COCONUT & ROASTED RED PEPPER TOMATO SOUP (Serves 4-6) 🍅🥥 By @thezestylime 1 tbsp olive oil 1 medium onion, diced 3 large cloves garlic, minced 500g cherry tomatoes 400g jar roasted red peppers 1/2 cup red lentils 2 tsp red wine vinegar 1 tsp oregano 3 tbsp chopped fresh basil 1/2 tsp salt 1/4 tsp chilli flakes 3 bay leaves 1.5 cups vegetable stock 2 tbsp nutritional yeast 400ml can All Natural Coconut Milk To garnish: Vegan sour cream or coconut yogurt Small basil leaves Croutons (homemade or store-bought) 1. In a large pot, heat oil on medium and sauté until onions are translucent and garlic is fragrant, about 2-3 mins. 2. Add whole cherry tomatoes, roasted red peppers, red lentils, red wine vinegar, oregano, basil, salt, and chilli flakes, and cook for 5-7 minutes until tomatoes are softened. 3. Add vegetable stock and bay leaves and bring to gentle boil. Cook, partially covered, for 10-12 minutes. 4. Remove from heat and transfer to a blender, removing the bay leaves first and setting aside. Blend until smooth. 5. Pour the soup back into the pot and stir in coconut milk, nutritional yeast, and the previously set aside bay leaves. 6. Bring back to a gentle boil and cook until thickened to your liking, about 10-15 minutes, stirring occasionally. 7. Red Cabbage Burritos by @veganer.wandel 📝 Recipe for 4 burritos 250 g red cabbage 2 red onions 1 lime 4 large wraps 4 small wraps 200 g vegan sprinkled cheese Guacamole: 2 avocados 1 lime, juice Pinch of salt, pepper 2 cloves of garlic, pressed Walnut hack: 120 g soy granules Vegetable broth 100g walnuts oil for frying 2 tbsp soy sauce 1 teaspoon smoked paprika 1/2 pepper 2 tbsp date syrup Toppings: Vegan mayonnaise Fresh parsley Preparation: 1. Grate red cabbage and onions into thin strips and mix with the juice of a lime 2. Mix all the ingredients for the guacamole 3. Cook the soy granules in vegetable broth for 5 minutes and drain. SWEET POTATO SAGE MAC N CHEESE By @terianncarty Ingredients 400gr fusilli 2 cups pasta water 3 tbsp olive oil Pinch chili flakes 1 small onion diced 2 cloves garlic minced 1 small sweet potato roasted (yields approx 1 cup) 1/2 cup cashews soaked in water for 4 hours 2 tbsp nutritional yeast 3/4 cup vegan cheddar 1 tbsp dijon mustard Pinch salt and cracked pepper 1/2 medium sized zucchini sliced into rounds 12 sage leaves 2 tbsp chili miso sauce (optional) Method Preheat air fryer to 375. Using a fork prick sweet potato several times and place in the air fryer. Cook for 40 minutes. Once cool enough to handle remove tough skin and add flesh to a blender. Heat olive oil and chili flakes in a pan. Add onion and garlic and cook until fragrant. Add onion and garlic to the blender with cashews, nutritional yeast, cheese, dijon salt and pepper. Add 1 cup of pasta water and blend until smooth and creamy. Use the same pan to fry the zucchini rounds, set aside. Add 1 more tbsp oil to the same pan and fry sage leaves until crispy. Add cooked pasta into same pan and add cheese sauce on top. Finish with remaining pasta water. Texture should be creamy and smooth. Ladle into bowls and top with fried zucchini and sage. Finish with chili miso sauce and a pinch more salt. These sweet pancake tacos are the most delicious weekend breakfast or snack option!🤩You can make the pancakes in advance and freeze them and you can get creative with the fillings😊 ✨Ingredients: 🥄160 gr of buckwheat or oat flour 🥄30 gr of vanilla plant based protein 🥄2 tbsp of biome chaga mushroom blend 🥄2 tsp of baking powder pinch of salt 🥄2 tbsp of coconut sugar 🥄300 ml of plant milk of choice 🥄2 tbsp of apple cider vinegar 🥄1/2 tsp of vanilla extract 🥄3 tbsp of applesauce In a small bowl, stir together the milk and apple cider vinegar. Set aside.In a medium bowl, stir together the flour, protein, chaga blend, baking powder, coconut sugar and salt.  