MOQUECA 🍛🍛🍛 Our first @simplycookcom recipe was Moqueca De Peixe and since trying it Dane hasn't stopped comparing all meals to the "Moqueca standard" 😂😂😂 So when I saw there was a veggie version, I had to add it to this week's box 😍 Made with butternut squash and peppers rather than cod and prawns, this didn't quite have the same extra special vibe of the Moqueca De Peixe but having said that we both licked the bowls clean 😂🤤 For those of you thinking of trying this one, I would probably recommend oven roasting the butternut squash before adding to the pan. Here's a meal I threw together today for dinner later to be ready after we get back from our chiropractor appointment. It occurred to me this could be even easier if I had prepped all the items ahead to be ready to dump into the crockpot. Have you heard of the freezer meals concept? Now, there's two ways to do freezer meals. One is to have it all cooked and ready to just warm up (like a frozen lasagna). The other is more what I'm talking about. I could have had the ingredients all chopped and the ground beef browned and then frozen. Then you get it out the night before and dump it in the crockpot the next morning. Has anyone tried that with your crockpot recipes? And, aren't those carrots fun (third pic)? Baked lemon garlic chicken with potatoes . Pui aromat, acrișor și însoțit de cartofi obișnuiți și cartofi dulci. . O rețetă ușoară ce va fi adorată de la mic la mare. . Faceți întâi o marinadă din 5 căței de usturoi tocați, zeama de la 3 lămâi, oregano uscat, sare, piper, o lingură condimente uscate pentru supă, 150 ml ulei de măsline extravirgin și 170 ml apă. Dacă nu aveți 2 tăvi reduceți cantitățile de ulei și apă. Încingeți cuptorul la 180 cu ventilație. . Aranjați pulpele de pui în tavă (eu am copt în 2 tăvi, am avut 9 ciocănele) alături de cartofi dulci și normali tăiați felii mai groase. Am avut 4 cartofi normali și 2 dulci. . Așezați deasupra și feliile de la 2 cepe. . Amestecați bine marinada și turnați-o în tavă (tăvi). . Opțional mai presărați un fir de ulei de măsline deasupra și din nou oregano. Eu am avut unul grozav de la @corneliaoliveoil . Acoperiți cu hârtie de copt umezită și apoi cu folie de aluminiu. . Coaceți aproximativ o oră și jumătate acoperit apoi scoateți folia și hârtia de copt să rumeniți puțin carnea și cartofii. . Atât vă mai zic: luați o coajă de pâine crocantă și Înmuiați-o în sosul din tavă. Și bucurați-vă. E cel mai bun pui pe care l-am făcut în ultimul timp. . Sweet potato wedges and whipped feta 💛 These crispy sweet potato wedges served on a whipped feta dip are quite simply outstanding and perfect for a Spring side 🌱 I actually cut out sweet potatoes from my diet completely after I was diagnosed with gestational diabetes for the first time with my second daughter and I only reintroduced them around a year ago after I had gestational diabetes again with my son. So, for me, they still feel a little indulgent. But sweet potatoes are actually a really good potato option when you’re considering blood sugar balancing because they’re high in fibre and magnesium and have a low glycemic index so help to reduce insulin resistance and help with blood sugar balance. Farmers Market “Tex Mex” Salads 💚 We enjoyed these for dinner last night and they were so fresh & flavorful incorporating 8 ingredients from local farms 🙌🏽 @balifamilyfarm, @enchanted_mushrooms, @hatandheartfarm, @pedernalesriverfarm, @hamiltonpoolfarms, and @piecitygreens 🍃 There’s no way I could replicate the same meal using only ingredients from a grocery store. The quality & freshness just wouldn’t be there. Not to mention the taste and nutrition…freshly picked & locally sourced food is the most nutritious & healing 💫 Growing whatever we can ourselves and buying food locally can make a huge difference in the health of our bodies…plus supporting our local farmers is equally as important! If you don’t already know who your local farmers are, do some research and ask around….and if you happen to live somewhere where you can’t find a farmers market within an hour or so, then maybe it’s time to organize/start one yourself? 🤗 Because with everything that is going on in the world, you might just want to know where your food is coming from. 🌱👨‍🌾💚

