Cake for breakfast? Healthy and delicious? Yes please! Recipe below 👇 Ingredients 2.5 cups self raising flour 0.5 cup quick oats 1.25 cups of buttermilk 2 eggs 1 tsp vanilla essence 2/3 cup olive oil 2/3 cup milk (I used soy milk today but cows milk would also work) 2/3 cup apricot jam 1tbs honey + extra for drizzle Chia seeds Method Preheat oven to 180 degrees. Combine flour and oats in a bowl. In another bowl, add buttermilk, eggs, vanilla essence, olive oil and milk, whisk until combined nicely.Pour the milk mixture into the flour/oats and mix briefly (it is ok if lumps remain). Heat jam and honey in the microwave until they turn to liquid, allow to cool briefly before pouring over the flour/milk mix - stir quickly until all combined. Pour in mix into a greased baking dish. Drizzle over extra honey and sprinkle with chia seeds. Place in oven and bake for 30-40 minutes until nicely golden and a knife comes out clean when placed in the cake. CAULIFLOWER BITES 1 small head of Cauliflower 1/2 cup Milk 3 tsp Cornstarch 1 1/2 tsp Salt 1 1/2 tsp Black Pepper 1/2 tsp Garlic Powder 1 1/2 cups Bread Crumbs 1 1/2 tbsp OMTAE HONEY-PENO 1/cup Sour Cream Instructions 1. Preheat the oven to 450 degrees Fahrenheit and grease a cookie sheet. Set aside. 2. Mix Milk, 1 tsp Salt, 1 tsp Pepper & Garlic Powder together in a bowl. 3. Add Cornstarch, whisking together to prevent lumps from forming. Set aside. 4. Remove florets from the Cauliflower (don’t use the stem). 5. Chop the Cauliflower into smaller pieces, the desired size of your bites. 6. Toss the Cauliflower in the Milk mixture until wet. 7. Season the Bread Crumbs with remaining Salt and Pepper and then toss the Cauliflower in the Bread Crumbs until coated. 8. Spread out on cookie sheet, and spray the bites with a Cooking Spray again to help with colour and crisping. 9. Bake for 18-20 minutes. 10. Remove from oven and serve immediately. SAUCE 1. INGREDIENTS 3 large Eggs 1/2 cup Milk 1 medium Lemon 2 tbsp Sugar 1 tsp Vanilla Extract 1/4 tsp Salt 1/2 cup all-purpose Flour 3 tbsp unsalted Butter 3/4 cup fresh or frozen Blueberries (do not thaw) OMTAE SANDMANS SERENADE INSTRUCTIONS 1. Place 3 large Eggs and Milk on the counter and let come to room temperature, about 30 minutes. 2. Arrange a rack in the middle of the oven and heat the oven to 450ºF. 3. Finely grate the zest of 1 medium Lemon into a medium bowl (about 1 tbsp). 4. Add Sugar and use your fingers to rub the zest into the sugar to release the oils. 5. Add the Eggs, Milk, Vanilla Extract, and Salt, and whisk to combine. 6. Add Flour and whisk until smooth. 7. Melt Butter in a 10-inch cast iron skillet over medium heat. 8. Add Blueberries. Cook, stirring occasionally, until they swell and begin to pop, 1 to 2 minutes. 9. Remove the skillet from the heat. Spread the Blueberries into a single layer. 9. Pour the batter evenly over the Blueberries. 10. Transfer the skillet to the oven and bake until set in the center and puffed around the edges, 12 to 15 minutes. 11. Serve with OMTAE SANDMANS SERENADE Whisk together all of the dressing ingredients in a small glass or bowl. Taste and adjust anything if needed. Once the cabbage is done, transfer it to a bowl and toss with the dressing to coat. Here’s our easy, healthy and delicious recipe for spinach and tomato pizza with basil - the ingredients are all things you can get at Trader Joe’s of course! Ingredients: 1 6-ounce can tomato paste 2 Tablespoons water 1 Tablespoon olive oil ½ teaspoon salt 1 ½ teaspoons onion, minced 4 whole grain pitas 1 ½ cups mozzarella cheese, shredded ½ cup cherry tomatoes 5 cups fresh spinach leaves Handful of torn basil leaves DIRECTIONS Combine the tomato paste, water, olive oil, salt and onion in a small bowl. Mix well. Set aside Heat the oven to 350 degrees. Shred the cheese. Briefly sauté the spinach until it’s just wilted. Press it into a sieve with a bowl below to remove any extra moisture Halve the cherry tomatoes. Spread 1-2 Tablespoons of the set aside tomato pizza sauce on top of each pita, using the back of a spoon. Scatter sautéed spinach over it. Sprinkle the cheese over the spinach. Place the halved cherry tomatoes on top and dot with the torn basil leaves. Place the pizzas on a baking sheet and put them on a middle rack of the oven. PUMPKIN BANANA MINI MUFFINS RECIPE 🍌🎃 . This healthy recipe is quick and easy to make - just toss all the ingredients in a food processor or blender 🙌 . It's made with whole food ingredients 👌🏼 It's gluten free, dairy free, egg free (vegan) and refined sugar free! Oh and nut free for school 🙌 And of course the hidden veggie is a bonus! . INGREDIENTS 1 cup cooked mashed pumpkin (butternut will work too) 2 ripe bananas (they need to be very ripe to provide sweetness) 1/3 cup applesauce (would probably work with an extra banana too if you don't have applesauce) 2 flax eggs (2 Tbsps Flax flour + 6 Tbsps water, mix and let sit for 10min) 1/4 cup coconut oil 3 Tbsp honey 2 and 1/3 cups oats (I use quick oats) 1 tsp vanilla extract 2 tsp cinnamon 1 Tbsp baking powder 1/4 tsp salt You can add toppings like raisins or chocolate chips INSTRUCTIONS Preheat oven to 180 °C. Spray muffin tin (I made mini muffins) Add all ingredients to a food processor or blender (wet ingredients at the bottom). Blend until the oats is finely ground and a nice smooth texture is achieved.  