𝗧𝗮𝗶𝘄𝗮𝗻𝗲𝘀𝗲-𝗦𝘁𝘆𝗹𝗲 𝗕𝗮𝘀𝗶𝗹 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 ••• I can’t believe how good this was 😋 ••• 500g diced chicken thighs coated in flour 2 x pak choi 300g sushi rice 60ml Chinese rice wine 60ml soy sauce 40g basil 40ml toasted sesame oil 30g root ginger, peeled and grated 4 garlic cloves, peeled and crushed 1tsp chilli flakes 2 tsp sugar ••• 1. Rinse the rice in cold water then add to a pan with 400ml cold water and a pinch of salt. Bring to the boil, cover and simmer. 2. Trim the roots from the pak choi and then separate the leaves from the stalks. Finely chop the stalks and rip the leaves. Keep separate. 3. Separate the basil leaves from the stalk. Finely chop the stalks. 4. Heat a large pan and add the chicken, cook until no pink remains. 5. Add the garlic, ginger, chilli flakes and basil stalks to the pan and cook until fragrant. 6. Add the pak choi stalks and cook until softened. 7. Add the sesame oil, soy sauce, sugar and rice wine with 2 tablespoons of water. 8. Add the pak choi leaves and basil leaves and cook until wilted. 9. 🌮 Take your taste buds on a fiesta with this Walking Taco Casserole, perfect for those nights when you want a fun and fuss-free dinner! 🎉 Ingredients: 1 lb ground beef 1 package taco seasoning 1 can (15 oz) black beans, drained and rinsed 1 can (8 oz) tomato sauce 1 cup corn kernels, fresh or frozen 1 cup crushed tortilla chips, plus more for topping 2 cups shredded cheddar cheese 1/4 cup sliced green onions Sour cream, for serving Instructions: Preheat your oven to 350°F (175°C). I love ingredients that serve a duel purpose. Chorizo is a protein I like to use that adds a great amount of flavor to any dish. Yesterday, I made Chori Pollo for Cinco de Mayo. I started by sautéing the chorizo in my pan. Once cooked, I put the cooked meat on the side and used the same pan to cook my chicken breasts that were seasoned with a simple taco seasoning. I plated the chicken breast and topped it with the chorizo and queso (this can be your favorite one from the store). Served with Mexican rice and sautéed peppers and onions! 🍤🧀 Baked Stuffed Shrimp Casserole 🍤🧀 Ingredients: 1 pound large shrimp, peeled and deveined 1 cup breadcrumbs 1 cup shredded mozzarella cheese 1/2 cup grated Parmesan cheese 1/4 cup chopped fresh parsley 2 cloves garlic, minced 1 lemon, juiced 2 tablespoons olive oil Salt and pepper to taste Cooking spray Instructions: 1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with cooking spray. 2. In a bowl, combine breadcrumbs, mozzarella cheese, Parmesan cheese, parsley, garlic, lemon juice, olive oil, salt, and pepper. Mix well. 3. Take each shrimp and make a slit along the back, being careful not to cut all the way through. Open the shrimp and stuff each with the breadcrumb mixture. 4. Place the stuffed shrimp in the prepared baking dish. 5. Bake in the preheated oven for 1215 minutes or until the shrimp are pink and cooked through. 6. The cinco de mayo weekend was a chance to do a fun, ethnic dinner. The meat is a lean skirt steak, cooked in a very hot pan on the stove for 3 min per side. After resting, it needs to be sliced thinly across the grain b/c it's not super tender. But it is full of flavor. The 7 layer healthier cold dip is so fresh and with flavor galore. It's perfect dipped with toasted corn tortillas, like chips. Here are the 7 layers, bottom to top: smashed canned black beans, Greek plain nonfat yogurt mixed with taco seasoning, shredded Mexican blend cheese, spicy guacamole, chopped up Bell pepper & sweet onion, cut up tomatoes, fresh chopped cilantro. Ground Beef Cauliflower Hash Ingredients: 2 1/2 cups frozen cauliflower, defrosted, drained and chopped (5 Greens) 1/2 cup bell peppers of your choice, chopped (1 Green) 1/4 cup