From fresh cut cauliflower to dehydrated goods....preserving food is my favorite! Seeing a cupboard full of jars really gives me a sense of pride. It can be a lot of hard work, but it's well worth it! I should note that cauliflower kind of smells like cabbage when it's in the dehydrator. Who would have thought!? 🤔 These took 12-14 hours at 125°F in a 4-tray Excalibur dehydrator. Additionally, I left them on the counter for another 12 hours to make sure they were bone dry before putting them in jars. Food security is a serious issue that many of us have had to face for the first time in our lives recently. In all of my 38 years, I have never seen grocery store shelves wiped out like they have been lately and it’s reminded me of the importance of knowing how to grow your own food! We try to use what small space we can access every year to at least grow some of our own food - it’s surprising what you can do with a little space! We also want to give this knowledge to our son - when you grow your own food, you take back some control - not only of having food but also that your food is clean and free of pesticides and chemical fertilizers and there is no food more nutritious than the food you grow yourself - it’s practically still alive when you eat it!