Fill muffin tin. After a long time today I made rotis. My hand hurts just thinking about making them. Having carpel tunnel makes it hard for me to knead the dough. I have a Kitchen-Aid, but feeling of kneading the dough is something different. To get the kids to eat something healthy for a change, I kneaded the dough with shredded paneer and grated carrot, I added some coriander powder, turmeric, yogurt and some salt. They were soft and tasty. The kids gobbled them up. I made extra to store them for lunch tomorrow. Ingredients: Carrot - 1 grated Paneer - 1/2 a block grated (about 200 grams) Yogurt - 1 cup Water - as needed Wheat flour - 2-3 cups (adjust accordingly… the dough a little sticky but not too sticky) Coriander powder - 1/2 tablespoon Salt - as needed Turmeric - a pinch How to Make Add all the ingredients to your Kitchen Aid mixer or to a bowl and start kneading. Once you knead all the ingredients into a nice big ball of dough, leave it aside for an hour. Then roll them into balls and roll them into flat rotis, and put them on a pan, and make sure you cook them on both sides. Serve with chutney, any curry or just plain ketchup. For a smoother rotis, I soaked the paneer for an hour before crumbling it in my food processor. Easter Dirt Cake Ingredients: 1 package (15.25 ounces) chocolate sandwich cookies 1/2 cup (1 stick) unsalted butter, melted 1 package (8 ounces) cream cheese, softened 1 cup powdered sugar 1 teaspoon vanilla extract 2 boxes (3.4 ounces each) instant vanilla pudding mix 3 cups cold milk 1 tub (8 ounces) Cool Whip topping, thawed Assorted Easter candies and decorations (such as candy eggs, bunny gummies, etc.) Instructions: Place the chocolate sandwich cookies in a large zip-top bag and crush them into fine crumbs using a rolling pin or the bottom of a heavy glass. In a medium bowl, combine the cookie crumbs with melted butter, stirring until well combined. Press the cookie mixture firmly and evenly into the bottom of a 9x13-inch baking dish to form the crust layer. Place the dish in the refrigerator to chill while preparing the filling. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract to the cream cheese, and continue to beat until well combined and fluffy. In a separate bowl, whisk together the instant vanilla pudding mix and cold milk until smooth. Let it sit for about 5 minutes to thicken. Gradually add the pudding mixture to the cream cheese mixture, beating until smooth and well combined. Fold in the Cool Whip topping until evenly incorporated. Spread the pudding mixture over the chilled cookie crust in the baking dish, smoothing it out into an even layer. Decorate the top of the pudding layer with assorted Easter candies and decorations to resemble a "dirt" garden. Refrigerate the dirt cake for at least 2-3 hours, or until set. 🐰 Quick and easy Easter recipe which is one of our faves from two years ago using a @pillsbury Funfetti cake mix and a few extra festive mixins! This time Lily decided she didn’t want the Cadbury Mini Eggs in the entire cookie bar so we baked the mixture in two separate pans one with sprinkles only and one with sprinkles + Cadbury mini eggs! Which version would you pick? 🐣 EASTER COOKIE BARS INGREDIENTS Funfetti Box Cake Mix (Easter) 2 eggs 1/2 cup vegetable oil 1 cup Easter sprinkles 1 cup Cadbury Mini Eggs DIRECTIONS 1. Preheat oven to 350 and spray 8x8 baking pan 2. In large bowl combine cake mix, oil and eggs and mix by hand with spatula. 3. Add sprinkles and mini eggs and fold in. 4. EASTER RICE KRISPIE NESTS 🐣 DAIRY + GLUTEN FREE 🐇 This doesn't necessarily fall in the "healthy" category in terms of nutrition but definitely fun and easy to make with the kids for easter, which makes it a healthy family activity 💕 And it's allergy friendly - free from gluten, dairy and egg. INGREDIENTS: 💕1 pack of marshmallows (150g) (here you can use sugar free marshmallows if necessary, available at Dischem and Cab Foods) The @woolworths_sa ones don't have harmful colourants, only beetroot. 