I’ve been cooking again :-). These are not all the meals I’ve made over the past weeks, just the ones I’ve remembered to take pictures of! 🍳 Picture one is tonight’s dinner. Something I made out of what was in the freezer :-). Cheese tortellini, Italian meatballs, a bag of broccoli and two jars of marinara sauce, topped with Italian cheese 🍳 Pictures two and three represent Easy Crockpot Pork Chops, recipe by @amy.darley. Very easy, very yummy and the gravy is fabulous over mashed potatoes. Picture three is the meal being divided into two servings for Hubby’s work lunches, two servings for me and a box for my parents :-). I like to take them food when we visit :-). Apparently they like it too @heuypilot 🍳 Picture 4 is Unstuffed Pepper Skillet by @cookinginthemidwest. I’ve never had stuffed peppers. Tacos were a must for Cinco de Mayo. Here are some super quick high protein baked chicken tacos w/ spicy Greek yogurt dip. I made salsa chicken in the crockpot : 4 chicken breast , 1 small jar salsa & a few tbs of low sodium taco seasoning . I sprayed a baking dish with olive oil spray and preheated over to 400°. Arrange the saltine crackers in a single layer on the bottom of the crockpot, breaking them if needed to fit. In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, vanilla extract, and salt until well combined and the sugar is dissolved. Pour the butter and sugar mixture evenly over the saltine crackers in the crockpot. Cover the crockpot and cook on low for 2 hours. After 2 hours, uncover the crockpot and sprinkle the chocolate chips evenly over the top. Cover and continue cooking on low for an additional 15-20 minutes, or until the chocolate chips are melted. Use a spatula to spread the melted chocolate evenly over the crackers. Sprinkle chopped pecans or almonds over the melted chocolate. Turn off the crockpot and let the Christmas crack cool completely in the crockpot. Once cooled, use the parchment paper to lift the Christmas crack out of the crockpot and transfer it to a cutting board. Cut the Christmas crack into small squares or break it into irregular pieces.