Add the extract and applesauce to the milk and mx to combine. Add to the dry ingredients bowl and whisk until the batter is smooth. Heat a tbsp of coconut oil in a non-stick pan over medium heat. Pour a heaped tbsp of batter in the pan and cook for a couple of minutes on one side, then flip to cook the other. Continue until you use up all the batter. For the fillings, use plain yogurt, strawberry yogurt, a couple of spoonfuls of yogurt mixed with turmeric powder and a couple with cacao powder. I paired the plain yogurt with cinnamon cooked apples and almond butter, the strawberry yogurt with banana and tahini, the turmeric with raspberry compote and coconut and the chocolate yogurt with baked pear slices and cacao nibs. You can omit the protein powder and add more flour and omit the sugar if you are planning to use syrup on top. I prepared this potato salad last night before I went to bed. I used Hellman’s vegan mayo,chopped onion,Dijon mustard and frozen garden peas. Now I am having it as a post workout meal with some stir fried seitan,garlic and pak choy. I fried in olive oil and seasoned with pepper and reduced salt soy sauce. Super tasty. High plant protein. I’m satisfied. 🍅 Vegan Oven-roasted Stuffed Tomatoes By @plantifulalice 🌱 You need : 2 large tomatoes 200 g fresh mushrooms 1 plant-based steak 1 onion 2 cloves garlic 50 g shredded vegan cheese 1 tbsp oregano Olive oil Basmati rice 🌱 Thinly mince onion and garlic, cut the mushrooms and steak in tiny pieces. In a pan, add a little oil and cook onion and garlic 2 min. Add the mushrooms, cook until golden. Add the steak, vegan cheese, oregano, salt, pepper. Stir, cook until the cheese slightly starts melting. Turn off the heat. Cut off the tops of the tomatoes and remove the flesh. Cut it in chunks and add it to the pan. Mix well and stuff the tomatoes, place their top on them and bake at 180°C for 30 min, and then at 190°C for 18 more min. Creamy roasted tomato + Carrot soup! By @youeatlikearabbit WHAT YOU NEED⁣ roast:⁣ 5 tomatoes on the vine, quartered⁣ 5 cloves garlic, smashed with knife left whole⁣ 1/2 onion, roughly chopped⁣ salt + pepper⁣ olive oil⁣, optional ⁣ boil: 6 carrots, roughly chopped⁣ 4 cups broth⁣ ⁣ blend: 1 can chickpeas, drained and rinsed⁣ 1 cup water ⁣ 1 t salt ⁣ 2 t apple cider vinegar pepper, to taste⁣ ⁣ HOW TO MAKE Preheat oven to 425 degrees, place the vegetables on a baking pan and lightly drizzle with olive oil. Evenly season with salt and pepper. Bake in oven for 25-30 minutes. ⁣ ⁣ While vegetables are cooking, bring 4 cups of broth to a boil and add carrots. Cover and reduce to a simmer until fork tender. ⁣ ⁣ Transfer carrot/broth mixture to a blender. Blend on high for at least 1 minute until smooth. Transfer back into soup pot. Transfer roasted vegetables into blender next, along with the chickpeas, water, salt, pepper to taste, and apple cider vinegar. Blend on high speed for at least 1 minute, until smooth. Transfer to large soup pan with carrot mixture. Noodles with Crispy Tofu, Veggies & Edamame by @janetsmunchmeals 2 servings noodles, cooked, drained and rinsed 1/2 of a 14 oz. package tofu, drained, pressed to remove water, and diced in small cubes Oil and garlic powder for cooking 1/3 cup edamame 1/2 cup finely shredded red cabbage 2 carrots shredded or very finely chopped Sesame seeds, cilantro and red chili flakes for serving Sauce: 1/4 cup vegetable broth 1 tbsp + 2 tsp soy sauce 1 tbsp sesame oil 1 tbsp maple syrup 1 tbsp rice vinegar 1 tbsp ginger paste or 1/2 tsp ground ginger 1/4 tsp garlic powder 1 tsp sriracha or chili garlic sauce 1 tsp cornstarch + 2 tsp water whisked together Whisk together the sauce ingredients in a bowl and meanwhile, cook, drain and rinse the noodles (you can drizzle small amount of toasted sesame oil and toss). Meanwhile, in a large pan, add the tofu cubes and a bit of sesame oil (or other oil). Cook on medium heat until lightly browned, then flip cubes and cook a few more minutes then generously sprinkle with garlic powder. Add the chopped carrots and red cabbage, push to the side, and add the sauce. Let the sauce bubble for a minute or so until it thickens. Then add the cooked noodles to the