🌱🥑🥕🥒 VEGGIE SPRING ROLLS are a delicious way to bring color to your plate and get some fresh veggies in with any meal! What you’ll need: •12 Rice Papers (Three Ladies Brand is what I’ve used) 1 paper per roll •Variety of Julienne sliced veggies of choice (2cups of each): Red Pepper or shredded Purple Cabbage, Cucumber, Carrots, Avocado •2-3c Butter Lettuce •Cilantro or Mint sprigs Peanut Dipping Sauce: •1/4c smooth peanut butter •1/4c rice vinegar •2 lime, juiced •6 tbsp. coconut aminos •1/2 tsp. ground ginger •2 tsp. sriracha •2 tbsp. honey •2 clove garlic, minced {Blend all ingredients in a food processor or blender} Assembly of Veggie Rolls: get a large round size dish/bowl wide enough that the rice paper can lay flat in the bottom of it and soak in warm water completely for 5 seconds each. Fill dish/bowl with warm water and soak each rice paper one at a time. Soak paper, fill with veggies then repeat with next rice paper roll. I like to roll these on a plastic cutting board. After your first rice paper is soaked place a small amount of each veggie, lettuce and herbs in the middle of the rice paper. Don’t over fill. Wrap up the veggies like a burrito and the paper naturally sticks to each other to seal it off. You’ll get better at it with each roll! Soak your second rice paper and repeat! Souper bien printanier ce soir: la plaque de pommes de terre, légumes et jambon de @ricardocuisine (avec un repost d’une photo de l’année dernière)! 🍖

J’avais coupé mes légumes pendant mon petit meal prep ce week-end et j’ai juste eu à décongeler un petit jambon fumé alors ça a été hyper rapide (je l’ai-tu déjà dit que je suis méga fan des repas à la plaque?)! Comme l’année passée, j’avais pas d’échalote donc j’ai pris un oignon rouge (sur la photo ici c’était un oignon jaune mariné avec un radis pour un peu de couleur). J’ai fait deux plaques parce que j’ai mis un peu plus de tout pour passer ce qu’on avait. Si vous avez un Air Fryer, c’est encore plus rapide comme souper parce qu’on peut faire cuire les patates en même temps que le reste (en prime elles vont être extra crispy) et en moins de 15 minutes, le souper est sur la table! ✌️

Pour la sauce, j’ai fait une trempette yogourt grec, mayo et assaisonnements à salade qui va aussi servir pour les crudités de la semaine.

Un beau petit pop de couleur et de fraîcheur dans cette journée de grisaille et on a full aimé l’idée! Les pickles d’oignons (ou échalotes), c’est vraiment le parfait petit kick et un liant essentiel côté équilibre selon moi. Océane s’en est servi à la fourchette et j’aurais dû les doubler parce que c’est madame marinades! 😅 Une belle petite recette à garder pas loin dans son répertoire!

SWEET POTATO PANCAKES These savory pancakes make a great breakfast, lunch, or snack. you can make a double batch and save the extra for when you need something quick. Save the recipe! 👉🏻 @healthy.asa.mother for more great recipes and health tips WHAT YOU NEED • 2 cups (300g) sweet potato, grated • 1/2 small onion, grated • 1 clove garlic, crushed • 2 eggs • 3 heaped tbsp. buckwheat flour • 2 tbsp. coconut oil • 1/2 tsp. sweet paprika WHAT YOU NEED TO DO Place the grated sweet potato and onion in a large bowl. Add in the crushed garlic, eggs, flour, season with salt and pepper, as well as the paprika. Mix thoroughly. Heat the coconut oil in a pan, and add a heaped tbsp. of the better per 1 pancake (makes around 16). Fry for around 3 minutes on medium heat, then flip and fry for another 1-2 mins. Serve with your favorite toppings (see ideas below). Repost de la photo de notre souper de ce soir (avant de le préparer moi-même): les boulettes à la grecque sur la plaque de @magazinejecuisine ! Fidèle à mon habitude, une recette c’est toujours un canevas de base pour passer notre stock. Ici, j’ai remplacé les artichauts par des choux de Bruxelles et j’ai ajouté des poivrons mous.

Pour la sauce, j’ai simplement fait une mayo au pesto, mais un tzatziki ou sauce au yogourt feraient aussi l’affaire.

La dernière fois, ça s’est mangé à grands coups de miam des enfants alors je dirais que c’est vraiment winner comme recette (ah et du feta grillé c’est vraiment bon)! 🙌