💕2 Tbsp melted coconut oil 💕3 cups pink puffed rice cereal from @woolworths_sa (they are also coloured with beetroot instead of harmful artificial colours) 💕A Measuring Tablespoon to use for making nests. 💕Speckled eggs or mini eggs (you can use @cleverssa dairy free speckled eggs available at @dischem_pharmacies pharmacies or online) DIRECTIONS: Add your marshmallows and melted coconut oil to a large bowl. Microwave for +/- a minute on a medium heat. Mix well. Add pink puffed rice. If it's too sticky to mix, microwave a tiny bit more. If mixture is too wet or sticky, add more rice krispies. Prepare a muffin tin by spraying with oil. I also spray the silicone spoon I use for mixing so it doesn't stick. Spray your measuring Tablespoon on the outside. Spoon in a bit of the mixture in a muffin cup and press down in the middle with the measuring tablespoon to create a nest. Fill nests with mini eggs 🐣 Line tupperware with baking paper (which is non stick) - this is where you will store your nests (airtight container). Enjoy 🐇💕

SECRETLY HEALTHY EASTER BROWNIE RECIPE🐇 . Aside from the speckled eggs, this brownie recipe is secretly healthy - free from gluten, dairy and refined sugar - AND contains PUMPKIN as the secret ingredient! Oh and it's easily made egg free/vegan 🙌🏼 . Need even more reason to make it? You can toss all ingredients in a blender/food processor, blend and bake! So easy! . INGREDIENTS: . 1 cup steamed and mashed pumpkin ½ cup nut butter (I like using sunflower butter from @nanukihealthysnacks  or nut butter from @buttanut ) 1 large egg (for vegan version make a flax egg: mix 1 Tbsp flaxseed flour with 3 Tbsp water, let it sit for 10min before using) 3 Tbsp honey or maple syrup  6 Tbsp coconut sugar (or xylitol for sugar free) ¼ cup unsweetened cacao powder  1 tsp vanilla extract 1 tsp baking soda ¼ cup oat flour* Pinch of salt ⅓ cup choc chips (for a dairy and sugar free option I use @nova.choc dark chocolate drops, available on their website) . Speckled eggs *You can make your own oat flour using a blender or Nutribullet by simply blending raw oats (measure after blending) DIRECTIONS: Preheat your oven to 180°C. Prepare a brownie baking pan (more or less 20 x 20 cm). I line it with baking paper. Add all the ingredients (except the chocolate chips and speckled eggs) to a high-speed blender or food processor, and blend until smooth and creamy. Note: depending on how much water your pumkin retains after cooking, the batter might be runnier, if it's very runny, add a little more oat flour Stir in the chocolate chips Pour the batter into your lined baking tin or dish. Bake for 20 minutes, take out of the oven and top with speckled eggs - press them into the half-baked brownie. . Bake for another 10 - 20min. Test with a toothpick or knife to see if it comes out clean. Baking time depends on a couple of things so keep testing. Remove brownies from the oven and let them cool down in the pan. Sprinkle over some crushed speckled eggs for a final touch 🪺

GLUTEN FREE + VEGAN SUGAR COOKIES 🐇 And you can make them refined sugar free too! . I love this recipe, it's super quick and easy and the cookies are delicious, perfect for baking all year round! (They are perfect without any icing, but to decorate them is a fun activity). . Ingredients 1 1/2 cups oat flour 3/4 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1/2 cup coconut sugar + xylitol (1/4 cup each) *you can use normal sugar (the cookie will be whiter) or only coconut sugar (the cookie will be darker) 6 tbsp melted coconut oil 1 1/2 tbsp oat/almond milk 1 tsp pure vanilla extract Mix it all together in a bowl until a dough forms. Roll out the dough (put baking paper in between the dough and rolling pin to keep it from sticking). Or flatten dough with hands. Press out shapes. Put on baking paper on your baking sheet pans. Bake at 160°C for 11minutes at least ( I baked them longer to get then crisper, less chewy and easier to decorate, it depends on size and thickness of cookies). Let them cool completely (this is important). . The next step is optional. Depending on how thick your cookies are or how large the shape is, the cookies can come out softer or crispier. I like turning the oven down to 50°C (just give it time to cool down) and then putting the cookies back for couple of hours to crisp them up. This makes them easier to decorate (especially if they have bunny ears that can easily break off). . For icing you can use royal icing. It's icing that hardens, perfect for cookie decorating. The vegan (egg free) version is made using aquafabe (the liquid from a can of chickpeas). Just google vegan royal icing for a recipe. Or for the regular version you can buy a premix at Woolies, just add water.