You have the power to affect your health, with what you choose to put on your plate. Food can be medicine, in the foods you choose to eat, and the ones you don't. So many of our symptoms can be managed with food choices, before going to the medicine cabinet. Getting in tune with your body and the signals it sends to you can take some practice though. Have you noticed how you feel during that first hour after a meal? Do you feel full, clear headed and able to concentrate? Or are you tired, irritable and hungry again? If you really want to know which foods are helping, or hurting you, start paying attention to how you feel after a meal. How does your body feel, and did anything change with your emotions, or ability to think clearly? Which meals have a negative effect on you, and which ones make you feel good. Farmers Market Sausage, Kale & Butternut Squash Salad 30 min | 4 Servings Ingredients: 6 cups Kale 1 butternut squash, peeled and diced 8 links chicken sausage (I used feta and spinach flavor) Salt and pepper 1/2 tsp pumpkin pie spice 1/4 cup pine nuts 1/2 cup lentils 2 tbsp lemon juice 1 tbsp olive oil, divided 1/2 tsp garlic powder 2 tbsp tahini Optional: feta and goat cheese for topping Directions: 1. Preheat oven to 400F. Line a baking sheet with foil and add the butternut squash cubes. Toss squash with 1/2 tbsp olive oil, salt, pepper and pumpkin pie spice. Transfer to oven and bake for 30 min or until fork tender. 2. Cook lentils according to package (I simmered in salted water for 30 min and strained). 3. Arrange sausage on a foil lined baking sheet and bake for 25 min, turning halfway. 4. Arrange pine nuts on a small baking sheet and baking for about 5 min or until starting to brown and toast. 5. While everything is cooking, massage kale with 1/2 tbsp olive oil, lemon juice, salt, pepper and garlic powder. 6. Remove everything from the oven. Slice the chicken sausage into bite sized chunks. Toss squash, nuts and sausage together with the lentils and kale (along with cheese if using). 7. Drizzle with the tahini as serve slightly warm!

Bubur Oat Lambuk Bebola Daging 😆 Switch up this year for an easier to digest & healthier version. (A) 250g minced beef, mix & marinade with soy sauce, pinch of salt, a bit of water, cornflour & a little oil. Set aside. (B) 1 stick cinnamon 4 cardamon pods, smash to expose the seeds 1 star anise 4 cloves 1 cm ginger, slice into thin strips 2 Tbsp coconut oil 130g rolled oats, presoak with water Enough water to cook oats to your desired consistency* Salt & black pepper 1 Tbsp coconut oil Garnishing: Fried shallots Spring onion Fry (B) in hot pan until fragrant. Pour in oats & enough water. Bring to a boil & simmer until oats is cooked. Pinch & roll minced meat (A) into balls & dunk into porridge. Only stir gently when you hv finished adding the meatballs. Season with salt & black pepper. Finished with drizzling coconut oil over to replace the santan flavour & fragrance. Obesity, mitochondria, environment…its all about the nuance! Obesity is a leading risk factor for a variety of metabolic diseases including cardiovascular disease, diabetes and cancer. All of this despite what the social contagion “body positivity movement” tells you. Its not virtuous to lie to people about inevitable disease that will shorten their lives! This 2013 paper in Free Radical Biology & Medicine suggest that “the mitochondrion plays a major role in influencing individual susceptibility to this disease via mitochondrial – nuclear interaction processes, and that environmentally influenced selection events for mitochondrial function that conveyed increased reproductive and survival success during the global establishment of human populations during prehistoric times can influence individual susceptibility to weight gain and obesity.” That’s a mouthful but very interesting if you break it down. This also removes the over simplified CICO argument and although studies have clearly shown that single nuclear gene mutations can cause obesity, the frequency of these mutations in the human population is too low to sufficiently account for the rapidly growing incidence of obesity and weight gain in the western world. So not genetic either! Though it has been widely studied, obesity is often not described to patients or the public as an inflammatory disease. ROS produced by the mitochondrion contribute to signaling for multiple cellular processes involving pathways that utilize proteins encoded by the nuclear genome including inflammation, cell death and appetite control. Multiple cell and animal models show that ROS play a major role in insulin resistance. Exposure to high glucose concentrations causes mitochondrial fragmentation (fission) as well as a simultaneous increase in ROS levels. So the environment the mitochondria are placed in can either lead to efficient energy production or an excess of inflammatory compounds that can compound the chronic disease problem! Obesity is a SYMPTOM not a disease…we have to rebalance the biochemistry by placing the person in a proper human environment…easier said than done!