onion, chopped (4 Condiments) 1 lb 95 to 97% lean ground beef (2 Leaner Leans) 2 cups reduced fat sharp cheddar cheese (2 Leans) 3/4 tsp garlic powder (1 1/2 Condiments) 3/4 tsp salt, use less if desired (3 Condiments) 1/4 tsp black pepper (1/2 Condiment) 2 tsp olive oil (2 Healthy Fats) Directions: Heat oil in a large skillet over medium high heat. Add onions and peppers and cook until onions are translucent and peppers are tender for about 3 to 4 min. Add ground beef and cook until cooked through. Add cauliflower, garlic, salt and pepper. Cook until cauliflower is tender. Add cheddar cheese on top of the cauliflower and beef mixture. Turn heat to low, cover the pan with a lid and allow the cheese to melt. Enjoy! 4 Servings (about 1 cup) with 1 Lean, 1 1/2 Greens, 2.25 Condiments, and 1/2 Healthy Fat per serving (You still need 1 1/2 Greens more per serving) *You can skip the cheese and make this a full Lean and Green meal with 2 Servings! You will need to lower the Condiments to a total of 6. Do this be decreasing the onion to 1 tbsp instead of 1/4 cup. ✨️Breakfast✨️ Good morning! Starting the day with some scrumptious waffles 🧇 😋 One is spinach, and the other is plain (banana based). I topped it off with some sprinkles and desiccated coconut. Hayden some times like it with jam, so I gave him the option if he wanted to 😊 Ingredients (makes around 8 waffles): - Approx (I don't measure, I'm a guesstimate cook 😅) 1.5 cup of self raising flour - 2 eggs - 1 banana - Approx 1/2 cup of milk - Few drops of vanilla extract - 1/2 tsp of baking powder - A drizzle of maple syrup - Spinach - Butter to oil the plates If the batter is too thick, add more milk, or if too thin, add a bit more flour. Method: 1. Blend all the ingredients together, and the batter is done 2. If you want to make the spinach version, just split the batter in half and then add spinach and blend again 😊 3. Fajita night! A nice, quick and fairly low cost meal. Avoid buying the kits as they are pretty pointless yto be honest. I wasn't eating with the family this night so no vegtarian alternative was offered but I could have easily had mushrooms, halloumi or a chicken alternative. The rest of the family had steak Fajitas... bulked out with veg, I like Peppers and red onion. Fry the veg and put to one side, then fry the seasoned meat and serve so they can all choose what they want to put in their own Fajitas. I bought this seasoning a while ago and i goes a long way but you can make up your own seasoning with spices that you might already have... Paprika, cumin and chilli all go well and that way you can choose your own heat. Throw in a but of garlic too... currently using the jarred lazy garlic but a bulb of garlic is around 30p and lasts for ages or even garlic salt would be absolutely find if you have some in the cupboard. 👏No Cook Toddlers Meals 👏have been on the menu like crazy as of late. Is it just me or is there something in the air?! Today’s lunch was healthy, protein packed and ready in minutes! 🌟 All Star Ingredients:🌟 ⭐ @ithacahummus hummus is INSANE with clean, minimal ingredients. It’s SO GOOD. 💡: Hummus is so versatile, I love slapping some on a plate and piling on veggies, grains or legumes. It’s also amazing on toast/bread, crackers, as a pizza topping, stuffed into veggies, grain bowls, burgers…You name it, hummus makes it better! (And it’s nutrient +  fiber + protein rich! Woo!) ⭐: Jazz up your avocado🥑 with fresh squeezed lemon 🍋 or lime 🍋‍🟩 for a fun, tangy twist! ⭐: For our Fruit: I served cotton candy grapes 🍇 + raisins. My little Tyrant has been wild over raisins lately. I like to pair fresh grapes and raisins together because: 💫 Balance Sugar content: While both grapes and raisins contain natural sugars, a balance of quick-release sugars from the raisins and slower-release sugars from the grapes help sustain energy levels over time. 