Feels like there’s been a lot of fertilizer lately! 😫 My dog had her surgery 3 1/2 weeks ago. Popped stitches a few days in so stitches had to come out. We moved to twice a day open wound cleaning instead. That’s been fun for both of us. 😒🤢 Tweaked my back lifting her 76 # booty in and out of my car for weekly vet visits. 🤬 My youngest daughter had a life-changing event that shook me. Physically, she is fine. Mentally, I am not. 😔 I had a routine doctor visit and found out I have to go back on blood pressure medication after being off of it for a few years. That sent me into a tailspin. Why do I work so hard on myself if it has no effect?! I know that’s not how it works. Some things are just genetics. But I did stop trying to better myself for a couple of weeks there while I accepted this new reality. All of it. 😤🥺 Now I’m ready to get back at it! No more wallowing in self-pity and making the situation worse. So! I didn’t want my Mission tortillas to go to waste after carting them back from vacation in the States. So, I made a fresh salsa, warmed up the tortillas, fried my eggs, heated the refried beans and sprinkled cilantro over it! And, there folks you have my version of Huevos Rancheros. Delicious it was! Chris and I both enjoyed it and it was very filling. My salsa was diced up fine onions until translucent then added the diced tomatoes. I added, salt, canned green chilies and Trader Joe’s Chili Lime seasoning. The cakes deserve a post of their own along with pics of the birthday “boy” and “girl”. . Dad’s choice for his birthday cake was Pineapple Coconut Cake (by @tastesbetterfromscratch ). I didn’t use full amount of coconut extract listed but still enough to taste it in the cake/sponge. Also I thought I bought enough coconut milk but didn’t so instead used half coconut milk and half regular milk. The batter was like velvet when I was making it and it proved itself as well once baked. Tasted amazing with and without frosting. My picky 16 year old nephew couldn’t stop eating this cake. . Sister’s cake choice was a Chocolate Oreo Cake (by @lifeloveandsugar ). I’ve made the chocolate cake before but their cupcake variation. Was fantastic last time I made it and even better as a cake with Oreo frosting. Honestly I don’t think I need to try any other chocolate cake recipe. Weekly Progress: Apr 1-7 🔵 Last week was a busy one with family in town for part of it. 👨👩👧👦 I earned blue dots all seven days. 👍 I got four days of activity in. Also concluded my running days are over. My right knee just isn’t having it. I need to stop trying it. 😔 Did I cook? Nope. Moving on. 😏 I only got my minimum of seven hour sleep in on two nights.
