Serve with my cooling cucumber & onion raita & flatbreads.😍🤩 Serves approx. 4: Ingredients: 1/2 butternut squash peeled & chopped in to bitesize pieces 1/2 cauliflower & chopped in to bitesize pieces 2x potatoes rinsed & chopped in to bitesize pieces 450ml water with a chicken(or veg) stock cube 1x red chilli & seeds chopped 1/2 tbsp garam masala A pinch of cayenne pepper 1 tsp turmeric 1x tsp ground coriander 1x tsp cumin 1/2 tsp medium curry powder 2x tbsp yoghurt 1x tbsp tomato purée 1x tsp coriander seeds toasted & ground 1x cardamom pod seeds ground Small handful chopped coriander 1x tsp butter or ghee 1x tbsp veg oil Salt & pepper Squeeze lemon juice Toasted flatbreads x 4 Raita- Red onion finely diced 1x tsp mint sauce Chopped coriander 1/3 small diced cucumber A dash of lemon juice Salt and pepper Method: -Prepare the raita above. Set aside. -Toast the coriander & cardamom seeds in a pan until golden, then grind to a powder in a pestle & mortar. -Roast the veg in the oil, butter & all spices for 20 mins at 200° (roast/bake in multi-cooker) or until caramelised & softened slightly, mix. Add the garlic & chilli half way through & cook until golden. (If cooking on hob, roast first then transfer to a pan). -Add the tomato purée & yoghurt & continue to cook for another minute or so. -Pour in the stock, lemon juice & turn the heat to 180° Speedi meals setting (Multi-cooker) oven, or medium/low (hob) & simmer until all veg soft, curry thickened & reduced. If you need/want it thicker add a tsp corn flour in a little water and pour in. -Add the coriander & stir. -Serve with toasted seeded flatbreads, rice if you wish & raita. Enjoy! 🤩😍

Lamb Koftas with Yoghurt Dressing Exotic Middle Eastern Lamb Koftas with Refreshing Yoghurt Dressing Ingredients: 500g ground lamb 1 large onion, grated 2 cloves garlic, minced 2 tbsp fresh parsley, finely chopped 2 tbsp fresh mint, finely chopped 1 tsp ground cumin 1 tsp ground coriander 1/2 tsp ground cinnamon 1/2 tsp cayenne pepper Salt and pepper to taste Olive oil, for frying Yoghurt Dressing: 1 cup Greek yoghurt 1 clove garlic, minced 1 tbsp lemon juice 1 tbsp olive oil 1 tbsp fresh mint, chopped Salt and pepper to taste Directions: In a large bowl, combine ground lamb, onion, garlic, parsley, mint, cumin, coriander, cinnamon, cayenne pepper, salt, and pepper. Siron / Silor 🍝 Turkish yufka pasta with ground venison "bolognese" and garlic yoghurt. Wow I never heared about this dish but got a Silor package from my friend @luc._mar so with the help of Google we tried our best. 🍜The pasta was arranged in the ofen form and brushed with a mix of water and melted butter. Then baked until crunchy golden. 🍗 For the meat sauce we used ground venison and cooked it like a bolognese sauce but added carrots, paprika, sumak and harrissa. (Lamb would have worked better or a vegetarian carrot bolognese, the venison was a bit lost). 🥛A mix of plain yogurt and sour cream to mimick the consistency of Turkish yoghurt. Spiced with a lot of garlic, parsley and mint. So yummy. The different consistencys and temperatures you get in one bite are lovely. The yoghurt balances the spices and the yufka pasta is just the perfect vessel. It’s Tuesday, so that must mean it’s time for another creation for #onebookthreerecipes 👩🏻🍳 I’m continuing my exploration of Greek home cooking with Peinao by @helenaandvikki - and I’m loving this book! I actually bought it especially for this collab, and I’m glad I did. Today I’m cooking three recipes to create one meal, so it’s technically one dinner recipe. Sort of. Pork and feta keftedes - the tastiest meatballs I’ve ever made from only pork mince. I made a full batch in advance and froze them, which is why there’s only five pictured. They’re sitting on a sauce made from combining the last of a jar of jammy roasted smushed olive oily garlic with yoghurt and lemon juice. Not overly pretty, but it worked. I also made Oregano Yoghurt pita breads. Seriously, how have I never made pitas before? The dough was so easy, the fresh oregano adds a little extra flavour and they cook in a flash. An aside - the cast iron pan mine were cooked in is over 40 years old! I’ve had it since I was 18 and cared for it well. I love my pan! The pitas - they’re soft and full of flavour, ready to wrap around delicious meatballs and salad. So yet again, here’s another new favourite from this book! I’ve discovered they freeze really well, plus they’re easily warmed up in the toaster. Perfection! Last but not least, a fresh OG Greek salad, featured in my first post from this book and made fresh again. I found that making a sort of wrap from all this was flavour paradise. Yum! This would be a great summer bbq dinner, sitting outside on a balmy evening with a nice glass of Pinot noir. Or whatever you like. Will this be the last you see of this really great cookbook? Not on your nellie! It’s wonderfully put together with easy and tasty recipes that anyone can cook. So stay tuned.
