So! I didnât want my Mission tortillas to go to waste after carting them back from vacation in the States. So, I made a fresh salsa, warmed up the tortillas, fried my eggs, heated the refried beans and sprinkled cilantro over it! And, there folks you have my version of Huevos Rancheros. Delicious it was! Chris and I both enjoyed it and it was very filling. My salsa was diced up fine onions until translucent then added the diced tomatoes. I added, salt, canned green chilies and Trader Joeâs Chili Lime seasoning. â¨This morning I was nervous to step on the scales because I know if I hadnât lost anything I would have felt so disheartened. I know itâs not about the number, but it is for someone like me that likes to see those numbers drop. I know this week I have eaten so well, nothing fatty like cake or a cheeky takeaway no crisps either. I have prepared my meals (note to self prepare more than one meal đ¤Ł) it becomes hella boring by day three đ I have also set myself a goal of doing three exercises a week and for the rest of the week getting my 10K steps in daily and using the walking pad to top them up if needs be. I can honestly say and yes itâs early days I feel so much better and thatâs a great start. Yes eating whatever you fancy and sticking to a calorie deficit is great I am not knocking that but for me it wasnât helpful especially since hitting perimenopause and taking HRT I just wanted to comfort eat because I didnât feel like myself. What I Eat In A day! I always get requests to do a What I eat in a day so this is what I ate yesterday. I get 23 points a day on WW and I used 17 points. I started back fasting this week so I didnât have anything for breakfast. I find that when I fast Iâm not as hungry throughout the day! My normal fasting dayâŚI eat dinner at 6-7 pm and I wonât eat again until around 12pm the next day. âĄď¸ Lunch 12pm. 4 points Turkey and ham pinwheels, popcorn, grapes, cucumber and a mini sweet pepper with light laughing cow cheese wedge and I sprinkled with everything but the bagel seasoning on top of the peppers. âď¸For the pinwheels I took a LaBandrita carb counter wrap and spread a light laughing cow cheese wedge and sprinkled Trader Joeâs ranch seasoning and spread it on the tortilla. I added turkey breast, ham and lettuce. These are so good! âĄď¸ I had my coffee (not pictured) in between lunch and snacks (1 pt) âĄď¸ Snacks 3:30. 3 points Boiled egg, apple, @babybelus cheese, 7 almonds âĄď¸ Dinner 6:30pm. 9 points Mexican Pizza 2 LaBandrita carb counter wraps, 1/2 cup Trader Joeâs fat free refried beans, 4 oz 96% lean ground beef seasoned with Taco Bell seasoning ,onion powder, garlic powder and Adobo seasoning, 1/4 cup mild enchilada sauce and 37 grams lite 50 @cabotcreamery white cheddar cheese. I usually have something sweet after dinner but the Mexican pizza was really filling so I didnât want anything.
