We are coming up on 5 years being plant based together! We decided to try it out after reading Dr. Gregors' book "How Not To Die" and never went back! There are many reasons why we decided to be plant based including mostly health reasons, how animal products affect our body and of course for the animals. My favorite "easy" meal. Brown rice, frozen stir fry mix and tofu. For a sauce with veggie I just mix up some PB2 powder, garlic powder and soy sauce (low sodium tamari) - the PB2 powder makes it thicker like restaurant sauce. So so good. - For the tofu I press it earlier in the day then marinate in teriyaki sauce and garlic powder. Pizza night! We use pita bread as our crust and love it - the large thin kind you get at international markets. ๐Ÿ•the mock sausage crumbles as always were ๐Ÿ‘๐Ÿผ. This dessert is not overly sweet and crazy good. Serves 4-6. Can be served warm or cold. ๐ŸŽApple Crisp๐ŸŽ 3-4 apples chopped 3 dates chopped 1/4 cup water 1 tsp ginger 1tsp cinnamon 1 tsp all spice or pumpkin pie spice 1 TBS vanilla extract ๐Ÿฅง๐Ÿฅง For crumble: 1/2 cup rolled oats 1/4 cup walnuts or pecans 3 dates chopped 1/4 cup Ezekiel cereal or Grape nuts (optional) ๐Ÿ๐ŸŽ In a saucepan place apples, dates and water. Cook over medium heat till soft. Mash. ๐Ÿฅง๐ŸŽ๐Ÿฅง Add in seasonings and turn off heat. Cover with lid and set aside. ๐Ÿฅง๐Ÿ๐Ÿฅง In a small blender cup or food processor add dry ingredients except cereal. Pulse till it's a crumble consistency. Man, comfort food at it's best!!! -Recipe- Broccoli, cheddar casserole. 1 lg pkg frozen broccoli thawed, or two heads broccoli steamed 1/4 yellow onion chopped 1 cup wild rice, cook however you prefer **for sauce** 1/4 yellow onion 2 carrots 1/2 head cauliflower chopped 1/4 c cashews 1 can butter beans, navy beans or any other white bean 1 T roasted garlic, I use the one in a jar 1/2 c nutritional yeast, unfortified 1/2 to 1 small lemon, juiced In sauce pan boil chopped carrot Steam cauliflower or boil with carrot. Add cauliflower, carrot, onion, garlic, beans, cashews, lemon and nutritional yeast to blender. Blend till smooth. In large bowl stir broccoli, rice, chopped onion and cheese sauce together.