💫Diverse Flavors and Textures: Combining the juicy sweetness of fresh grapes with the chewy texture and concentrated sweetness of raisins creates an awesome contrast of flavors and textures. Even during a busy work week, I always look for ways to create fun, easy and quick dishes that are high in fibre and protein. Here’s a new dish I whipped up in under 30 mins for the kids: Indian Stir Fry with Eggs, Mackerel, Spinach, and Broccoli. Sautéed garlic and onions in olive oil, added salt and spices. Added chopped broccoli, mackerel, and cooked, made a hole in the middle of the pan and scrambled the eggs, then added spinach and let it cook. This 'dump and bake' dinner was really tasty! Spread a light layer of Marinara into a baking pan then add a single layer of frozen cheese ravioli on top. Add a nice layer of 1% cottage cheese, then another layer of cut up cooked fennel & onion. Repeat with another layer of frozen ravioli and, finally, cover the top generously with Marinara sauce. Bake for 20-30 min at 400 degrees, covered with aluminum foil. Then bake for an extra 20 min, without the foil. Savory Cube Steak with Rich Onion Gravy Ingredients: 4 cube steaks (about 1 1/2 pounds total) Salt and freshly ground black pepper All-purpose flour, for dredging 4 tablespoons vegetable oil 2 medium onions, halved and thinly sliced 2 cloves garlic, minced 4 cups beef broth 2 tablespoons Worcestershire sauce 2 tablespoons cornstarch 2 tablespoons water Chopped fresh parsley, for garnish (optional) Directions: Season the cube steaks generously with salt and pepper on both sides. Dredge the steaks in flour, shaking off any excess. In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the cube steaks and cook until browned, about 4 minutes per side. Remove the steaks from the skillet and set aside. In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the sliced onions and cook until softened and golden brown, about 10 minutes. Add the minced garlic to the skillet and cook for an additional 1 minute. Return the cube steaks to the skillet with the onions and garlic. Pour in the beef broth and Worcestershire sauce. Bring to a simmer, then reduce the heat to low. Cover and cook for 30 minutes, or until the steaks are tender. In a small bowl, whisk together the cornstarch and water until smooth. Stir the cornstarch mixture into the skillet. Cook, stirring constantly, until the gravy has thickened, about 2 minutes. Serve the cube steaks with onion gravy over mashed potatoes or rice. Garnish with chopped fresh parsley, if desired. Is it just me or are crockpot recipes without a bunch of dairy in them hard to find?! Especially when it comes to beef! I tried out a new recipe tonight that took less than 10 minutes to throw together for the crockpot. 1 lb of ground beef (could substitute ground chicken, turkey or pork) 2-3 green onions, chopped and separated (green and white parts) 1 red bell pepper, thinly sliced 1 cup Matchstick carrots 4 cloves garlic, minced 1/2 cup low sodium soy cause 2 tablespoons brown sugar 2 cups broth (beef, chicken, or vegetable) Sriracha to taste (I added about 1 tablespoon) 2 packages of ramen or similar style noodles (I used Trader Joe’s Squiggly Knife Cut Style Noodles) -Prepare and cut vegetables. -Brown ground meat on stove over medium high heat. One cooked, transfer into crock pot. -Add garlic, white portion of green onions, red peppers, carrots, soy sauce, brown sugar, Sriracha, and broth to the crockpot with the ground meat. Stir well to combine. -Cook on low for 3-4 hours. -Add the noodles during the last 1/2 of an hour of cooking. Ensure they are well submerged. Top with green portions of green onions.