sauce. Gently toss. I made a plant risotto made with high protein chicken style seitan(aka fake chook),mushrooms,snow peas,garlic,onion,Italian passata sauce,full body balsamic vinegar of Modena,Himalayan rock salt,black ground pepper,dried basil leaves and vegan cheese style nutritional yeast. Sourdough Sunrise Pizza bowl Ingredients: - Cauliflower Alfredo sauce - Pecan lentil Bolognese - Baby marrow -Mushrooms - Garlic - Spring onions - Tomatoes - Olive oil - Seasonings (such as salt, pepper, and herbs) - organic 24 hour, fermented sourdough (optional, for serving) Instructions: 1. Preheat your oven to 200°C. 2. In a bowl, mix together the cauliflower Alfredo sauce and pecan lentil Bolognese until well combined. 3. Cut the baby marrow, mushrooms, garlic, spring onions, and tomatoes into desired sizes. 4. Arrange the cut vegetables over the mixed Alfredo and Bolognese in a baking dish. 5. Drizzle olive oil over the vegetables and sprinkle with your choice of seasonings, cashew cheese and olive tapenade. 6. What recipe do you like the most? by @Plantyou 1️⃣ Chana Masala Inspired Chickpea Coconut Curry Ingredients 1 tbsp olive oil 1 yellow onion, diced 3 cloves garlic, minced 2 tbsp curry powder 1 tsp cumin ½ tsp turmeric ½ tsp paprika ¾ tsp salt 1 can crushed tomatoes, 15 oz 1 can coconut milk, 13.5 oz 1 can chickpeas, drained and rinsed 1 tbsp almond butter, optional 1 handful spinach Instructions In a pan over medium heat, add the onion and olive oil. Stir until fragrant, approximately 3 minutes. Next, add the garlic, curry powder, cumin, turmeric, paprika and salt. Stir until fragrant, approximately 5 minutes. Add the crushed tomatoes, coconut milk, chickpeas and almond butter. Bring to a simmer, then lower the heat, and cook on low for 6 to 8 minutes, until everything is combined and warm. In a pot over medium heat, add the onion, carrot, celery and garlic. Sauté until softened, approximately 5 minutes. . Add the vegetable broth, drained and rinsed can of white beans, lemon juice and lemon zest to the pot. Bring to a boil, then simmer for 10 minutes covered. . Stir in the kale, fresh dill and orzo and cook for another 10 minutes until the orzo is cooked through, keeping the lid off and stirring intermittently to prevent the orzo from sticking. Stir in the tahini and turmeric until combined and heated through. Enjoy!

By @thedishonhealthy 🥗 (serves 3-4) Suggested Greek-Style Vinaigrette 3/4 cup of good-quality olive oil 1/4 cup white wine vinegar 1 Tbsp fresh lemon juice 1 Tsp of dried oregano 1/2 Tsp garlic salt 1/2 Tsp minced organic garlic 1 Tbsp of dried parsley 1/2 Tsp ground pepper 2 Tsp of honey or agave 🍯 Garlicky Mushroom Topping Ingredients ~2.5 cups any mushrooms 1 Tbsp of olive oil sea salt and black pepper, to taste 2 Tsp of minced garlic 1 Tbsp finely chopped parsley (optional) ~2 Tbsp of low sodium tamari sauce or soy! 1-2 Tbsp of red wine Instructions The Orzo salad has 5 cups of cold, but cooked orzo, 1.5 cups of finely chopped bell peppers in every color, 1.5 cups of halved raw zucchini rounds sliced in quarters, 1 tablespoon of fresh parsley and 2/3 cup of creamy feta chunks or crumbles, I always buy goat feta! 🌱 if you wanted to switch it up- grilled halloumi or fresh buratta would take this salad over the top! Mushroom Topping Instructions In a skillet on medium-high heat, warm up your olive oil. Add the garlic and stir often as it burns quickly. Throw the mushrooms in, stir and season with sea salt, tamari and pepper. Allow them to sautée and soften ~4-5 mins. Finally, add your wine and scrape the bits and pieces off the pan, stir for an additional ~2 mins). Toss the sautéed mushrooms into the orzo salad; as opposed to just adding them on top. Creamy One Pot Lasagna! By @plantbased.traveler Ingredients: 6 lasagna sheets 10 oz vegan mince * 2 heaping tbsp tomato paste 32 oz can crushed tomatoes 32 oz vegetable broth or water (simply use tomato can 👆🏼 to measure) 1 cup unsweetened plant milk (I like extra creamy oat milk) 1 