What I eat in a day – The Quest crackers were a new to me Target find. They were good, but I wouldn’t say they were spicy at all. I love the plain ones, so I’ll probably just stick to those in the future. I’ve had this “Éclair cake” saved to try for quite some time and decided to finally try it this week. It was good, but not worth 10 points to me. I’m sure you could swap zero-sugar frosting for the top, but I imagine that would have only made it 1 point less. Highly recommend trying it if you’re tracking calories. Inte svårt att vara Viktväktare när man lagar så här god mat. Måste göra det oftare! Spaghetti al Pomodoro 1 portion 12 points 150 g körsbärstomater 1-2 st vitlöksklyftor Salt efter smak 80 g spaghetti <0,5 kruka basilika Lite torkade chiliflakes 2 msk Parmesan eller Pecorino 0,5 msk olivolja Gör så här: Koka upp pastavattnet, inte för mycket för stärkelsen ska bli koncentrerad i vattnet. Salta efter smak. Skär körsbärstomaterna i hälften. Skär därefter vitlöken i tunna skivor och ta av basilikabladen från kvistarna. Lägg i spaghettin i det kokade saltade vattnet Obs koka inte pastan för länge. Om paketet säger 11 minuter, så koka i 9-10 minuter. Fyll stekpannan med olivolja. Yesterday’s monthly “Protein Haul” from Woodman’s. These are a “few” of my staples, and then I finally got on the cottage cheese craze. Prioritizing protein at each meal continues to be a game changer! I try to get around 30g+ per meal and I have to be intentional about it in order to make it happen. Basically, low fat cuts of meat and dairy is what I choose most to achieve my daily protein goal of 100g+ and it’s pretty easy to do w/these choices shown here. Protein is not only a great value point-wise on #WW, but it’s super stratifying, and it has a positive impact on blood sugar! I’m grateful to have an extra freezer so I can stock up and have these #tools on hand to support my weight management goals. 😃

So! I didn’t want my Mission tortillas to go to waste after carting them back from vacation in the States. So, I made a fresh salsa, warmed up the tortillas, fried my eggs, heated the refried beans and sprinkled cilantro over it! And, there folks you have my version of Huevos Rancheros. Delicious it was! Chris and I both enjoyed it and it was very filling. My salsa was diced up fine onions until translucent then added the diced tomatoes. I added, salt, canned green chilies and Trader Joe’s Chili Lime seasoning. Miss 5 was at her cousins house on ANZAC day and even though they made ANZAC biscuits there, she was upset we didn’t get to make some together, as apparently it’s our tradition. So this weekend we’ve done some baking together and part of that was making ANZAC biscuits following the WW recipe.
