Quick Shepherd’s Pie 🥧 - 1.75 lbs ground turkey - 1 cup or more shredded carrots - 1 small diced onion - 3 cloves minced garlic - 1 cup frozen green peas - 2 heaping tbsp tomato paste - 1 cup beef bone broth, beef stock - 2 tsp cornstarch - 1 tbsp Worcestershire sauce - S & P to taste - mashed potatoes - freeze dried onions - I used Golden Farms Crispy Onions, they are gluten free. This is Shepherd’s pie recipe is very quick to make. Preheat your oven to 500. Heat a large skillet over medium/high heat and add your ground turkey and season with salt and pepper. Cook until all your meat is brown, about 6-7 minutes. Add your carrots, onion and garlic to the skillet. Allow to cook for 2 minutes. Stir in the tomato paste, mixing well. Once you have evenly distributed your tomato paste, in a seperate bowl combine 1/4 of the bone broth with the 2 tsp of cornstarch, wisking until well combined. Add this to the skillet with your turkey mixture. Stir in the remaining 3/4 cup of stock. Worcestershire sauce (we love this Worchestershire so I tend to add a bit more that the tbsp) Then stir in your peas. Allow the mixture to continue cooking until thickened. Place the turkey mixture in to a 2 quart glass dish and top evenly with mashed potatoes. Sprinkle with the freeze dried onions and bake for about 5 minutes. Checking regularly to ensure you do not burn the onions. ** I had left over mashed potatoes that I had used from a meal the night before. To make mashed potatoes, take a few russet, or white potatoes, peel then dice them into small pieces and place in a large pot. Cover the potatoes with water, add salt and rim the pot with butter. Rimming the pot with butter prevents the potoates from boiling over. Bring the water to a boil and let cook until the potatoes are soft. Use a fork to test the tenderness. Drain the potatoes. You can use a stand mixer or hand mixer, add your potatoes to a bowl, 1/2 - 1 stick of butter, about 2 tbsp of milk, salt, pepper, and a sprinkle of garlic salt together and mix until nice and smooth! Rememeber when I shared a recipe for Chicken Pot Pie on 3.14? 🙌 😋 Well, yesterday I pulled that frozen filling out and thawed for about an hour, made a simple pie crust in about 5 minutes, and boom, #dinnerisserved . I just added about 30-40 minutes in the cooking time, but that was such an easy dinner! Totally worth freezing in the future. If you haven't tried that recipe out, go check it out. Happy Pi Day! Here's a delicious dinner idea that feeds a crowd! This came from a neighbor, who got it from a neighbor. 😊 You know it's good when it's passed around! . |Connie's Chicken Pot Pie| Makes 2 pot pies or one giant pie, feeds 4 to 6 per pie 2-3 cups diced cooked chicken 1 can cream of chicken 1 cup sour cream Season salt (Lawry's) to taste Garlic powder to taste Pie crust (pre-made or homemade, 2 crusts per pie = 4 for recipe amount) 4 cups diced potatoes 1 1/2 cup diced carrots 1/2-1 cup frozen petite peas 1 1/2 cups Colby-Jack cheese (in cubes is best) Preheat oven to 400°. Allow pie crust to sit out for 10-15 minutes before placing into pan that is greased. Assemble ingredients in large mixing bowl (this will make 2 pies). Taste cream sauce ans season accordingly. After filling bottom crust, lay top crust over filling, pinch edges together and cut 4 slits at the top. Bake for 1 hour and 15 minutes. You can put foil over the edges for the first hour to prevent getting too brown. Let stand 15 minutes before serving. *If making one giant pie, it may take 2 hours to cook, and put baking sheet underneath to catch drips. *I made my own easy homemade pie crust with this one, and I froze the extra filling in a foil pie tin for another time! I have always wanted my home to be the place where people gather, and especially where my boys want to be when they're teenagers. Yes, they will eat hoards of food, and drink like 10 gallons of milk a week 💰😳, but it is in my home where I want them to feel like they will always have a seat at the table. It is there at the table where they will feel comfortable talking about anything and feeling loved and accepted. .
