Tandoori chicken legs & bone in breasts, marinated overnight using an ammended recipe from the curry secret & cooked on the @kamadojoeuk I spatchcocked a whole chicken, but when I took the skin off, it couldn't hold together, I really should've known that would happen🤦🏻‍♀️Anyway, portioned easily & keeping the breast on the bone just made it even more juicy & flavoursome👌🏻 Served with naan from the local takeaway, pickled red onion with nigella seeds, cucumber, tumeric & garlic yoghurt, chilli sauce, mango chutney & corriander. Homemade "baked" beans & egg on wholemeal toast. The beans were a total cheat, which were actually pretty good but not baked. I used a can of haricot beans with the juice from the can & half a can of drained black-eyed beans & added 2 heaped tblsps of tomato puree, salt & white pepper. All in a pan & cooked through for about 15/20 mins, then popped a softly cooked egg on top 🍳 delish! Lovely egg fried rice dish to use up leftover cooked rice & peas & jerk chicken legs. I had 2 chicken kegs & took the meat off the bone & roughly chopped & added this & an onion cooked whole & lots of mini red peppers cooked yesterday on the @kamadojoeuk then the leftover cold rice & peas & dome frozen edemame beans & gave this a good fry off over a high heat. Then added 2 small bulbs of garlic cooked on tge @kamadojoeuk yesterday & then 2 eggs whisked with a touch of soy sauce & mirin, then a kevel tblsp of homemade chilli sauce & a squeeze of lime juice. Jerk chicken legs with rice & peas & carrot, cucumber & rocket salad. I picked up the chicken in @marksandspencerfood as was the marinade, which was very decent. Cooked on the @kamadojoeuk & served with rice & beans made using a can of coconut milk with lots of thyme & shallots but not scallions as forgot to pick them up. Hack 3: Break down large, daunting goals into manageable steps. Dreaming big is excellent, but large goals can lead to procrastination. There’s the assumption that longer hours equate to higher productivity Thats wrong ❌ Research reveals that overwork doesn't lead to more output but instead results in a host of health problems including impaired sleep, depression, heart disease, diabetes, pain, headaches, obesity, wasting muscles, impaired libido, which in turn negatively impacts a company's bottom line through absenteeism, turnover, and rising health insurance costs. Not only from a company point of view, You retire at say 65, Unwell… Disaster. Moreover, overwork impairs critical skills required in the modern office, such as interpersonal communication and emotional management, and increases the likelihood of making mistakes due to exhaustion. My humble opinion is that we need to challenge the culture of overwork, recognizing that sustainable working practices benefit individual well-being and enhance organizational performance. Pork tenderloin pan fried & finished with a touch of butter while resting. Served on top of a jar of @boldbeanco queen butter beans cooked with all the liquor from the jar with onions, courgette, garlic, lemon zest fried in a little olive oil then a few handfuls of spinach & dollops of ricotta laced with dill on top, I put the lid on to let the ricotta warm a little before stirring through. Studies have shown that dieting and exercise are the two activities that most people postpone. Weight loss is challenging for anyone, but procrastination typically leads to gaining more weight, resulting in even more work in the future. This cycle is ultimately self-destructive. Procrastination is based on the false assumption that the future will bring energy and motivation, leaving tasks for the future self to handle. However, when the future becomes the present, the anticipated action often does not happen - especially around eating differently and moving the body. Hack 1: Stop overthinking. Cease imagining the dread of exercising, eating healthy, or leaving out your usual indulgences. Hack 2: Create a list of healthy, appealing foods. Hack 3: Break down large, daunting goals into manageable steps. Dreaming big is excellent, but large goals can lead to procrastination. Set a specific goal and deadline, such as losing 10 kilos in the next two months or 20 kilos in the next six months. Hack 4: Pretend you're catching a plane. Switch all your devices to Airplane Mode for a bit to focus on your health and well-being.
