Roasted Bell Pepper and Tahini Pasta! This is one of my absolute favorite pasta dishes I make at home. It's so creamy, healthy, and delicious. The veggies do take some time to roast, but this pasta comes together very easily, and hands-on time is minimal. Add a salad, and dinner is done! Recipe ⬇️ Ingredients: 2 bell peppers (red, yellow, or orange) 1 cup cherry tomatoes 1 onion, peeled and quartered 3-4 cloves garlic, peeled and ends trimmed 1 1/2 tablespoons extra virgin olive oil 1/4 cup tahini Juice from 1 lemon Optional pinch crushed red pepper 16 ounce (1lb) box of preferred pasta Salt and black pepper to taste Directions: Preheat oven to 375 degrees On a baking sheet place, bell peppers, cherry tomatoes, onion, and garlic. Drizzle with olive oil and give veggies a gentle toss or shake to coat with olive oil. Give veggies a light sprinkle of salt. Place veggies in oven and roast for 60 minutes or until veggies are nice and soft and slightly charred. Once veggies are done, set aside and let cool a bit. In a large pot, start your water for your pasta. Once boiling, add salt and cook pasta according to package directions for aldente. While pasta is cooking, prepare your sauce. Remove stem and seeds from bell peppers. Next place bell peppers, tomatoes, onion, garlic, tahini, juice from lemon, and crushed red pepper if using in a blender. Blend until smooth and creamy. Once your pasta is done cooking, reserve about a cup of pasta water before draining ( I always do this when making pasta, it works great if you need to thin a sauce or to bring the dish all together. I just dip a coffee mug into the side of the pot and fill it. This is a good cooking habit to get into). Add your drained pasta back to your pot, then add your roasted pepper tahini sauce, and if you would like to thin your sauce, add in some of your pasta water, a little at a time. Stir to combine. Lastly, salt and black pepper to taste. 🥗Roasted bell peppers & fresh mango -salad🥗 with tex mex inspired sides 😋😋 Today’s dinner made me happy, I had nothing in my mind when started preparing chicken and all other dishes came along on a way. All I knew that I wanted to have salad with chicken or chicken with salad 😅. I also wanted to make guacamole, but avocados I had were not good when I opened those, so I was able to use only half avocado, so I had to give up guacamole. So, here it is what eventually happened: 🥗 SALAD 🫑 roast red bell pepper in a pan with garlic and onion until bit soft and season with salt 🥬 iceberg on a bottom, sprinkle pinch of salt to top of the salad 🥭 fresh ripe mango 🫛 winged beans or something else crunchy vegetable 🌶️ red chili 🌱 parsley Plate on layers, don’t mix. 🍗 SHREDDED CHICKEN scrub spices to chicken breasts: paprika powder, cumin powder, turmeric powder, coriander powder, salt, fresh finely chopped garlic, black pepper, honey, oregano, white wine vinegar and extra virgin olive oil. Place in clay pot, bake in oven about 175-200 celsius degrees, about 45 minutes until cooked and easy to shred but not yet dry. Shred the chicken and mix with liquid that has come out from the chicken in oven to bottom of the clay pot. 🍅 FRESH TOMATO SALSA cherry tomatoes, half avocado, finely chopped onion, fresh parsley, green chili. Chop all ingredients to small cubes, mix together, season with salt, black pepper and freshly squeezed lime juice. 🥔 GARLIC POTATOES Peal potatoes, chop julienne. Wash potatoes until there’s no starch. Dry well. Add extra virgin olive oil to the pan, add potatoes and fry until al dente, add chopped garlic, paprika powder and fry while more, add one or two spoonful sour cream and fry till cooked but not too soft. Potatoes can still have some texture left. Enjoyed this tex mex flavored dinner a lot. Fresh and warm same time, comforting flavors with one of my favorite ingredient; potato.
