter, melted 1 Cup powdered erythritol 1⁄4 Cup unsweetened almond milk 2 eggs 1 tsp vanilla extract 2/3 Cup sour cream 2 Cups almond flour 1⁄2 Cup unsweetened cocoa powder 1 1⁄2 tsp baking soda 1 tsp baking powder 1⁄2 tsp salt 1 Cup (160g) sugar free chocolate chips Directions: 1. Preheat the oven to 350F. Line a muffin/cupcake tin with parchment liners. 2. In a large bowl beat the eggs with the erythritol on high with a hand/stand mixer for about 1-2 min (or mix by hand with a whisk). Then mix in the melted butter, sour cream, almond milk, and vanilla extract. In a separate bowl mix together the dry ingredients EXCEPT the chocolate chips. 3. Slowly combine the dry and wet ingredients a little at a time. Then fold in the chocolate chips. In another bowl mix together the cream cheese and peanut butter. Once smooth mix in the egg and vanilla extract. Finally mix in the sweetener. 4. Pour 2 Tbsp of the batter into the 18 parchment liners then top with 1 Tbsp of the peanut butter filling and top with the remaining batter (1 Tbsp per liner). 5. Bake the muffins for 35 mins until a toothpick comes out clean. DO NOT overbake.