medium sweet onion 3 garlic cloves 1 small carrot 1 celery stalk 1 tbsp olive oil 2 tsp Italian seasoning 1 tsp dried basil 1 tsp paprika 1/2 tsp crushed fennel seeds Salt and pepper to taste Method: Finely dice peeled/washed onion, garlic, carrot and celery. Heat up a small dutch oven (or non stick pot or deep sauté pan), cook vegan mince until browned and crumbled, then set aside. Add olive oil, and sauté diced vegetables for 5-10 minutes until fragrant and softened, then add mince crumbles back to the pot. Add tomato paste, stir for a minute, then add crushed tomatoes, plant milk, broth/water, herbs, and spices. Break lasagna sheets in 2-3 pieces, add them to the pot, and bring everything to a boil. Simmer for 20 minutes, stirring occasionally, or until pasta is al dente. Enjoy! By @Plantyou 1️⃣ SMASHED POTATOES Ingredients 6 Yukon gold potatoes 2 tsp kosher salt ½ tsp garlic powder cracked black pepper, optional, to taste olive oil, a drizzle to taste 6 servings Vegan Green Goddess Dressing Instructions In a large pot, add 6 cups of water and 1 teaspoon of salt. Add the yukon gold potatoes, and bring to a boil. Reduce the heat, and allow the potatoes to cook for 20 to 30 minutes depending on the size of the potatoes, until fork tender. Meanwhile, line a baking sheet with parchment paper, and preheat the oven to 400F. Drain the water, and place the potatoes on the baking sheet dispersed at least 1 inch apart. Using a butter knife, make a soft slice about halfway through each potato. Then, using the bottom of a cup or a mug, smash each of the potatoes down. Season with salt, garlic powder and pepper as desired. At this time, you can drizzle with olive oil if desired for a more crispy potato, but it's not necessary. Place in the oven, and bake for 30 to 40 minutes until the potatoes are crispy. Enjoy! **Everything Green Sauce** Ingredients 1 jalapeno, chopped, seeds remove for mild sauce 1 handful cilantro, large 1 handful spinach, large 1 cup green onions, roughly chopped 1 clove garlic ¾ tsp salt, or more to taste ½ avocado, stone removed ½ cup raw sunflower seeds, soaked overnight or boiled for 10 minutes 1 cup water 1 lemon, juiced Instructions Combine all ingredients in a high speed blender until smooth. Taste and adjust salt as needed. Enjoy immediately.

Base ingredients; - 1 cup of walnuts - 1 cup of dates (pitted and soaked in hot water for 30 minutes) - 1 tbsp maple syrup - 1 tbsp coconut oil Cashew cream layer; - 2 cups of cashews (soaked in hot water for 30 minutes or more) - 1/2 cup coconut cream - 1/4 cup maple syrup - 1 tbsp coconut oil - 1 pinch of vanilla - 1 tbsp of 🍋 Directions; - Blend the base and set in a square tin - Blend the cashew layer and put it on top of the base - top with frozen raspberries (or any fruit of your choosing) and shaved dark chocolate - put it in the freezer to set, cut it, then keep it in the freezer (this dessert stays in the freezer). Breakfast 😋 Trying to move away from maple syrup or processed sweeteners so tried blitzed dates as a natural sweetener 👌 1/2 cup of organic oats in a pan with homemade almond milk, a tsp of ceylon cinnamon and sweetened with dates (soaked 2 chopped medjool dates in boiling water for 5 minutes, blitz the dates and water then added to the oats). Put a tsp each of chia and ground flax in the serving bowl then added the cooked oats and mix. When I was a kid one of my favourite foods was mum’s macaroni with hot dog sausage. 😂 For some strange reason I was craving it today so I decided to make some. I used the Aldi vegan sausage I had in the fridge. I tell you what,it tasted very similar to my Mum’s.I’ve said this before,but there really isn’t anything that you can’t make a plant based version of it. I followed mum’s simple cooking method. For the sauce I fried garlic,onion and mushrooms in olive oil. I then added Italian Passata sauce,salt,pepper,dried basil and balsamic vinegar. Finally I added chopped sausages and let it simmered for a bit . I served it with buckwheat pasta.