EASTER RICE KRISPIE NESTS 🐣 DAIRY + GLUTEN FREE 🐇 . This doesn't necessarily fall in the "healthy" category in terms of nutrition but definitely fun and easy to make with the kids for easter, which makes it a healthy family activity 💕 And it's allergy friendly - free from gluten, dairy and egg. . INGREDIENTS: . 💕1 pack of marshmallows (150g) (here you can use sugar free marshmallows if necessary, available at Dischem and Cab Foods) The @woolworths_sa ones don't have harmful colourants, only beetroot. . 💕2 Tbsp melted coconut oil . 💕3 cups pink puffed rice cereal from @woolworths_sa (they are also coloured with beetroot instead of harmful artificial colours) . 💕A Measuring Tablespoon to use for making nests. . 💕Speckled eggs or mini eggs (you can use @cleverssa dairy free speckled eggs available at @dischem_pharmacies pharmacies or online) . DIRECTIONS: . Add your marshmallows and melted coconut oil to a large bowl. Microwave for +/- a minute on a medium heat. Mix well. . Add pink puffed rice. If it's too sticky to mix, microwave a tiny bit more. If mixture is too wet or sticky, add more rice krispies. . Prepare a muffin tin by spraying with oil. I also spray the silicone spoon I use for mixing so it doesn't stick. . Spray your measuring Tablespoon on the outside. Spoon in a bit of the mixture in a muffin cup and press down in the middle with the measuring tablespoon to create a nest. . Fill nests with mini eggs 🐣 . Line tupperware with baking paper (which is non stick) - this is where you will store your nests (airtight container). . Enjoy 🐇💕

EASTER ROCKY ROAD 🐇 A HEALTHIER VERSION 💕 . This is the easiest recipe! You can use what you have, you can't really mess up a rocky road! . INGREDIENTS: . 1 and 1/3 cup dairy free chocolate (I used @nova.choc's dairy + sugar free dark chocolate - you can buy bulk choc buttons on their website at a great price!) 1/4 cup coconut oil 1 tbsp honey or maple syrup (you can leave this out or add more, all depends on your taste) 1/8 tsp salt 1 1/2 cup crushed cookies (I suggest using @happyearthpeople 's Coconut Vanilla cookies that are free from gluten, dairy + refined sugar) 1 cup mini marshmallows, you can use sugar free if you want 1 cup speckled eggs (if you need this recipe to be fully dairy free/vegan, use the dark choc white speckled eggs from @cleverssa at @dischem_pharmacies . DIRECTIONS: Melt together your chocolate, coconut oil and honey in a large bowl in the microwave, on medium heat, stirring frequently Take about 1/3 cup of the melted mixture and put aside for later. Crush your cookies - don't break them up too finely as you want some nice cookie chunks in your rocky road. Pour the cookies into the chocolate mixture. Then mix in your marshmallows. Crush half the speckled eggs in a similar way to how you crushed your biscuits. Add the majority into your mixture, along with the whole speckled eggs. Leave some of both aside for later. Place some baking paper into a baking tin/ceramic bowl Press in your rocky road mixture. Push it down with the back of a spoon/spatula Pour the leftover melted chocolate evenly over the rocky road Sprinkle over the remainder of your crushed mini eggs and also some extra mini marshmallows. Place in the fridge to set. Remove from the fridge and cut with a warm knife (soak a knife in boiling water)

Strawberry Pretzel Salad A Symphony of Sweet, Salty, and Creamy Delights Ingredients: 6 oz Strawberry Jell-O 2 cups Boiling Water 2 1/2 cups Salted Pretzels, crushed 1/4 cup Granulated Sugar (for pretzel crust) 8 Tbsp Unsalted Butter, melted 8 oz Cream Cheese, Softened 1/2 cup Granulated Sugar (for cream cheese layer) 8 oz Cool Whip, Thawed 1 lb Fresh Strawberries, Hulled and Sliced Directions: Preheat your oven to 350°F (175°C). Combine crushed pretzels, 1/4 cup sugar, and melted butter. Press into the bottom of a 13x9 inch dish. Bake for 10 minutes, then cool. Beat cream cheese and 1/2 cup sugar until fluffy. Fold in Cool Whip. Spread over cooled crust. Dissolve Jell-O in boiling water. Cool to room temperature, then add strawberries. Pour over cream cheese layer. Refrigerate for 2-4 hours, or until set.
